SUNFLOWER SEED & GARLIC SPREAD



Sunflower Seed & Garlic Spread image

This was derived from having a mega bunch of sunflower seeds. I love spreads and pastes to add flavor. If you want more garlic, feel free to add more. I use on toast points, rub on chicken, crackers.It is a good rub for baked pork chops.

2 cups shelled salted sunflower seeds
4 garlic cloves, peeled and separated
2 tablespoons olive oil
1/2 teaspoon cumin
1/4 teaspoon dry mustard
2 dashes Tabasco sauce (optional)
more olive oil (if it is too thick for your taste)

Steps:

  • Put all ingredients into a blender and pulse 4 or 5 times.
  • Thanks to a nice reviewer, here are suggestions if you want the spread to be easier to spread. Add 1 tblsp. olive oil and 1 tblsp water more, then a little more before processing.
  • Note: Suggested heating the olive oil,(a total of 3 tblsp. olive oil) setting it aside with the garlic cloves in it will reduce the garlic flavor and make it more mild.
  • Put in a small covered airtight container in the refrigerator.
  • Note: If you use unsalted sunflower seeds,.
  • add 1/2 teaspoons salt or 1/2 teaspoons salt substitute.
  • Note: The longer it is stored,the more intense flavor.

A change from garlic toast. You need to at least "like" anchovies for this one! Serving size depends on how thick or thin you spread the mixture on each slice of bread.

1 can flat anchovy
2 tablespoons olive oil
10 -12 cloves garlic
mozzarella cheese (shredded)

Steps:

  • Saute' garlic in oil (do not brown).
  • Add anchovies and cook/saute for a few minutes.
  • Put mixture in blender or food processor and puree.
  • Spread onto sliced French, Sour Dough or Italian bread.
  • Cover each slice with desired amount of cheese.
  • Place under broiler until the cheese becomes bubbly.
  • Note: if you are not terribly fond of anchovies (very salty fish) I would put on a thinner spread.

  • Soak sunflower seeds in room temperature water for at least 2 hours or overnight (up to 24 hours). We soaked them overnight (10 hours) and found that to be perfect.
  • Rinse and drain sunflower seeds and transfer to a food processor (you can use a blender for a creamier dip, but we preferred the texture of dip made with a food processor).
  • Add garlic, sea salt, and lemon juice and mix for 30 seconds to combine. Then add tahini and mix for 1 minute.
  • While your machine is mixing, stream in your olive oil. At this point, your dip will still be quite thick, so we recommend adding water a little at a time until it’s the texture of hummus (creamy). NOTE: The sunflower seeds will keep a little bit of their texture and not become entirely creamy. But we think that’s one of the enjoyable aspects of this dip! If that isn’t for you, feel free to blend in a blender with more oil or water to make it completely smooth.
