This is a wonderful LOW CALORIE CHICKEN SALAD, and an awesome recipe if you like a sweet and salty combo- With the grapes and cashews, mixed with a nice helping of both white and black pepper, it's got a little bit of a kick. The best part is, is that it's NOT TOO MUCH MAYO!!!! This is WONDERFUL served inside a 1/2 of a cantaloupe(seeds removed) with a croissant on the side. YUMMY! You can take bites of the cantaloupe with the salad and it is DIVINE! Enjoy!

Number Of Ingredients 8

42 ounces boneless chicken breasts (6 regular sized boneless chicken breasts)
3 cups celery (Diced)
3 cups red seedless grapes (Cut in Half)
2 1/4 cups fat-free mayonnaise
3 tablespoons lemon juice (Fresh Squeezed if Possible)
1 teaspoon kosher salt
1/2 teaspoon white pepper
1/2 teaspoon black pepper

Steps:

  • Grill the chicken breasts on either a foreman grill or an outdoor grill- which is obviously better tasting -- Let cool enough to handle and start to rip/shred into smaller pieces. Not shredded. but I like the ripped up texture rather than 'cubes' of chicken. It looks much more organic too.
  • Put all of the ingredients into a bowl and mix -- EXCEPT FOR THE CASHEWS!
  • Cashews are optional, and NEEEEEED to be put on lastly, to maintain the crunchyness they deserve. So. 1 1/2 cups cashews if you will be serving that day and that day only- can you mix in -- otherwise, just sprinkle each serving with a tablespoon or 2 before you serve.
  • Mix all together but save those cashews for the garnish -- If you put them on and mix them in- they get soggy.
  • Refrigerate at least 5 hours- best if you can leave it in the fridge overnight to let the flavors mingle.

Number Of Ingredients 11

1 teaspoon honey
2 tablespoons orange juice
Kosher salt and freshly ground black pepper
1 teaspoon Dijon mustard
6 tablespoons olive oil
1 1/2 cups dry pearl couscous, cooked according to the package directions
2 cups diced English cucumber
6 (total) red, yellow and orange mini sweet peppers, diced
1 navel orange, supremed/sectioned
8 to 10 fresh basil leaves, snipped or torn
8 to 10 fresh mint leaves, snipped or torn

Steps:

  • Make the dressing: In a large bowl, whisk together the honey, orange juice, a pinch of salt, mustard, olive oil and a few grinds of black pepper. Whisk until combined, then slowly add the oil while whisking until it is all combined. Taste and season with more salt, if needed. Set aside.
  • Make the salad: To the bowl of dressing, add the cooked couscous, cucumbers and sweet peppers. Toss to coat and refrigerate for at least 2 hours, tossing a few times as it chills.
  • Finish and serve. Remove the salad from the refrigerator and toss again. Garnish with the orange sections, basil and mint.

3 boneless, skinless chicken breasts
Salt and freshly ground black pepper
Olive oil, for drizzling
4 ears fresh corn (or use 2 if on the large side)
3 tablespoons minced fresh dill, plus more for serving
3 stalks celery (inner light green stalks and leaves), finely diced
3 stalks celery (inner light green stalks and leaves), finely diced
1 medium red onion, finely diced
1 1/2 cups blueberries
3/4 cup crumbled feta, plus more for serving
1/4 cup half-and-half
1/4 cup mayonnaise
1/4 cup sour cream
1 teaspoon sugar
Juice of 1 lemon
Salt and freshly ground black pepper

1 head butter lettuce, leaves separated

Steps:

  • For the salad: Put the chicken breasts into a large plastic storage bag. Pound with a mallet or rolling pin to flatten to 1/4-inch uniform thickness. Sprinkle the chicken with salt and pepper.
  • Heat a grill and drizzle with the olive oil. Grill the chicken on both sides until done, about 7 minutes per side. (Rotate halfway during grilling each side to ensure pretty grill marks.) Set aside to cool.
  • Grill the corn for a few minutes, until still crunchy but colored. With a very sharp knife, shave the kernels off each corn cob. Combine with the dill, celery and onions in a large bowl. Set aside.
  • For the dressing: Mix together the feta, half-and-half, mayonnaise and sour cream in a bowl. Stir in the sugar, lemon juice and some salt and pepper. Stir, and then taste. Add more salt if necessary; do not undersalt!
  • Slice the chicken on the bias to create flat, randomly shaped pieces. Throw into the bowl with the celery, onions and corn. Stir to combine. Pour half of the dressing over the ingredients and toss gently. Add more as desired, but don't overcoat the salad; it should be light! At the end, toss in the blueberries to lightly coat them in the dressing.
  • Spoon the salad into butter lettuce cups and then sprinkle individual helpings with feta and extra dill.

This salad makes a nice, light lunch when served over top of lettuce greens. It also makes a nice salad filling for pita bread. One of my summer favorites! Prep and cooking times do not include time to cook chicken.

2 cups cooked chicken, cubed
1 (8 ounce) can sliced water chestnuts, drained
1/2 cup diced celery
1/2 cup nonfat sour cream
1/2 cup fat-free mayonnaise or 1/2 cup salad dressing
1 teaspoon curry powder (more or less to taste)
1 teaspoon soy sauce
1 teaspoon lemon juice
1 dash garlic powder
salt and black pepper, to taste
4 ounces lbs green seedless grapes, halved lengthwise

Steps:

  • Mix together chicken, water chestnuts, and celery.
  • Blend together sour cream, mayonnaise, curry powder, soy sauce, lemon juice, garlic powder, salt, and pepper.
  • Pour over chicken mixture and mix to combine.
  • Stir in grapes.
  • Chill at least 2 hours before serving.

2 cups cubed cooked chicken
1 celery rib, thinly sliced
1/2 cup seedless red grapes
1/3 cup raisins
1/2 cup mayonnaise
1/2 teaspoon salt
1/8 teaspoon pepper
1/3 cup chopped pecans
Leaf lettuce
Tomato slices, optional

Steps:

  • In a large bowl, combine the chicken, celery, grapes and raisins. In a small bowl, combine the mayonnaise, salt and pepper. Add to chicken mixture; toss to coat. Stir in pecans. Serve on lettuce. Garnish with tomato if desired.
