1 medium tomato, red
1 medium bell pepper, orange
1 medium bell pepper, yellow
1 cup broccoli, florets
1/2 medium onion, red
4 regular hoagie roll
1 1/2 cup pizza sauce
6 ounce mozzarella cheese
2 cup grapes, red

Steps:

  • Preheat oven to 400 degrees F.
  • Dice tomatoes, peppers, broccoli, and red onion; set aside.
  • Slice bread in half lengthwise and place on baking sheet.
  • Spread sauce on each half. Sprinkle with cheese and add veggies.
  • Bake for 10 minutes or until cheese has melted.
  • Serve with grapes.

6 whole-wheat pitas
2 large tomatoes, diced
4 sun-dried tomatoes (not packed in oil)
3 tablespoons tomato puree
1 tablespoon apple cider vinegar
1 ½ teaspoons maple syrup
2 cloves garlic
1 large handful of fresh basil
1 tablespoon dried oregano
1 ½ teaspoons dried thyme
sea salt and freshly ground black pepper
1 cup olives, halved
½ cup diced smoked tofu
10-12 pickled peperoncini, sliced
½ zucchini, thinly sliced or shaved
3 tablespoons Vegan Parmesan
fresh basil

Steps:

  • Preheat the oven to 400°F.
  • Combine the diced tomatoes, sun-dried tomatoes, tomato puree, vinegar, maple syrup, garlic, a handful of fresh basil, oregano, and thyme in a blender; season with salt and pepper to taste. Puree until smooth.
  • Place the pitas on a baking sheet and spread tomato sauce on top. Scatter the olives, tofu, peperoncini, and shaved zucchini over the sauce.
  • Bake for 15 to 20 minutes.
  • Sprinkle Vegan Parmesan and fresh basil over pizzas and enjoy!

1 large thin pita bread (150 calories)
1/4 cup pizza sauce
1/4 cup mushroom
1/4 cup green pepper
10 small black olives
1/2 cup kraft fat free mozzarella cheese (other brands don't taste as good and don't melt as KRAFT cheese does)
2 teaspoons parmesan cheese
1 pinch pizza seasoning or 1 pinch oregano

Steps:

  • Spread pizza sauce on pita.
  • Lay on the vegetables first so it is held together by the cheese. Top with both mozzarella and parmesan cheese and seasoning.
  • Spray cooking spray lightly over cheese.
  • Set oven on broil and place in oven for 2 minutes or until cheese looks mostly melted.

I made this up in a hurry one night and it's become one of our very favorite suppers. This is so easy, so fast and looks so pretty you can serve it to company or as appetizers. You could easily vary the veggies according to what you have on hand. Quantities are for one individual size pizza; multiply according to number you want to serve.

1 piece whole wheat pita bread
1/2 teaspoon olive oil
garlic salt, to taste
3 kalamata olives, pitted and sliced
3 -4 slices fresh tomatoes
1/2 cup fresh spinach leaves, cut into strips
4 canned artichoke hearts, drained and sliced in half
italian seasoning, to taste
1/2 cup mozzarella cheese or 1/2 cup monterey jack pepper cheese, shredded

Steps:

  • Put pita bread on baking sheet. Brush with olive oil and sprinkle with garlic salt. Place tomato slices on pita bread, top with olive slices. Cover with sliced spinach and artichoke hearts. Sprinkle with italian seasoning and sprinkle cheese evenly over pita. Bake at 400 degrees for about 10 minutes. Slice into quarters and enjoy!

1 pita bread (6 inches in diameter)
2 to 4 tablespoons pizza sauce or pasta sauce
1 small zucchini, chopped (1 cup)
2 tablespoons chopped onion
2 roma (plum) tomatoes, chopped (1/2 cup)
2 tablespoons sliced ripe olives
1/4 teaspoon salt
1/8 teaspoon dried basil leaves
1/4 cup shredded mozzarella cheese (1 ounce)

Steps:

  • Split pita bread around edge with knife to make 2 rounds. Spread pizza sauce on bread halves; place on small microwavable plates.
  • Place zucchini and onion in 2-cup microwavable casserole. Microwave uncovered on High 2 minutes 30 seconds to 3 minutes or until tender. Stir in tomatoes, olives, salt and basil.
  • Spoon vegetables onto bread halves; top with cheese. Microwave uncovered on High 45 to 60 seconds or until hot. Cut into wedges.
