4 ripe Green Anjou pears*
2 cups apple cider
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves

Steps:

  • Peel pears, and slice in half lengthwise.
  • Leave the stems but remove the core.
  • In a large, shallow skillet, bring apple cider and spices just to boil over medium heat.
  • Add pears.
  • Reduce heat to medium-low, and simmer pears until tender, about 20-25 minutes. I flip my pears over half way through.
  • Serve pears warm with cider spooned over the top.

1 (750-ml) bottle white wine, Riesling or Viognier
1 cup water
5 ounces vanilla sugar, approximately 3/4 cup
1 whole vanilla bean, split and scraped
4 firm Bartlett, Anjou or Bosc pears, peeled leaving the stem intact

Steps:

  • Place the white wine, water, sugar and vanilla bean and pulp into a 4-quart saucepan over medium-high heat and bring to a boil.
  • Core the pears from the bottom. Decrease the heat to medium low and place the pears into the liquid, cover and cook for 30 minutes or until the pears are tender but not falling apart. Maintain a gentle simmer. Remove the pears to a serving dish, standing them upright, and place in the refrigerator.
  • Remove the vanilla bean from the saucepan, increase the heat to high and reduce the syrup to approximately 1 cup of liquid, approximately 20 to 25 minutes. Do not allow the syrup to turn brown. Place the syrup in a heatproof container and place in the refrigerator until cool, approximately 1 hour.
  • Remove the pears from the refrigerator, spoon the sauce over the pears and serve.

2 star anises
1 cinnamon stick
1 teaspoon vanilla extract
2 tablespoons greek yogurt
⅓ cup almond, a handful

Steps:

  • Peel the pear, cut in half and core.
  • Add the cider, orange juice, star anise, cinnamon stick and vanilla extract to a small to medium pan.
  • Bring to boil, then reduce to a simmer.
  • Add the pear halves and poach at a low-medium heat for 10-20 minutes (until you can stick a knife through with no resistance).
  • Remove the pear halves when cooked.
  • Reduce the rest of the mixture over a medium heat until it is a thicker glaze.
  • Serve the pears with a dollop of greek yogurt, a handful of toasted almonds and the glaze.
  • Enjoy!

2 1/2 cups apple cider
3/4 cup sugar
1/2 cup orange juice
2 teaspoons orange zest
3 whole cloves
1 cinnamon stick
1 vanilla bean, split lengthwise
6 Bosc pears, peeled, halved and cored

Steps:

  • Combine the cider, sugar, orange juice, orange zest, cloves, cinnamon stick and vanilla bean in a saucepan over medium-high heat. Bring to a simmer and cook just until the sugar dissolves, 2 minutes. Transfer the mixture to the slow cooker. Add the pears, and then cover with a lid and cook on low2 hours, turning the pears halfway through.
  • Remove the pears using a slotted spoon and transfer to serving plates or a shallow dish. Carefully strain the poaching liquid back into the saucepan and reduce the liquid by half until thickened and syrupy. Pour the reduced sauce over the pears and chill in the refrigerator an additional 2 hours or up to 2 days.

VANILLA & WHITE WINE POACHED PEARS

Make a batch of poached pears and store them in jars to give as part of a homemade Christmas hamper. They go beautifully with ice cream or hot chocolate sauce

Yield Makes 2 x 1-litre jars (serves 8)

Number Of Ingredients 8

300g caster sugar
2 small cinnamon sticks
1 vanilla pod, split and seeds scraped out
10 cardamom pods
300ml white wine (we used chardonnay)
1 unwaxed lemon
10 small, firm pears (we used Forelle)
ice cream or hot chocolate sauce, to serve (optional)

Steps:

  • Before you start, cut out a circle of baking parchment using a large pan as a template. (This is called a cartouche, and will cover the pears later - it should be the same size as the pan to keep the pears submerged and the liquid from evaporating too quickly). Set aside. Tip the sugar, cinnamon sticks, vanilla seeds and pod, cardamom, wine and 200ml water into the pan. Peel strips of the lemon zest, avoiding the pith. Drop in the strips of zest, then warm over a low heat until the mix is steaming and the sugar has dissolved.
  • Peel the pears, leaving the stalks intact. Slice in half lengthways through the core, then use a melon baller or small, sharp knife to remove the hard core and pips. Carefully place the pears in the steaming liquid, then turn up the heat to medium- low and bring to a simmer. Cover the surface with the circle of baking parchment and cook the pears for 20-30 mins, or until they can be pierced with the tip of a knife with little resistance.
  • Meanwhile, sterilise two 1-litre jam jars. When the pears are cooked and still hot, transfer to the jars with any aromatics from the pan. Top up with the poaching liquid so the pears are covered. Seal and leave to cool. Will keep for up to six months in a cool place. Serve with ice cream or hot chocolate sauce, if you like.

4 pears, firm, cored and peeled (D'Anjou or Bosc)
2 quarts apple cider, organic
1 vanilla bean, split and quartered
2 oranges, organic, juiced, peeled, chopped (pith removed)
4 ounces bittersweet chocolate

Steps:

  • Cut pears in half lengthwise and place them in one layer in a pan.
  • Cover with cider (start with 3 cups).
  • Add vanilla bean and bring to a simmer over medium-high heat.
  • Reduce heat to low and cook until barely tender (8 to 10 minutes- time will vary depending on ripeness of pears)- test with wooden skewer.
  • Allow pears to cool in the cider (refrigerate overnight if you wish).
  • Thinly slice orange peel, removing all white pith.
  • Melt chocolate in a double boiler or microwave over low heat, stir in peel and stir to coat.
  • Arrange to dry on a rack or plate.
  • At serving time, serve each pear in a bowl with fresh orange juice and a sprinkle of candied peel.

750ml bottle Merlot or other red wine
200g golden caster sugar
2 cinnamon sticks , snapped in half
1 vanilla pod , halved lengthways then halved across to make 4 strips
4 firm pears , peeled

Steps:

  • Tip the wine, sugar, cinnamon and vanilla into a deep medium pan and heat gently until the sugar dissolves. Add the pears, making sure they are fully covered by the wine, then simmer for 30 mins until they are just tender. If the pears are very ripe, they may be ready in 20 mins. Can be made up to 2 days ahead - leave the pears in the syrup in the fridge until you're ready to finish the recipe.
  • Remove the pears from the pan with a slotted spoon and boil the syrup for 30 mins to reduce it and make it more syrupy. Cool, then chill for up to 2 days. Remove from the fridge 1 hr before serving.

  • 1. In a small pan over medium-high heat, bring cider, orange juice, vanilla bean, cinnamon stick, and star anise to a boil. 2. Place pears face down in the pan. Lower heat and simmer gently, covered, until a knife inserted into the pears meets no resistance, about 10-20 minutes. 3. Once pears are tender, kill heat and let cool in pan. Remove to serving plates and set aside. 4, Over medium heat, reduce remaining poaching liquid to a glaze. Pour over pears. 5. Mix orange zest with yogurt. Dollop equally on pears. 6. Sprinkle almonds over yogurt. Sprinkle raspberries or pomegranate seeds around pears. Serve.
