BUFFALO DRUMSTICKS

- For the chicken: Preheat the oven to 375 degrees F. Rinse and pat dry the drumsticks. Mix the oil, chili powder, garlic powder, and some salt and pepper in a medium bowl or resealable plastic bag. Toss the drumsticks in the seasoned oil to coat well. Bake the drumsticks on a wire rack placed on a baking sheet (so air circulates around chicken) until very tender and the skin is crisp, 50 minutes.
- For the spicy sauce: Mix together the butter, hot sauce and BBQ sauce in a large bowl.
- Toss the drumsticks in the spicy sauce until well coated. Place the drumsticks back on the rack and continue baking an additional 10 to 15 minutes.
- Cook's Note: For an alternate milder sauce, whisk together 1 tablespoon maple syrup, 1 teaspoon hot sauce, juice and zest of 1 lime, 1 clove of garlic, minced and some salt and pepper.
ZESTY DRUMSTICKS
This is so easy and so delicious! You can change out the currant jelly for another choice, your favorite. Also, I use other chicken parts (parts are parts!) If you try other than the drumsticks, be sure to check your cooking time. This is great with rice, a simple romaine and tomato salad, and an ice cold margarita!

- For the sauce: Combine all of the ingredients except the chicken drumsticks in a small saucepan. Cook over low heat about 5 minutes or until bubbly, stirring occasionally to melt the jelly. Remove skin from chicken, if desired. Rinse chicken;pat dry.
- Grill chicken on the rack of an uncovered grill directly over medium coals for 35 to 45 minutes or until chicken is tender and no longer pink, turning once halfway through grilling time and brushing with sauce frequently during the last 10 minutes of grilling.

- Mix all ingredients, except sesame seeds, together and pour into a large resealable storage bag, with chicken, to marinate. Refrigerate at least one hour, but overnight is preferable.
- Position an oven rack 8 to 10 inches from broiler and preheat broiler. Line a large, rimmed baking sheet with heavy duty foil. Tranfer drumsticks and marinade to the sheet and broil, turning occasionally, for 25 minutes, or until chicken is cookemarinade has formed a glaze. Make sure to watch closely so chicken does not burn. Sprinkle sesame seeds over chicken and serve.
ZESTY DRUMSTICKS
Steps:
- Preheat oven to 375 degrees F. Place chicken legs in a Ziploc bag or 2. Add dressing to bag and shake. Place in refrigerator for 4 hours. Remember to rotate chicken a couple of times.
- In another Ziploc bag, place flour, salt and pepper and shake to mix. I made 8 drumsticks at a time. Place 8 drumsticks in the bag with the flour mixture. Shake.
- Place oil in large skillet. Place the chicken in the skillet. As it gets brown, turn the chicken. All you want is a good brown. The chicken will finish cooking in the oven.
- Place the chicken in a 13 x 9 cake pan. Once those are done do the other eight. When they are all done, place in oven for 35 minutes.

- Preheat oven to 400°; spray a 13x9 inch pan with cooking spray; remove skin and fat from chicken drumsticks.
- In a large heavy-duty zip-lock plastic bag, mix the flour, cornmeal, cumin, chili powder, and salt.
- In a bowl, mix the buttermilk and pepper sauce together.
- Dip chicken into buttermilk mixture, then place in bag; seal bag and shake until evenly coated.
- Place coated drumsticks in pan; spray chicken lightly with cooking spray.
- Bake uncovered for 40-45 minutes or until juice of chicken is no longer pink.
