2 cups sugar
2 cups heavy cream
2 cups dark cocoa powder
2 sticks (1 cup) salted butter

Steps:

  • Combine the sugar, cream, cocoa and butter in a small saucepot over medium heat and cook, stirring, until the butter melts and everything is combined, a few minutes.
  • Transfer to a mason jar and store in the refrigerator. It will harden as it cools so when ready to use, simply reheat in a saucepan over medium-low heat.

1 cup heavy cream
4 tablespoons unsalted butter
1/3 cup packed light brown sugar
1/3 cup light corn syrup
Pinch of kosher salt
8 ounces bittersweet or semisweet chocolate (or a combination), chopped
1/4 cup unsweetened cocoa powder
1 tablespoon vanilla extract

Steps:

  • Combine the heavy cream, butter, brown sugar, corn syrup and salt in a saucepan. Bring to a simmer over medium heat, whisking. Add the chocolate and cocoa powder, reduce the heat to low and cook, whisking, until the chocolate is melted and the sauce is smooth, 1 to 2 minutes.
  • Whisk in the vanilla. Let cool 10 minutes before serving. To store, let cool completely, then cover and refrigerate up to 2 weeks; reheat before serving.

One of my favorite dessert recipes from my mom. *Note: If you'd rather use a 9x13 inch baking dish, just double the recipe. The prep time does not include the time needed in the freezer between making the layers of the pie.

3 tablespoons butter or 3 tablespoons margarine
1/4 cup white corn syrup
3 tablespoons brown sugar
2 1/2 cups cereal (Rice Krispies)
1/4 cup peanut butter
1/4 cup hot fudge topping
3 tablespoons white corn syrup
vanilla ice cream

Steps:

  • Bring the butter, 1/4 cup corn syrup, and brown sugar to a boil.
  • Remove from heat; add 2 1/2 cups Rice Krispies and mix well.
  • Press into a 9 inch pie plate.
  • Freeze until set.
  • Mix the peanut butter, hot fudge topping, and 3 Tbsp white corn syrup together.
  • Spread half of this mixture over the Rice Krispies crust. Freeze until set.
  • Fill shell with vanilla ice cream and drizzle the remaining sauce over the top.
  • Freeze until serving.
  • Set out 10 minutes before serving and use a hot knife to cut.

Created in response to a recipe request. The basic recipe I started with tasted like a bitter Hershey's chocolate syrup. I didn't like that, so I tried again. I sweetened it up, gave it a flavor kick, and the second batch was perfect. It has the consistency of homemade caramel, which makes this hot fudge sauce live up to its name. As written this recipe makes 2 cups (a pint canning jar) of sauce, but when doubled it fills a quart-sized jar. This would be a fun recipe to double and fill jelly jars for gifts.

2 ounces unsweetened baking chocolate
1/2 cup unsalted butter
1 teaspoon vanilla (I used my Homemade Vanilla)
1/2 cup Dutch-processed cocoa powder (can use all powdered sugar)
2 1/2 cups powdered sugar
6 ounces evaporated milk

Steps:

  • Chop the chocolate into smaller pieces than the squares they come in, and put into a medium sauce pan over low heat.
  • Slice the butter into 1/4 inch slices and add it to the chocolate.
  • Melt both over low heat, whisking occasionally, until smooth. Add vanilla and cocoa.
  • Whisk in the powdered sugar and the evaporated milk, alternately.
  • Turn heat to medium and bring to a simmer, whisking constantly.
  • Reduce heat to low or medium low to keep it at a very gentle simmer, and whisk constantly until the sauce is thickened. Approximately 10 minutes.
  • Serve hot or room temperature.
  • Store in pint jar, or other container with a tight-sealing lid.

"A well-constructed homemade hot fudge sauce moves forward with dark smoky accents and arrives with plenty of chew," she wrote. Here, bittersweet chocolate and high-fat Dutch process cocoa bring that smokiness, while heavy cream, butter and sugar mellow it out. It's a perfect contrast to the milky sweetness of a sundae loaded with vanilla ice cream and whipped cream.

2 cups heavy cream
4 tablespoons unsalted butter
1/2 cup light brown sugar
3/4 cup granulated sugar
1/4 teaspoon fine sea salt
2 ounces bittersweet chocolate in small pieces
1 1/4 cups sifted high-fat Dutch-process cocoa like Valrhona, Pernigotti or Droste (sift, then measure)
1/2 teaspoon vanilla extract

Steps:

  • In medium saucepan, combine cream, butter, sugars and salt. Bring to a simmer over medium-low heat. Simmer 45 seconds. Add chocolate, and whisk to dissolve. Remove from heat, add cocoa, and whisk until no lumps remain.
  • Return pan to low heat, and simmer sauce until glossy, whisking constantly, 20 seconds. Remove from heat, and stir in vanilla. Serve warm. To reheat sauce, warm in a saucepan over low heat, stirring constantly. Do not boil.
