SUGARLESS FALL HARVEST COOKIES
A delicious sugarless cookie filled with dates, raisins, apples and nuts. You won't miss the sugar! From the " Cooking with the Horse and Buggy People" cookbook. I have edited the recipe to include draining the fruit after "plumping". Thank you Paula!

Steps:
- Preheat oven to 350 Degrees F.
- Simmer the dates, apples, and raisins in 1 cup of water for 3 minutes to soften and "plump".
- Cool and remove fruit from liquid. Discard cooking water.
- In a medium bowl, combine flour, baking soda, cinnamon, and salt. Set aside.
- In a large bowl, cream together eggs and shortening. Add vanilla.
- Stir in cooled date mixture.
- Add dry ingredients and mix well. Stir in nuts.
- Chill for 15 minutes.
- Drop by rounded tablespoonful onto a lightly greased cookie sheet.
- Bake about 10-12 minutes or until nicely browned.
- Store in a cool place.

Steps:
- In large saucepan, mix dates, apple, raisins and water.
- Bring to a boil; reduce heat and simmer 3 minutes.
- Cool.
- Mix flour, cinnamon, baking soda, and salt.
- Stir into date mixture.
- Mix well.
- Mix eggs and sweetener; add to batter.
- Drop by tablespoons on nonstick sheet.
- Bake at 350* for 10 minutes.

- Cream butter, shortening and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. - Preheat oven to 375°F. Beat cream cheese, butter and sugar in large bowl with electric mixer on medium speed until well blended. Add egg; mix well. Combine flour, baking soda and salt. Gradually add to cream cheese mixture, beating until well blended after each addition. Stir in dates, chopped walnuts and cherries.
- Drop rounded tablespoonfuls of dough, 2 inches apart, onto greased baking sheets. Top each with a walnut half.

- Preheat oven to 350 degrees Fahrenheit.
- Combine brown sugar, sugar and vegetable oil thoroughly.
- Add egg and vanilla and beat well.
- Blend in banana, walnuts, coconut and raisins.
- Sift together flour, baking soda and salt.
- Add to first mixture along with oats.
- Blend until well combined.
- Shape dough into 1" balls; place on parchment paper lined baking sheet and press down with a fork which has been dipped in warm water.

This is from another website. I did a few changes, I have made 12 muffins with 2 cups of chopped prunes. Also made them with dried apricots and dates. You would never know these didn't have sugar in them.

Steps:
- In a saucepan over medium high heat, combine water, dates, raisins and prunes.
- Boil for 5 minutes, water will be absorbed and remove from heat, add chopped up butter and stir till butter is melted.
- Transfer to large bowl and let cool.
- Set oven to 350*F and grease and flour muffin cups or use paper liner.
- Beat in eggs and vanilla. Stir together flour, baking soda, salt and baking powder.
- Mix in nuts and blend into fruit mixture.
- Spoon into muffin cups 2/3 to 3/4 full.
- Bake in preheated oven for 15-20 minutes, or until toothpick inserted comes out clean.
SUGARLESS COOKIES
These cookies are great for those who have a sugar restricted diet. I got this recipe originally from "Sugarless Cookies (For Diabetics) Recipe Recipes.eu.com recipe collection". So I listed the ingredients it like I found them. However, to make it a little tastier and with a little kick you can increase the nutmeg to 1 tsp and the rasins to 2 cups.
