FRUIT COBBLER

Fruit Cobbler image

My son took first place in a baking contest with this one. Serve warm or cold plain, with ice cream or whipped cream. When I use apples, a sprinkle of cinnamon or apple pie spice makes a nice touch. In place of peaches, try using apples or plums.

Time 40m

Yield 12 servings

Number Of Ingredients 5

2 cups all-purpose flour
2 cups oatmeal
2 cups brown sugar
1 cup butter or margarine
4 cups your favorite fruit, cut into pieces if necessary

Steps:

  • Preheat a grill.
  • Combine flour, oatmeal, sugar, and butter in a large bowl; mix until well combined. Place 3/4 of mixture along the bottom of a Dutch oven. Spread fruit over top, then sprinkle with the rest of the oatmeal mixture. Place on rack of hot grill; 1/3 of the charcoal must be on top and 2/3 of the charcoal must be on the bottom. The key to cooking it is not to open the Dutch oven until you have smelled the cobbler for 10 minutes. Every time you open the Dutch oven you lose the heat. Serve warm.

FRUIT COBBLER

Fruit Cobbler image

This is a fantastic American recipe equivalent to our crumble. It's particularly good with strawberries and rhubarb, but you can use any fruit combo you like; about 680g/1 1/2 pounds of fruit should do it.

Provided by Jamie Oliver

Categories     dessert

Time 40m

Yield 6 servings

Number Of Ingredients 15

2 apricots, stoned and sliced
1 pear, cored and thickly sliced
1 pint blackberries
1 pint blueberries
1 pint raspberries
1 stick rhubarb
5 tablespoons sugar
A good glug balsamic vinegar
4 ounces butter, chilled
8 ounces (225 grams) self-rising flour
2 1/2 ounces (70 grams) sugar
A large pinch salt
4 1/2 fluid ounces (130 milliliters) buttermilk
A little sugar, for dusting
Vanilla ice cream, as an accompaniment

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C/gas 5). Put the fruit into a pan with the sugar and the balsamic vinegar. Put the pan over the heat, and cook gently, until the juices begin to run from the berries. Pour into an ovenproof dish.
  • Meanwhile make the topping. Rub the cold butter into the flour until the mixture resembles fine bread crumbs. Add the sugar and salt, stir well, and then add the buttermilk to form a loose, scone-type mixture. Roll balls of the dough and place randomly over the hot fruit. Sprinkle with a little sugar, and bake in the oven for 30 minutes until golden brown. Serve with vanilla ice cream.

PEACH COBBLER - SOUTH CAROLINA STYLE

Peach Cobbler - South Carolina Style image

Good.

Provided by Chris L.

Categories     Fruit Desserts

Time 1h10m

Number Of Ingredients 11

4 c sliced peaches (frozen ok)
1 1/2 c sugar
1/4 tsp almond extract - scant
1/2 c butter, melted
3/4 c a.p. flour plus 3 tbs
2 tsp baking powder
pinch salt
pinch cinnamon
3/4 c milk (1% ok)
raw sugar for crust
instant tapioca granules if peaches are juicy

Steps:

  • 1. Make peach mixture first. Slice fresh peaches into wedges, or thaw frozen peaches.
  • 2. In a large bowl gently toss peaches with 1 cup sugar, almond extract and 3 TBS. flour. I also add a dash of salt here.
  • 3. Note: If peaches are really juicy add up to 1 TBS. instant tapioca granules so peaches won't be floating in their own juice! Set Aside.
  • 4. Preheat oven to 350*. Spray 2 quart baking dish with PAM.
  • 5. Melt butter and add to baking dish.
  • 6. In another bowl mix together 3/4 cup flour, baking powder, salt, and 1/2 c. sugar. Add milk. (I sometimes mix our 1% milk with half and half to make it a little richer.)
  • 7. Pour batter over melted butter in baking dish. Try to get it evenly distributed. DO NOT STIR into the butter!
  • 8. Spoon peach mixture over batter, evenly. DO NOT STIR!
  • 9. Bake @ 350* for 50-55 minutes, until top is golden brown. Remove from oven and sprinkle top with raw sugar while still hot.
  • 10. Serve with ice cream or cream. Heavenly!

FRUIT COBBLER WITH ANY FRUIT

Fruit Cobbler With Any Fruit image

You can use any fruit (or combination) to make this biscuit-topped cobbler. Just be sure to adjust the amount of sugar depending on whether your fruit is more sweet or tart. For example, blueberries, peaches, sweet cherries and pears tend to need less sugar than more acidic raspberries, sour cherries, plums and cranberries. Start with a few tablespoons and go up from there, tasting as you go. For the most tender biscuits, be sure to let the dough chill before baking.

Categories     pies and tarts, dessert

Time 1h45m

Yield 8 servings

Number Of Ingredients 12

1 3/4 cups/220 grams all-purpose flour
1/4 cup/50 grams granulated sugar
1 tablespoon/12 grams baking powder
1/2 teaspoon baking soda
1/8 teaspoon kosher salt
6 tablespoons/85 grams cold unsalted butter, cubed
1/2 cup/118 milliliters buttermilk
1/4 cup plus 1 tablespoon/75 milliliters heavy cream
10 cups mixed fruit, such as peaches, blueberries or blackberries
3 tablespoons to 2/3 cup/38 to 133 grams granulated sugar, to taste
3 tablespoons/36 grams minute tapioca
1 tablespoon/15 grams turbinado or raw sugar

Steps:

  • Place a piece of parchment paper on a small rimmed baking sheet or large plate.
  • In a food processor, pulse together flour, granulated sugar, baking powder, baking soda and salt. Pulse in butter just until mixture looks like small pebbles. Drizzle in buttermilk and cream, and pulse just to combine.
  • Transfer to a lightly floured surface and pat dough together, incorporating any stray or dry pieces. Using a spoon, scoop off 2-inch pieces of dough and roll into balls (you should end up with about 10). Transfer dough to baking sheet or plate and flatten balls to 3/4-inch thick; wrap with plastic and chill for at least 20 minutes, and up to 8 hours.
  • Meanwhile, heat oven to 350 degrees. In a large bowl, toss together fruit, sugar to taste, and tapioca. Let sit for 20 minutes to hydrate tapioca, then scrape into a 2 1/2-quart gratin dish or 9-by-13-inch baking pan.
  • Top with biscuits, then brush biscuit tops with remaining 1 tablespoon cream. Sprinkle with turbinado sugar, and bake until dark golden on top and fruit is bubbling in the middle, about 1 hour, rotating halfway through. Let cool for at least 30 minutes before serving.
