I found this in a cookbook called 1000 Classic and it has been a family favorite ever since. Quick, easy, cheap and really delicious!

4 boneless skinless chicken breasts
1 tablespoon milk
2 tablespoons of english whole grain mustard (I use whatever brown mustard I have on hand)
1 cup grated cheddar cheese
3 tablespoons all-purpose flour
2 tablespoons fresh chives (chopped)

Steps:

  • Mix the milk and mustard in a bowl. Mix the cheese with the flour and chives on a plate.
  • Dip the chicken in the wet mixture coating evenly. Use a pastry brush if needed.
  • Dip chicken into cheese mixture pressing to coat them evenly.
  • Place on a cookie sheet and top with any spare cheese mixture.
  • Bake in a preheated 400 degree oven for 30-35 minutes or until golden brown and cooked through.
  • Goes wonderfully with any side dish.

Steps:

  • Preheat oven to 400 degrees.
  • Prepare stuffing mix as directed on package, set aside.
  • Cut chicken into 1 inch pieces.
  • Place chicken pieces in 13X9 baking dish.
  • Combine Milk, Soup and Cheese.
  • Pour Milk mixture over chicken.
  • Top with prepared stuffing mix.
  • Bake 30 minutes or until done.

1/2 cup Food Network Kitchen™ Inspirations Italian Herb & Garlic Dressing
2 plum tomatoes, cut in half lengthwise and thinly sliced
1 cup sliced sun-dried tomatoes
4 thick slices provolone cheese (about 4 ounces), cut into quarters
Green salad, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Make 8 crosswise cuts along each chicken breast, slicing two-thirds of the way through (be careful not to cut all the way through; see Cook's Note). Transfer the breasts to a 9-by-13-inch baking dish and pour the Italian Herb & Garlic Dressing over them.
  • Fill the first slit on each breast with 1 half-moon slice of fresh tomato and a couple pieces of sun-dried tomato. Fill the next slit with 1 piece of cheese. Fill the remaining slits on each breast, alternating between the tomatoes and cheese.
  • Bake until the chicken is cooked through and the juices run clear, 25 to 30 minutes. Serve warm with a green salad.

6 boneless chicken breasts
1 3/4 cups all-purpose flour
3 eggs, beaten
1 1/2 cups bread crumbs
Kosher salt and freshly ground black pepper
4 tablespoons vegetable oil, for frying
Tomato Sauce, recipe follows
2 cups shredded mozzarella
1/2 cup grated Parmesan
2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
1/4 teaspoon red pepper flakes
2 (20-ounce) cans crushed tomatoes
2 tablespoons fresh basil leaves, chiffonade
Kosher salt and freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • On a cutting board, place the chicken breasts between a piece of plastic wrap and pound the chicken out until it is 1/2-inch thick.
  • In 3 separate shallow dishes, place the flour, eggs, and bread crumbs. Season the chicken with salt and pepper. Dredge the cutlets through the flour, then eggs, and then the bread crumbs.
  • In a large skillet over medium-high heat, heat the vegetable oil. Place the cutlets in the oil and fry until brown on each side, about 2 to 3 minutes per side. Place the cooked cutlets in a baking dish. Spoon tomato sauce over each cutlet and sprinkle evenly with the cheeses. Bake for 10 to 15 minutes, until the cheese is melted and bubbly.
  • In a large saucepan over medium-high heat, add the olive oil and saute the onion and garlic. Add salt, pepper, red pepper flakes and cook until fragrant and tender; about 3 minutes. Add tomatoes, basil, and let simmer for 30 to 45 minutes. Season, to taste, with salt and pepper.

Cheesy chicken breasts have two kinds of cheese and a crunchy breadcrumb exterior and are baked in the oven for an easy weeknight family dinner!

4 (6-7 oz.) boneless, skinless chicken breasts
1 cup plain dry breadcrumbs
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/3 cup unsalted butter, melted
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Salt and black pepper

Steps:

  • Preheat the oven to 350. Spray a 9x12 casserole dish (or similar 3-quart casserole dish) with cooking spray and set aside.
  • In a low, shallow dish, combine the breadcrumbs and both cheeses.
  • In a small pan, melt the butter over medium-low heat. (Or microwave it in a small microwave-safe bowl for 1 minute, until melted.) Add the onion powder and garlic powder and mix well. Transfer to a second low, shallow dish.
  • Season the chicken breasts with salt and black pepper on both sides. Dip each chicken breast in the butter mixture to coat all sides then press into the cheesy breadcrumb mixture. Place the chicken breasts in the prepared pan.
  • Sprinkle some of the extra breadcrumbs over the chicken and press down to help it adhere. Drizzle some of the extra butter mixture over top of the chicken.
  • Bake at 350 for 35-45 minutes, until the chicken is cooked through. (It will depend on the size of your chicken breasts. I recommend using a digital thermometer.)
  • Serve hot and enjoy!

2 chicken breasts
2 tbsp olive oil
2 tsp paprika
2 tsp garlic granules
1/4 tsp salt
1/8 tsp black pepper
1 cup grated cheddar cheese

Steps:

  • Preheat the oven to 200 degrees Celsius (390 Fahrenheit).
  • Peel and chop the potatoes into cubes, add the olive oil, one teaspoon of paprika, one teaspoon of garlic granules, a pinch of salt and pepper, and toss well to coat.
  • Arrange the potatoes onto an oven-proof dish, and bake for 20 minutes.
  • Cut the chicken breasts into chunks, add add the remaining olive oil, salt, pepper, paprika and garlic granules.
  • Add the chicken pieces to the potatoes together with the butter cut into small cubes, and bake for a further 35-40 minutes or until the chicken is cooked through and the potatoes are tender.
  • Mix the potatoes and chicken now and then to make sure they bake evenly.

  • Remove from the oven and garnish with fresh parsley.

4 skinless, boneless chicken breasts
2 tablespoons unsalted butter
1 ½ cups sliced fresh mushrooms

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a baking dish lightly.
  • Sprinkle salt and pepper on chicken. Heat butter in a pan over medium-high heat. Add chicken and brown on all sides, 5 to 7 minutes. Remove chicken and place in the prepared baking dish.
  • Stir mushrooms, onion, garlic, and flour into the remaining butter in the saucepan and saute over medium-high heat until softened, about 5 minutes. Add chicken broth and bring to a boil while scraping the "good stuff" off of the bottom of the saucepan, letting it add to the flavor. Cook until thickened to your liking; drizzle over chicken.

2 tbsp taco spice
2 cups rice
4 cups chicken stock
400 g (14oz) crushed tomatoes
1 tsp salt
400 g (14oz) black beans / kidney beans
1½ cups corn kernels (thawed if using frozen)
3 cups shredded cooked chicken
2 cups grated cheese
coriander/cilantro (to serve)
Jalapenos (to serve)
lime wedges (to serve )

Steps:

  • Preheat the oven to 200°C/390°F.
  • In a large, deep braiser sauté the onion, garlic and pepper until soft and fragrant.
  • Add the rice and season with the taco spice and a pinch of salt. Pour in the chicken stock and tomatoes.
  • Allow to cook until the rice has absorbed most of the liquid then stir in the beans, corn and chicken.

2 tablespoons olive oil
1/2 teaspoon garlic powder
Salt & pepper (to taste)
1.5 cups marinara sauce
1/2 cup freshly grated parmesan cheese
1 cup shredded mozzarella

Steps:

  • Preheat oven to 375F and move the rack to the middle position.
  • Season both sides of each piece of chicken with the garlic powder and salt & pepper.
  • Add the oil to a skillet over medium-high heat. Once the pan is hot, sear the chicken for 5 minutes/side. Add the chicken to a greased baking dish (I used a 9x13) once both sides are seared.
  • Pour the marinara sauce over the chicken and use a spoon to spread it evenly over and around the chicken.
  • Sprinkle the parmesan over the chicken breasts, and then do the same with the mozzarella.
  • Bake, uncovered, for 20 minutes. If your chicken breasts are on the smaller side, I suggest doing 15 minutes.
  • Broil the chicken for 3-5 minutes or so until the cheese is lightly browned (watch it closely). Let the chicken rest for 5 minutes prior to serving (this will ensure it's juicy). Chicken is done when an instant read meat thermometer shows 165F in the deepest part. Its temperature will continue to rise while resting.

  • Boil Spaghetti noodles according to package.
  • In a saucepan, put Velveeta, butter, soup, rotel, and chicken.

⅔ cup all-purpose flour
1 ½ teaspoons paprika
1 ½ teaspoons garlic powder

1 cup fresh (finely shredded sharp Cheddar Cheese, packed)

  • Preheat oven to 400 degrees F. Line a baking sheet with foil and top with a baking rack and spray with cooking spray. (if no baking rack, just spray the foil with cooking spray). Set aside.
  • Combine the coating ingredients in three shallow containers (like pie tins): 1 - sift together all-purpose flour, paprika, garlic powder, salt and pepper; 2 - whisk together eggs and milk; combine panko breadcrumbs, sharp cheddar and Parmesan cheese.
  • Season chicken on both sides with kosher salt.
  • Set up an assembly line to coat the chicken as follows: flour mixture, then egg mixture, and finally cheese mixture. Set pieces in a single layer on the prepared baking rack or baking sheet. Chicken can be close together but should not touch. *Pro-tip - use one hand for wet and one hand for dry coating.

1/2 cup Blue cheese crumbles (optional)
Sliced green onions (for garnish (optional))
Ranch dressing (for serving (optional))

Steps:

  • Preheat oven to 400 degrees F.
  • Place chicken breasts in a large ziploc bag or between two pieces of plastic wrap and lightly pound until they are of even thickness.
  • Spray a 9x13-inch baking dish with nonstick cookie spray. Place chicken breasts in the dish side by side.
  • Pour buffalo sauce on top of the chicken (use more or less to your taste).
  • Top evenly with shredded Mozzarella cheese.
