These Loaded Scalloped Potatoes are always a crowd pleaser. You can't go wrong with cheesy, buttery, thinly sliced potato goodness topped with lots of crispy bacon, fresh cultured sour cream and chopped cilantro.

Cultured Organic Sour Cream
Chopped Cilantro, Italian Parsley, Green Onions or Chives
12 red potatoes or 10 small Russet potatoes, peeled and thinly sliced
3 tablespoons grass-fed butter, cubed
2 garlic cloves, minced
1/2 teaspoon Celtic sea salt (
2 1/2 cups cheddar cheese, grated - divided
8 slices cooked crispy bacon, crumbled

Steps:

  • Preheat oven to 350 degrees F. Line large bar pan/baking pan/jelly roll pan with unbleached parchment paper and set aside.
  • Peel and thinly slice potatoes, about 1/4" thick. If you have a mandolin by all means use that. Otherwise just do your best to carefully thinly slice the potatoes.
  • Evenly distribute and layer potatoes and minced garlic across lined baking pan. Add dots of butter on top of the potatoes and season with sea salt.
  • Bake for 10 minutes, remove potatoes just to stir and and evenly coat with melted butter. Return to oven and bake for 20 minutes. Using caution, carefully remove pan from oven and sprinkle cheese all over tops of potatoes. Return to oven and bake for about 30-35 minutes or until potatoes are fully cooked through and cheese is bubbling with light golden brown edges. Remove from oven and allow to cool for about 15 minutes before serving.
  • Top with crumbled crispy bacon, sour cream and chopped cilantro/parsley/green onions/chives. Enjoy!

8 slices OSCAR MAYER Bacon
3 Tbsp. flour
1 cup milk
1 cup sour cream
3 Tbsp. chopped fresh chives, divided
1 cup KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA

Steps:

  • Cook potatoes in boiling water in saucepan 25 min. or just until tender; drain. Cool. Meanwhile, cook bacon as directed on package.
  • Heat oven to 350°F. Crumble bacon; reserve 1/4 cup. Cut potatoes into 1/4-inch-thick slices. Whisk flour and milk in large bowl until blended. Stir in sour cream. Add potatoes, remaining bacon and 2 Tbsp. chives; stir to evenly coat potatoes.
  • Pour into 2-qt. casserole sprayed with cooking spray; top with cheese.
  • Bake 30 to 35 min. or until heated through. Sprinkle with remaining chives and reserved bacon.

This casserole combines all the irresistible features of a loaded spud, but is cooked and served family style for an extra-hearty side.

Nonstick cooking spray
6 slices bacon, cut 1/2-inch thick
2 1/4 pounds russet potatoes (about 4), scrubbed clean and cut into 1-inch chunks
Kosher salt and freshly ground black pepper
6 ounces cream cheese, at room temperature
2 cups shredded Cheddar
2/3 cup sour cream
2 scallions, white and light green parts only, thinly sliced

Steps:

  • Preheat the oven to 425 degrees F and spray a 3-quart casserole dish with nonstick spray. Set aside.
  • Cook the bacon in a medium nonstick skillet over medium heat, stirring occasionally, until brown and crispy, 6 to 7 minutes. Transfer to a paper towel-lined plate. Reserve 2 tablespoons of the bacon drippings.
  • Put the potatoes into the prepared casserole dish. Toss with the reserved 2 tablespoons bacon drippings, 1 teaspoon salt and 1/2 teaspoon pepper. Roast until the potatoes are soft and begin to brown, about 45 minutes.
  • Meanwhile, mix together the cream cheese and 1 cup Cheddar in a bowl until well combined. Dollop over the potatoes, then sprinkle with the remaining cup Cheddar and bake until the cheese is melted and bubbly and the potatoes are completely cooked through when poked with a knife, 13 to 15 minutes.
  • Dollop the sour cream evenly over the casserole and sprinkle with the scallions and bacon pieces.

Steps:

  • Preheat the oven to 450 degrees F. Lightly grease an 18-by-13-inch sheet pan with the butter.
  • Bring the cream, garlic, thyme, 1/2 teaspoon salt and 1/4 teaspoon pepper to a simmer in a small saucepan over medium heat, then turn off stove.
  • Thinly slice the potatoes on a mandoline or vegetable slicer (about 1/8-inch-thick rounds.) Arrange half the potato slices into a single, overlapping layer on the sheet pan, and sprinkle evenly with salt and half the grated Parmesan. Top with the remaining potato slices and sprinkle with salt. Drizzle the hot cream mixture evenly over the potatoes.
  • Cover the pan with foil and bake until the potatoes are tender when pierced with a paring knife, about 20 minutes. Carefully remove the foil and sprinkle the potatoes with Gruyere and the remaining Parmesan. Cook uncovered until very brown and crusty on top, rotating the pan halfway through, 15 to 20 minutes more.

2 chopsticks
2 medium potatoes
2 tablespoons butter, melted
salt, to taste
pepper, to taste
6 cheddar cheeses, slices, cut into 1-inch squares
¼ cup sour cream
2 slices bacon, cooked and crumbled
2 tablespoons green onion, sliced

Steps:

  • Preheat oven to 425°F (220°C).
  • Lay 2 chopsticks about 2-3 inches apart on a cutting board.
  • Place a potato lengthwise between the chopsticks, making sure the potato touches the cutting board.
  • Make ¼-inch slices across the potato, making sure you do not cut through the bottom of the potato. The chopsticks will help serve as a bumper of sorts to prevent this from happening. Repeat with the second potato.
  • Transfer the potatoes to a baking sheet lined with parchment paper, then brush the butter evenly on both of the potatoes.
  • Sprinkle a bit of salt and pepper on top of the potatoes, then bake for about 30 minutes until the slices of each potato have started to separate and crisp up. To have a better separation between the slices, pull the slices apart before they are baked.
  • Remove the potatoes and lower the oven heat to 350°F (180°C).
  • Place a square of cheddar cheese in between the slits in the potatoes, then return to the oven and bake for about 10 minutes, until the cheese is melted and starting to bubble.
  • Garnish each potato with a dollop of sour cream, bacon, and green onions.
  • Serve and enjoy!

Here's a great scalloped potato recipe that's so easy and absolutely delicious. The leftovers are just as good, maybe even better, the next day. This is one of my favorite and most prepared recipes, from my 1971 Florence Junior Welfare League cookbook.

4 cups thinly sliced potatoes
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 teaspoon salt
1 dash cayenne pepper
1 cup grated sharp cheddar cheese
1/2 cup grated cheese, to sprinkle on top
paprika

Steps:

  • In a small sauce pan, melt butter and blend in flour.
  • Let sit for a minute.
  • Add all of cold milk, stirring with a whisk.
  • Season with salt and cayenne.
  • Cook sauce on low until smooth and boiling, stirring occasionally with a whisk.
  • Reduce heat and stir in cheese.
  • Place a half of the sliced potatoes in a lightly greased one quart casserole dish.
  • Pour half of cheese sauce over potatoes.
  • Repeat with second layer of potatoes and cheese sauce.
  • Sprinkle the remaining cheese on top.
  • Top with some paprika for color.
  • Bake uncovered for about 1 hour at 350°F.

3 lbs yukon gold potatoes, peeled and thinly sliced
8 slices thick-sliced bacon
2 tablespoons butter

Steps:

  • Preheat oven to 350°F.
  • Generously butter a 3-quart casserole dish.
  • Cook the bacon until crispy, reserving 2 tablespoons of the drippings. Drain and crumble.
  • Place the butter and bacon drippings in a large microwave-safe dish (I use a 1-quart pyrex measuring cup). Microwave on high until butter is melted.
  • Stir in flour and whisk until smooth. Microwave on high for 2 minute, stopping half way through to stir. Slowly whisk in the hot milk. Return to microwave and cook for two or three more minutes on high, stirring occasionally, until mixture thickens slightly. Stir in salt, cayenne, and nutmeg.
  • Spread a third of the sliced potatoes evenly in the bottom of the buttered casserole dish. Sprinkle evenly with a third of the cheese, 1/3 cup green onions, and a third of the crumbled bacon. Spread evenly with a third of the sauce. Repeat to make 3 layers, except do not put cheese on the top layer.
  • Cover tightly with foil and bake for 1 hour or until potatoes are tender.
  • Remove foil and sprinkle remaining cheese on top. Bake until cheese is bubbly.
  • Let sit 10 to 15 minutes before serving.
