4 large unpeeled russet potatoes, cut into 1/4-inch strips
¼ cup olive oil
3 cloves garlic, minced
½ teaspoon ground dried thyme
¼ teaspoon seasoned salt
½ cup grated Parmesan cheese, divided
¼ cup chopped fresh parsley
¼ cup grated Parmesan cheese
¼ teaspoon seasoned salt

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the potatoes in a mixing bowl and drizzle with olive oil. Season with garlic, thyme, and 1/4 teaspoon seasoned salt. Toss until evenly coated. Lift the fries out of the bowl and spread onto a nonstick baking sheet in a single layer. Save the remaining oil in the bowl.
  • Bake in the preheated oven 30 minutes, flipping the fries halfway through baking. Return the fries to the bowl with the olive oil, sprinkle with 1/2 cup Parmesan cheese and parsley. Toss to coat, then spread again onto the baking sheet. Return to the oven, and bake until the Parmesan cheese melts, about 10 minutes. Sprinkle the fries with the remaining 1/4 cup Parmesan cheese and 1/4 teaspoon seasoned salt to serve.

3 or 4 medium Russet potatoes (or any baking potatoes)
1 cup grated Parmesan cheese
2 Tbsp. Garlic powder
1 Tbsp. Onion powder
1/2 Tbsp. Paprika
1 tsp. salt (or if you like your potatoes on the salty side, add more)
1 tsp. pepper
optional spices of your choice
3 Tbsp. Olive oil

Steps:

  • Wash and pat dry potatoes.
  • The easiest way I have found is to take 2 - Gallon size bags, just throw them out after you're done. Easy, right?
  • Slice your potatoes into strips, try to make the same size.
  • Bag #1, add 3 Tbsp. of olive oil, then add the sliced potatoes. Close the bag and shake so that every piece gets an Oil Bath!
  • Bag #2: Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. Place your oiled potatoes inside the bag and toss well to coat.
  • Spread potatoes on a parchment paper-lined baking sheet.
  • Bake in the preheated 425°F oven for 15 minutes.
  • Take it out, flip to the other side, and bake for an additional 15 min.
  • Potatoes will be crisp on the outside and soft on the inside.

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Pour olive oil into a large resealable plastic bag and add potatoes. Seal the bag and shake to coat every piece with oil.
  • Combine Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper in a second resealable bag. Pour oiled potatoes into the bag, seal, and toss well to coat.
  • Spread potatoes on the prepared baking sheet.
  • Bake in the preheated oven for 15 minutes. Flip potatoes over and bake until crisp on the outside and soft on the inside, about 15 minutes more.

5 russet potatoes
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F.
  • Peel potatoes and cut into half-inch thick slices (lengthwise) cut again into 1/2-inch thick fries. Place the potatoes into a pot with cold water and 1 tablespoon of salt. Bring up to a gentle boil and simmer until a paring knife tip goes through easily. Cooked about 3/4 of the way through.
  • Drain carefully and put in a bowl. Add olive oil, 1 tablespoon salt, 1/2 teaspoon black pepper. Toss well and lay out in 1 layer on nonstick baking sheet. Bake until light brown.
  • When brown, sprinkle with Parmesan and continue to bake until well-browned and crispy and the cheese is melted and caramelized, about 6 to 7 more minutes. Remove and let cool for 2 minutes. Serve.

3 tablespoons olive oil, divided
2 tablespoons parsley, chopped
1/4 cup parmesan cheese, grated
1/2 teaspoon garlic powder

1/8 teaspoon cayenne pepper
kosher salt, to taste

Steps:

  • Preheat oven to 475 degrees with a baking sheet inside.
  • Combine Parmesan, garlic powder, paprika, cayenne and salt in small bowl.
  • Coat potatoe wedges with 1 Tbsp oil in a large bowl, then add Parmesan mixture, tossing to coat. Remove baking sheet from oven and coat with remaining oil.
