Steps:
- In a large covered pot (with steaming basket in place) boil 2 inches of water.
- Place green beans into steamer and steam for about 10 minutes. -Keep the beans that beautiful, fresh green color- with a bit of a bite.
- Drain beans into collander and set aside.
- Heat same pot over medium heat.
- Melt butter and gently saute garlic.
- Place beans into butter mixture and coat.
- Squeeze lemon onto beans, season with salt and pepper.
SOUTH BEACH GREEN BEANS WITH GARLIC AND LEMON
Another recipe from the South Beach Diet Parties & Recipes Cookbook. The book says that any good quality fresh green beans will do, but suggests that you look for haricots verts. the recipe looks marvelously fast and easy, especially if you use the pre-trimmed green beans from the supermarket. The book also suggests that the beans can be blanched one day in advance if you like. Another make-it-easier tip is to use minced garlic in a jar commonly found in supermarket produce sections (at least in California!).

- Bring a medium saucepan of salted water to a boil. Add beans, return to a boil, and cook until crisp-tender, about 2 minutes. Immediately drain in a colander and rinse under very cold water to stop cooking. Drain again and pat dry.
- Heat oil in a large nonstick. Add garlic and cook until softened, about 1 minute. Add beans and zest; cook, stirring occasionally, until beans are warmed through, about 2 minutes. Stir in lemon juice and season to taste with salt and pepper. Serve warm OR at room temperature.

- Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
- Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.

- In a large skillet heat the oil over medium-high heat until hot.
- Add the garlic and saute and saute 30 seconds.
- Add beans and yellow pepper; saute 3 to 5 minutes or until beans are crisp-tender.
- Add the basil, honey, lemon zest, salt and pepper; saute 30 seconds.
- Add the lemon juice and saute another 30 seconds.

- Bring a medium pot filled 2/3 with water to a boil over high heat. Add 1 teaspoon salt. Add the green beans to the water. Adding cold beans to the water will lower the temperature and stop the boiling process. Bring the beans up to a boil and once the water starts boiling again, cook the beans for 4-5 minutes or until crisp, tender. Taste a green bean to be sure it's cooked the way you like.
- Bring a large saucepan filled 2/3 with water to a boil. Add 1 teaspoon of salt to the water. Add the green beans to the water. (Depending on how cool the beans are it will stop the water from boiling. Bring the pot back to a boil and cook the beans for about 4-5 minutes, or until crisp tender.
- Use tongs to transfer the beans to the ice bath. Submerge the beans in the water and agitate them with the tongs so they cool very quickly and retain their bright green color.
