GARLIC BUTTER SHRIMP WITH CILANTRO AND LIME

- Pat the shrimp dry then season with 1/4 teaspoon of salt and fresh ground black pepper.
- Use a microplane to zest the lime and set aside. Cut the zested lime in half ready for the sauce later in the recipe.
- Add one tablespoon of the butter to a wide skillet. Save the remaining two tablespoons for later.
- Place the skillet with butter over medium heat then add the garlic and coriander. Stir the garlic around the pan until the butter melts and is bubbling; about 1 minute.
- Add the shrimp, nestling them into the pan so that they are in one layer. A few shrimp stacked on top of each other is okay. Cook until the shrimp start to turn pink, about 1 minute.
- Stir in the scallions and lime zest. Continue to cook, stirring, until the shrimp are firm and opaque throughout; another 1 to 2 minutes. Slide the skillet off of the heat.
- With the skillet off of the heat, add the cilantro, juice from the lime and the remaining two tablespoons of butter. Stir the butter around the pan so that it melts into the lime juice making the creamy butter sauce.
- Taste then season as needed with salt and pepper. Serve with extra lime wedges on the side.

- Mix together garlic and 1 teaspoon salt.
- Whisk together garlic paste, lime juice, marmalade, cilantro, 3 tablespoons oil, soy sauce, red pepper flakes, remaining 1/8 teaspoon salt and pepper in a small bowl.
- Transfer 1/3 of mixture to small serving bowl and reserve for dipping sauce.
- Combine shrimp with remaining mixture in a large sealable plastic bag and seal bag, pressing out excess air.
- Marinate shrimp, refrigerated, turning bag once, for 15 minutes.
- Drain shrimp and gently pat dry.

- Pan Fried:
- Heat 1 1/2 teaspoon oil in a large non-stick skillet over moderately high heat.
- Add half of shrimp and cook, turning occasisionly until shrimp is cooked through, about 3 minutes total.
- Tranfer to a platter and cook the remaining shrimp in 1 1/2 teaspoons of oil.
- Garnish with cilantro and serve with dipping sauce.

- Preheat oven to 400°F.
- Toss the shrimp with the vegetable oil, salt, and pepper. Dip one side of each shrimp in the toasted sesame seeds. Skewer with a toothpick. I actually threaded several on a metal skewer and dipped one side of that group of shrimp in the toasted sesame seeds at the same time. Much easier and you don't lose seeds while threading since you're doing that part last.
- When the oven is heated, place the skewered shrimp (sesame seeds on top) on a foil-lined baking sheet and bake 6 to 10 minutes (depending on your oven), until the shrimp are firm to the touch.
- For the dipping sauce, put the remaining ingredients into bowl and mix until blended. Season to taste with salt and pepper. Serve with the warm shrimp.

- Marinade & Topping: Combine the lime juice, minced garlic, minced cilantro; add enouhgolive oil to allow good mixing of all. Make enough to marinate the shrimp and use as a sauce or topping on the presentation. Set aside the portion you do not use for marinade. SHRIMP: Rinse, drain, dry. Pull off the legs and peel the shells only partially off, this allows the marinade in and keeps them moist on the grill. Place in a bowl large enough so you can spoon the marinade on and around all shrimp. Cover with plastic wrap, return and rotate and turn them occasionally, while you get the fire going, or longer. Longer give more flavor. When the coals are ready, grill them using the Canadian Rule but keep an eye on them: shrimp cook a little quicker than most seafood. When the shells are red, time to serve. Spoon the reserved sauce over the shrimp, add your sides, pour the chilled wine and enjoy. Life is good.
