LOBSTER MARTINI RECIPE

Too often lobster is covered with a heavy dressing or sauce. But just a little lemon or lime juice will bring out its sweet flavor. In this dish, skip the sauce and stay light.Serve the salad in martini glasses with skewers of citrus wedges--for squeezing--and olives. The glasses are especially fun at a party or for special occasions.Vary the seafood, if you'd like, by mixing the lobster with shrimp or crab. Remember, seafood cooks quickly on the grill, so watch it carefully.

Number Of Ingredients 11

2 lobster tails, about 1/2 pound each
2 teaspoons olive oil
Salt
4 leaves lettuce
1 avocado, cut into quarters
1 plum tomato, minced
1 small ear corn, cooked, kernels cut from cob
1/4 cup minced cilantro
4 lemon wedges
4 lime wedges
4 pimento-stuffed olives

Steps:

  • Heat the grill to medium-high.
  • Cut the lobster tails in half lengthwise. Brush all sides of the tails with the olive oil. Grill the tails flesh side down for 5 minutes. Turn and grill until the lobster is opaque in the center, about 5 minutes. When cool enough to handle, remove the lobster meat from the shells and cut into 1-inch chunks. Lightly season with salt.
  • Line 4 martini glasses with a lettuce leaf. Stand an avocado quarter in each glass. Divide the lobster among the glasses. Top the lobster with the tomato, corn and cilantro. Thread each of 4 small wooden skewers with a lemon wedge, lime wedge and olive. Garnish each glass with a skewer.

1 1/2 pounds super-size jumbo shrimp -- precooked or, peeled and deveined, tail on
2 ribs celery, finely chopped
2 rounded spoonfuls prepared horseradish
1/2 lemon, juiced
1 teaspoon hot sauce
1/2 cup chili sauce
1/2 cup ketchup
1/2 cup vegetable juice (recommended: V8)
Salt and black pepper
1 lemon, wedged

Steps:

  • If you bought raw shrimp, steam shrimp until pink, about 5 minutes, then cold shock under running water. Place in freezer until ready to serve.
  • Mix celery, horseradish, lemon juice, hot sauce, chili sauce, ketchup and vegetable juice together and season with salt and pepper. Pour sauce into 4 martini glasses and surround rim with chilled shrimp. Serve lemon wedges alongside glasses on cocktail forks.

1 cup canola oil plus 1/4 cup
10 pounds slipper lobster tails, large dice
15 ripe plums, large dice
3/4 cup finely diced jalapeno
1 cup medium diced red pepper
1/4 cup minced garlic
1/2 cup low-sodium soy sauce plus 1 cup
15 limes, zested and juiced
1 cup toasted sesame oil
75 sprigs fresh cilantro, leaves chopped
150 leaves Belgium endive
2 pounds watercress

Steps:

  • In 2 large heavy saute pans heat 2 tablespoons canola oil to almost smoking. To each pan, add half the lobster and plums, toss to evenly caramelize. Add half jalapenos, diced red pepper and garlic. Toss to aroma. Remove from heat and deglaze each pan with 1/4 cup low-sodium soy. Meanwhile, in a large stainless steel mixing bowl combine the zest of 15 limes, juice of 15 limes, 1 cup toasted sesame oil, 1 cup canola oil, 1 cup chopped cilantro. Add lobster and plum mixture and cool. To assemble: Pack 2 Belgium endive leaves with 1-ounce watercress leaves and 2 ounces lobster mixture. Garnish with a sprig of cilantro.
