- Combine strawberries and 1/3 cup sugar; refrigerate if desired. In a large bowl, combine the flour, cocoa, baking soda, baking powder, salt and remaining sugar. Cut in butter and 2/3 cup chips until crumbly. Add half-and-half and stir until just moistened. , Divide dough into 8 patties, about 3/4-in. thick. Place on parchment-lined baking sheets. Brush with egg white; sprinkle with coarse sugar and remaining chips. , Bake at 400° for 15-20 minutes or until toothpick inserted in the center comes out clean. Cool. Meanwhile, in a small bowl, beat whipping cream and confectioners' sugar until stiff peaks form. Refrigerate., To assemble, split shortcakes in half. Place cake bottoms on dessert plates. Top with about two-thirds of the strawberries, whipped cream and fudge topping. Replace shortcake tops; top with remaining berries, cream and topping. Garnish with chocolate if desired.

- Preheat an oven to 400 degrees F (200 degrees C). Grease two 9 inch layer pans.
- In a large mixing bowl, combine flour, 1/3 cup sugar, cocoa, baking powder, baking soda, and salt. Cut in butter or margarine until the mixture resembles coarse crumbs. Add milk, mixing until just moistened. Spread batter evenly into two prepared layer pans.

- Line a 20cm cake tin or dish (either a square or rectangle works well) with cling film, leaving an overhang. Whip 500ml of the cream, the vanilla, orange blossom water and 125g icing sugar with an electric whisk until thick and billowy.
- Add a layer of biscuits to the tin, and spoon over some of the cream, about 1cm thick all over. Add a layer of strawberry slices, then repeat with the cream, biscuits and strawberries until you fill the tin, finishing on a layer of biscuit. You'll have some strawberries left over to serve. Press everything down well so every biscuit is covered in cream. Cover and chill overnight.
- To serve, flip the tin onto a serving plate, and remove the cling film. Whip the remaining 100ml cream with 1 tbsp icing sugar and dollop on top of the cake, swirling it around. - For the shortcakes: Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.

(This makes it easier to split once they are baked.) Brush the top of each biscuit stack with more heavy cream and sprinkle 1 teaspoon granulated sugar on each biscuit.

- Meanwhile, for the topping: Toss the strawberries and 2 tablespoons of the brown sugar in a medium bowl.

- Heat oven to 220C/fan 200C/gas 7 and lightly flour a baking sheet. Put the flour, butter, sugar, half of the vanilla seeds and ¼ tsp salt into the bowl of a food processor, then pulse until fine. Tip into a large bowl. Beat the milk, egg and a good squeeze of lemon together, then tip into the bowl and bring together with a knife, using a cutting action, until you have a clumpy dough. Finally bring together with your hands if you need to.
- Lightly flour the work surface, tip the dough onto it, then quickly shape into a smooth-ish disc. Using a rolling pin, pat out to 2cm thick. Cut out 8 rounds with a smooth 7cm cutter (you'll need to pinch together the trimmings). Glaze just the tops with beaten egg, transfer to the floured sheet, then bake for 10-12 mins until risen and golden, and they sound hollow when tapped on the bottom. Cool on a wire rack.
- Beat the remaining vanilla seeds and icing sugar into the clotted cream. It will get runnier at first, but keep beating and it will thicken again. To serve, slice the very top from each shortcake to give a flat surface, then spoon over about 1 tsp jam. Top with a good dollop of the vanilla clotted cream and finish with the strawberries.

- For the chocolate sauce:.
- Bring cream and corn syrup to a simmer in a small saucepan over medium heat. Place chocolate in a bowl and pour cream mixture over. Let stand briefly to melt, then whisk until smooth.
- Strawberries:.
- Crush thawed strawberries in a bowl with a potato masher. Stir in fresh berries, sugar, and lemon juice. Let stand for at least 30 minutes or upt to overnight.

Add chopped chocolate. Gradually add 2/3 cup buttermilk, stirring with fork until dough forms.

- Preheat oven to 425°. Add flour, cocoa, and sugar to the bowl of a food processor or medium size bowl. Add shortening and butter. If using the food processor, pulse 6 to 8 times or until until the shortening and butter pieces are the size of pencil erasers. If using a mixing bowl, cut shortening and butter in with a pastry blender or two table knives until they are the size of pencil erasers.
- Pour buttermilk and vanilla over dry ingredients in the bowl. If using the food processor, pour it through the food chute while pulsing just until dough starts to form a ball. Be careful not to pour to slowly or you will over mix the dough. Stir dough in the mixing bowl just until it looks “shaggy”. Use the extra 1 to 2 tablespoons buttermilk, if needed to get this look and feel. The dough should not be wet like muffin batter but not as dry as a yeast bread dough.
- Scrape dough out onto a floured work surface. With floured fingers, gently form the dough into a ball. Gently pat dough down to 1-inch thickness. Pull one side over to the other side and gently press it slightly into the bottom half. Now pull the left side over to the right and press down. Repeat twice. You are trapping air between the layers which will give you the best “lift” and mile high biscuits. Gently pat dough down to 1-inch thickness (about a 6”x7” rectangle).
- Using a 2 1/2-inch biscuit cutter or circle cookie cutter, cut out 5 biscuits and place in an greased 8-inch cake pan or cast iron skillet. Press the remaining dough together to cut out the last biscuit. Brush with melted butter.
