Maple Wheat Bread image

This tender bread is great with honey or maple butter or used for sandwiches. It also freezes well up to six weeks allowing you to get a head start on your holiday baking.-Sharlene Heatwole, McDowell, Virginia

Yield 3 loaves (12 slices each).

Number Of Ingredients 9

2 tablespoons active dry yeast
2 cups warm water (110° to 115°)
1 egg
1/2 cup canola oil
1/2 cup maple syrup
2 teaspoons salt
3 cups whole wheat flour
2-1/2 to 3 cups all-purpose flour
2 tablespoons butter, melted

Steps:

  • In a large bowl, dissolve yeast in warm water. Add egg, oil, syrup, salt, whole wheat flour and 1 cup all-purpose flour. Beat on medium speed until smooth. Stir in enough remaining all-purpose flour to form a soft dough (dough will be sticky). , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Shape into loaves. Place in three greased 8x4-in. loaf pans. Cover and let rise until nearly doubled, about 40 minutes. Bake at 350° for 18-22 minutes or until golden brown. Remove from pans to wire racks to cool. Brush with melted butter.

Laurel's Kitchen Whole Wheat Quick Bread image

I adapted this recipe from the Laurel's kitchen recipe. Not a sweet loaf, if you want to sweeten it up, add 6 tbsp brown sugar instead of the molasses. The original recipe calls for wheat germ, but I substituted ground flax seed for the wheat germ, and reduced the oil called for by half. This makes a nice high loaf in an 8" x 4 1/2" loaf pan.You can substitute any other favourite nut for the cashews.

1 3/4 cups whole wheat flour
3/4 cup ground flax seeds
2 1/4 ounces cashew nuts
1 large egg
1 1/2 cups buttermilk
4 tablespoons molasses
1/2 teaspoon salt
1/2 teaspoon baking soda
2 1/2 teaspoons baking powder
1/8 cup oil
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 375°F.
  • Grease an 8"x4 1/2" loaf pan.
  • Mix oil and molasses together.
  • Beat the large egg and buttermilk together, then add the oil and molasses mixture.
  • Measure your dry ingredients into a large bowl, and stir them until thoroughly blended.
  • Chop the cashews coarsely.
  • Make a well in the centre of your dry ingredients and pour in the wet ingredients.
  • Stir just until the dry ingredients are thoroughly moistene. The mix will be quite moist.
  • Fold in the chopped nuts reserving a couple of tablespoons for the top.
  • Put mix in the loaf pan, and sprinkle the reserved nuts on top.
  • Bake for approximately 40 minutes or until a tester inserted into the middle comes out clean.

  • This is the order I prefer to put in my bread machine: Water+ Milk then, 2 cups of flour+ salt+ syrup+ molasses+ butter then, 2 cups of flour, then the Yeast.
  • 2 tsps Fast Rise Yeast= 2 1/2 tsps Active Dry Yeast.

This recipe fits the bill in my search for egg-free quick breads. It tastes great fresh from the oven. You can make this vegan by using maple syrup instead of honey, and soy milk. It is not a "sweet" bread, so if you want to make it sweeter, increase the amount of honey.

1 1/2 cups rolled oats
1 1/2 cups whole wheat flour
3 teaspoons baking powder
3/4 teaspoon salt
2 1/4 tablespoons honey or 2 1/4 tablespoons maple syrup
1 1/2 tablespoons vegetable oil
1 1/2 cups skim milk or 1 1/2 cups soymilk

Steps:

  • Preheat oven to 450°F (230°C).
  • Lightly grease and dust a 9x5x3-inch loaf tin.
  • Grind oats in a food processor or blender to form a meal/flour.
  • In a large bowl, combine oatmeal, whole-wheat flour, baking powder and salt.
  • In a separate bowl, vigorously whisk together honey and vegetable oil to form an emulsion; then stir in the milk and mix well until dissolved.
  • Add wet ingredients to the dry ingredients and mix well to form a moist, viscous batter.
  • Pour/spoon batter into prepared loaf tin and bake in preheated oven for 30-40 minutes or until the top starts to brown slightly.
  • Remove from loaf tin, cool completely on a wire rack and cut into slices (20 slices is the original yield).
  • Serve with honey, butter, syrup, or applesauce; or use in sandwiches.

Oil or butter for greasing pan
1 2/3 cups buttermilk or plain yogurt, or 1 1/2 cups milk and 2 tablespoons white vinegar (see Step 2)
2 1/2 cups (about 12 ounces) whole wheat flour
1/2 cup cornmeal
1 teaspoon salt
1 teaspoon baking soda
1/2 cup molasses

Steps:

  • Heat oven to 325 degrees. Grease an 8-by-4-inch or 9-by 5-inch loaf pan, preferably nonstick.
  • If using buttermilk or yogurt, ignore this step. Make soured milk: warm milk gently -- 1 minute in the microwave is sufficient, just enough to take the chill off -- and add vinegar. Set aside.
  • Mix together dry ingredients. Stir molasses into buttermilk, yogurt or soured milk. Stir liquid into dry ingredients (just enough to combine) then pour into loaf pan. Bake until firm and a toothpick inserted into center comes out clean, 45 minutes to 1 hour. Cool on a rack for 15 minutes before removing from pan.
