CANDIED STRAWBERRIES
Give roses a rest: Sweet and glossy, these candy-dipped strawberries don't need water (but they won't last as long).

Steps:
- Add the sugar, corn syrup and 1/4 cup water to a small heavy-bottom saucepan. Bring to a boil over high heat, stirring once to make sure the sugar dissolves. Attach a candy thermometer or use and instant read thermometer and bring to 300 to 310 degrees F. Remove the pot from the heat and let sit for 1 minute.
- Stir the sugar mixture to even out the temperature from top to bottom. Dip the strawberries, using the stem as a handle and swirling to coat. Remove and allow excess syrup to drip off, shaking as needed. Place on a parchment-lined baking sheet and allow to cool and harden, about 10 minutes.
- Trim the ends of 12 extra-long lollipop sticks to the desired length to fit your vase. Carefully skewer each strawberry through the stem end and arrange into a bouquet in the vase. Serve within 2 hours (see Cook's Note).
SUGARED STRAWBERRIES
This recipe and the four that follow share one basic requirement: in-season, preferably locally grown strawberries. In the event that you can't find strawberries that match that description, substitute any other berries-blackberries, blueberries, raspberries-that are at their peak. Look for strawberries that are dark red, inside and out. The sugar will juice up any strawberries and make them sweeter of course, but it cannot work miracles.

- Toss the strawberries with the sugar and let sit at room temperature for about 20 minutes, or until juicy. Serve, if you like, with whipped cream or ice cream.
SWEET STRAWBERRIES

- Put the strawberries in a bowl, add the sugar, zest and vanilla and stir. Leave to macerate for 30 minutes at room temperature. The sugar will soften the fruit and draw delicious juices out to make a delicious syrup.
- Top with a sprig of fresh mint before serving!
SWEET SOUTHERN SUGARED STRAWBERRIES (STRAWBERRY TOPPING)
This is a family favorite handed down for generations. It is very basic and can be used in Strawberry shortcake, ice cream topping, cheesecake topping, pancake or waffle topping, etc. Be creative with it!

Steps:
- You will need a tupperware type container with a lid.
- First, slice as many strawberries as you would like and place them in the container.
- Then add as much sugar as you wish.
- The more sugar makes more syrup.
- I usually add enough to fully coat the strawberries.
- Now put the lid on the container and tumble the strawberries for a minute so they can get saturated in the sugar.
- Now refrigerate the container for a couple of hours, and you will have the tastiest, sweetest strawberries in their own syrup.
- (I usually leave them in the refrigerator over night).
