TROPICAL FRUIT SALAD

Tropical fruit salad image

One mouthful of this exotic fruit salad recipe with mint sugar and you can almost feel the sunshine! Refreshing, zingy and perfect for a hot summer day.

Provided by Jamie Oliver

Categories     Desserts     Fruit     Australia day

Time 10m

Yield 4

Number Of Ingredients 8

½ a pineapple
1 ripe mango
1 papaya
2 kiwi fruit
½ a lime
½ a bunch of fresh mint, (15g)
2 tablespoons golden caster sugar
200 g yoghurt

Steps:

  • Trim the outside skin off the pineapple and cut out the hard core that runs down its centre. Lay it on a chopping board and cut it into chunks with a sharp knife. Place in a bowl.
  • Cut the flesh of the mango off the stone and scoop out the flesh from the skin with a spoon. Place into the bowl with the pineapple. Cut the papaya in half and scoop out the black seeds inside. Scoop the fruit out of the skin in the same way as with the mango. Place into the bowl.
  • Top and tail the kiwi fruit, then, sitting it on one of its flat ends, trim the furry skin off with a sharp knife. Slice the kiwi and place into the bowl. Squeeze the lime juice over your fruit.
  • Take four plates and divide the fruit between them. Pick the mint leaves and pound most of them with the sugar in a pestle and mortar or a flavour shaker. Spoon a little yoghurt over the top of each plate and sprinkle over the mint sugar and the rest of the mint leaves and serve.

PERFECT SUMMER FRUIT SALAD

Perfect Summer Fruit Salad image

The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

SUMMER ABUNDANCE FRUIT SALAD

Summer Abundance Fruit Salad image

This is fresh and light, perfect for finishing off a meal of grilled summer fare. Use the freshest, ripest fruit you can find. I used to buy fruit salad like this many years ago from a seaside fruit stand -- I think they used their bruised fruit to cut up for the salad, and it was my favorite thing to buy at the beach. The "cooking" time is actually chilling time, to allow the fruit to macerate and the mint flavor to spread through.

Provided by Susiecat too

Categories     Dessert

Time 1h5m

Yield 8 serving(s)

Number Of Ingredients 9

2 large peaches or 2 large nectarines
2 large plums or 3 small plums
1 pint blueberries
1 pint raspberries
2 cups seedless grapes
1/3 cup fresh mint leaves (about 1/3 c packed, 1 small handful)
4 tablespoons sugar, divided
1 cup heavy cream
1/2 teaspoon vanilla

Steps:

  • Dice peach and plums into 1/2-inch size (approx. 1 cm).
  • Slice grapes in half lengthwise.
  • Finely mince the mint leaves.
  • Mix all the fruit and the mint leaves in a bowl with 3 Tbsp of sugar. Cover and set aside in refrigerator for at least an hour.
  • Just prior to serving, mix remaining 1 tbsp sugar and vanilla with the heavy cream, and whip until it holds soft peaks.
  • Mix the fruit thoroughly one more time, some of the raspberries will have macerated to juice, and that is deliciously fine!
  • Serve fruit in bowls or glasses (or paper cups if you want to).
  • Top each serving with a dollop of whipped cream.
