MATCHA GREEN RICE

Matcha Green Rice image

Try matcha a whole new way: Make a savory rice bowl.

Provided by Food Network Kitchen

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 10

1 1/4 cups sushi rice
2 teaspoons matcha (green tea powder)
Kosher salt
10 sheets roasted seaweed snacks (one 0.18-ounce package)
1 tablespoon rice vinegar
1/2 teaspoon sugar
3 tablespoons chopped pickled ginger
2 scallions, thinly sliced (white and green parts separated)
1 tablespoon toasted sesame oil
1 tablespoon toasted sesame seeds

Steps:

  • Put the rice in a fine-mesh sieve and rinse under cold water, stirring with your hand, until the water runs clear. Shake well to remove as much water as possible. Set the sieve over a bowl to continue draining, 5 minutes.
  • Transfer the rice to a medium saucepan and whisk in 1 3/4 cups water, the matcha and 1 teaspoon salt. Bring to a boil, then immediately reduce the heat to low. Cover and cook until the water is absorbed and the rice is tender, about 20 minutes. Remove from the heat and let sit, covered, 10 minutes.
  • Meanwhile, cut the seaweed snacks into matchsticks with kitchen shears. Mix the vinegar and sugar in a small bowl until dissolved.
  • Fluff the rice and gently fold in the vinegar-sugar mixture, pickled ginger, scallion whites, sesame oil, 2 teaspoons sesame seeds and salt to taste. Divide among bowls and top with the seaweed snacks, scallion greens and remaining 1 teaspoon sesame seeds.

LEMON RISOTTO WITH SUMMER SQUASH

Lemon Risotto with Summer Squash image

Lemon risottos of any kind always delight guests. The lemon juice and zest are added to this comforting mixture at the end of cooking.

Provided by Martha Rose Shulman

Categories     dinner, lunch, main course

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 13

7 to 8 cups well seasoned chicken or vegetable stock, as needed
2 tablespoons extra virgin olive oil
1/2 cup minced onion
Salt to taste
1 pound summer squash (mixed varieties), diced
1 1/2 cups arborio or carnaroli rice
1 to 2 garlic cloves (to taste), green shoots removed, minced
Freshly ground pepper to taste
1/2 cup dry white wine, like pinot grigio or sauvignon blanc
2 teaspoons finely chopped lemon zest
1 to 2 tablespoon freshly squeezed lemon juice (to taste)
2 tablespoons finely chopped flat-leaf parsley
1/2 cup freshly grated Parmesan cheese

Steps:

  • Put your stock or broth into a saucepan, and bring it to a simmer over low heat with a ladle nearby or in the pot. Make sure that the stock or broth is well seasoned.
  • Heat the olive oil over medium heat in a wide, heavy nonstick skillet. Add the onion. Cook, stirring, until tender, about five minutes. Add the squash and a generous pinch of salt. Turn the heat up to medium high, and cook, stirring often, until the squash is translucent but not too soft, about five minutes.
  • Stir in the rice and the garlic, and stir until the grains separate and begin to crackle. Add the wine, and stir until it has been absorbed. Turn the heat back down to medium, and begin adding the simmering stock a couple of ladlefuls (about 1/2 cup) at a time. The stock should just cover the rice and should be bubbling, not too slowly but not too quickly. Cook, stirring often, until the rice is just about absorbed. Add another ladleful or two of the stock, and continue to cook in this fashion, stirring in more stock when the rice is almost dry. You do not have to stir constantly, but stir often.
  • When the rice is tender all the way through but still chewy, in about 25 minutes, it is done. Taste now and adjust seasoning, adding salt and pepper to taste. Add another ladleful of stock to the rice. Stir in the lemon zest, lemon juice, parsley and Parmesan. Remove from the heat. The mixture should be creamy (add more stock if it isn't). Serve right away in wide soup bowls or on plates, spreading the risotto in a thin layer rather than a mound.

SUMMER SQUASH (GREEN AND YELLOW), GARLIC, ONION, LEMON ZEST

Summer Squash (Green and Yellow), Garlic, Onion, Lemon Zest image

a light and healthy side dish, perfect to accompany any lemon meat/poultry/fish dish. i love cooked garlic, it's a great health benefit too. but if you don't, then omit it. i hope you don't think my directions are micro-management, but when i read a recipe, i really appreciate specific direction. maybe because i'm new and learning to cook. adding mushooms would be great. or take away the garlic and add paprika and raisins!
