A flavorsome summer fruit dessert recipe! Enjoy this raspberry and blueberry crisp that's baked to perfection.

3 cups fresh raspberries
3 cups fresh blueberries
1/4 cup granulated sugar
2 teaspoons vanilla
3/4 cup Gold Medal™ all-purpose flour
1/2 cup packed dark brown sugar
1/4 teaspoon pumpkin pie spice
6 tablespoons cold butter
1/2 cup old-fashioned oats

Steps:

  • Heat oven to 400°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • In large bowl, gently stir raspberries, blueberries and 1/4 cup sugar. Spoon into baking dish. Sprinkle with vanilla.
  • In medium bowl, mix flour, brown sugar and pumpkin pie spice. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like coarse meal. Add oats; toss well. Sprinkle over berry mixture.
  • Bake 30 minutes or until filling is bubbly and topping is golden. Serve warm.

2 cups blueberries
2 cups blackberries
2 cups raspberries
1/4 cup sugar
1/4 cup all-purpose flour
1/4 teaspoon cinnamon
Crisp topping:
1 cup rolled oats
1/2 cup all-purpose flour
1/2 cup brown sugar
1/2 cup sugar
Pinch of salt
1/2 cup (1 stick) cold unsalted butter, cut into small pieces
Whipped cream or vanilla ice cream, for serving

Steps:

  • 1. Preheat the oven to 350°F. Butter a 9-inch Pyrex pie plate.
  • 2. Gently combine the berries with the sugar, flour and cinnamon; place in the prepared pie plate.
  • 3. Prepare the topping: Combine the oats, flour, both sugars and salt in a bowl. Use a pastry blender or 2 knives to work in the butter until topping resembles coarse meal. Sprinkle evenly over the berries.
  • 4. Place the pie plate on a baking sheet. Bake in the center of the oven until the fruit is bubbling and the topping is golden brown, about 1 hour. Remove the crisp to a rack to cool slightly. Serve in dessert bowls with whipped cream or ice cream.

I don't tack the word ultimate onto just any recipe. This berry well may be my favorite summer dessert, with the perfect balance of sweet and tart, tender and crisp, fruit and crumble. Some ice cream on the side is highly recommended.

2 cups all-purpose flour
¼ teaspoon fine salt
¾ teaspoon baking powder
¾ cup white sugar
¾ cup frozen unsalted butter
1 ½ teaspoons vanilla extract
2 large egg yolks
1 teaspoon apple cider vinegar, or as needed
1 cup blueberries
1 cup raspberries
1 cup blackberries
1 teaspoon lemon zest
2 teaspoons fresh lemon juice
⅓ cup white sugar
2 teaspoons cornstarch
1 pinch cayenne pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine flour, salt, baking powder, and sugar in a bowl. Whisk until thoroughly combined. Grate in the frozen butter, stopping occasionally to toss the butter into the flour mixture until coated. Drizzle in vanilla extract; add egg yolks. Stir with a fork until egg is mostly absorbed. Add vinegar; mix briefly. Use your hands to finish mixing, squeezing until clumps but mixture remains mostly dry. Add 1 teaspoon vinegar if needed.
  • Combine blueberries, raspberries, and blackberries in another bowl. Add lemon zest, lemon juice, sugar, and cornstarch. Sprinkle in cayenne pepper. Mix until sugar and cornstarch are mostly dissolved.
  • Place about 1/2 of the crumble mixture into the bottom of a 2-quart baking dish. Press mixture down using a flat cup until well compacted. Spread the berries over the crust. Sprinkle the remaining crumble mixture on top, squeezing some of it into clumps.
  • Bake in the preheated oven until top is beautifully browned and berry syrup bubbles on the surface, 40 to 45 minutes. Let cool to room temperature, about 30 minutes.

2 cups raspberries (500ml)
1 cup strawberries cleaned and cut in half (250ml)
1 cup blueberries (250ml)
1 cup blackberries (250ml)
1 cup chopped apples (250ml) (optional)
¼ cup flour (60ml)
¾ cup to 1 cup sugar (depending on the sweetness of the berries) (250ml)
2 tablespoons lime juice (30ml)
1 tablespoon grated fresh ginger (15ml)
Topping:
340g flour (12 oz.) 380g butter (13.3 oz.)
380g brown sugar (13.3 oz.)
225g rolled oats (8 oz.)
115g walnuts (4 oz.)

Steps:

  • If you are using apples, peel and core. Slice apples to a thickness of 1/8.
  • In a bowl, gently combine the berries (and apples) with the sugar, lime juice and fresh ginger.
  • Place berry mixture in individual ramekins or one large cast iron pan.
  • To prepare the topping, combine the flour, butter, brown sugar and mix until evenly distributed. Use a pastry cutter or 2 knives to work in the butter until the topping resembles coarse meal.
  • Sprinkle evenly over berries covering their surface.
  • Prepare barbeque for indirect medium heat cooking. Leave one burner (the size of your crisp pan) turned off.
  • Preheat the barbeque to medium heat 350F (175C).
  • Place the crisp on the side of the grill with heat turned off.
  • Close barbeque lid.
  • Cook for 1 hour or until the berries are bubbling and the topping is golden brown and crisp.
  • Remove from grill and allow to cool slightly. Serve with vanilla bean ice cream and fresh mint.

1 lb frozen peaches, roughly chopped
4 tablespoons sugar or 4 tablespoons Splenda granular, sugar substitute
3 tablespoons flour
1 cup rolled oatmeal
1 cup brown sugar, packed
1/2 cup flour
1/2 teaspoon ground cinnamon
1/2 cup margarine or 1/2 cup butter
1/2 cup pecans, chopped or 1/2 cup low-fat granola

Steps:

  • Preheat oven to 375 deg.
  • Wash blueberries right before using and drain. Combine blueberries with chopped peaches. Toss with sugar or Splenda and flour. Place in the bottom of 9x13 or large casserole dish.
  • In a separate bowl, combine oats, brown sugar, flour and cinnamon. Cut in butter using pastry blender or two forks until mixture resembles peas. Gently mix in pecans or granola.
  • Top fruit in casserole dish with the oats/brown sugar topping.
  • Bake in oven for 45 minutes or until peaches are tender and topping is golden and crunchy. Serve warm with cream or whipped topping if desired.
