- Divide beef into 4 equal portions, and gently form each into a ball. Insert a piece of cheese in the center of each ball, and flatten into 1-inch-thick patties, pinching beef to enclose cheese. Transfer to a plate; with thumb, make a shallow indentation in center of patties, taking care not to expose cheese.
- Heat grill to high; lightly oil grates. Just before grilling, season patties with salt and pepper. Place on grill; cover, and cook to desired doneness, 2 to 4 minutes per side for medium-rare. Let burgers rest 3 to 4 minutes; serve on buns with desired toppings.

MUSHROOM STUFFED BURGERS
If you are a mushroom lover (like me), and want a robust mushroom flavor, use a full-flavored wild mushroom like morels or porcinis. Other mushrooms (crimini, portobello, shitake, or even button) will work, just make sure you remove the tough stems before chopping. From Cooking Pleasures magazine.

- In a medium bowl, gently mix together the beef, soy sauce, 3/4 tsp of the pepper, 1/2 tsp of the salt.
- Using generous 1/3 cup per patty, shape mixture into 8 (4 1/2-inch) patties 3/8 inch thick.
- Refrigerate while preparing the stuffing.
- Heat a large nonstick skillet over medium high heat until hot.
- Add the butter and oil.
- Heat until hot and butter is melted.
- Add the mushrooms and cook for 2 min, stirring occasionally.
- Add the garlic and cook for 8-10 min or until the mushrooms are browned and the liquid has evaporated.
- Stir in the green onions, Worcestershire sauce, remaining 1/2 tsp pepper and remaining 1/4 tsp salt.
- Let cool.
- Mound about 1/2 cup of the stuffing in the center of 4 of the patties.
- Cover with the remaining 4 patties, sealing the edges firmly by pressing together with your fingers.
- Gently press the center of the burgers to eliminate mounding.
- Heat the grill or grill pan to medium heat.
- Grill for 5-6 minute.
- Flip the burgers and grill for 5-6 min more, or until no longer pink in the center.
- Top each burger with 1 slice of cheese, and grill for another min or so - until the cheese has melted.
- Meanwhile, in a small bowl, whisk together all of the mayonnaise ingredients.
- Place the buns on the grill, split side down, and grill for 30-60 sec or until lightly toasted.
- Spread each bun with 2 Tbs of the mayonnaise.
- Top with a burger and a tomato slice.
WILD MUSHROOM-CHEDDAR BURGER
During my travels for the old Food Network show Food Nation, I had the opportunity to go foraging for mushrooms with an expert while in Washington State. I can't think of mushrooms without remembering that trip. Now I do NOT recommend hunting for your own mushrooms -- let's leave that to the experts -- but I do recommend using a variety of what your supermarket has to offer. They may not be technically "wild," but a blend from your market will still be delicious and, more important, not deadly! I think that any cheddar would pair well with the mushrooms, but if you can find a sharp Tillamook cheddar from Oregon, it would be all the better.

- Heat the olive oil and butter in a large saute pan over high heat until almost smoking. Add the mushrooms and cook, stirring occasionally, until soft, about 5 minutes. Add the shallot, season with salt and pepper, and cook until the mushrooms are golden brown, about 5 minutes. Stir in the thyme and parsley and transfer to a bowl.
- Divide the meat into 4 equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper.
- Cook the burgers using the canola oil (see Cook's Note) and topping each one with a slice of cheese and a basting cover during the last minute of cooking.
- Place the burgers on the bun bottoms and top each burger with chipotle ketchup, if using, and a large spoonful of the mushrooms. Cover with the bun tops and serve immediately.
- I love ketchup as much as the next American does, but when I was designing the menu for Bobby's Burger Palace, I knew that I wanted to have a little something extra to offer in the squeeze bottles. The simple addition of pureed chipotle in adobo gives prepared ketchup an exciting smoky edge, while still keeping its sweet yet tangy identity intact.
- Whisk together the ketchup, chipotle, salt, and pepper in a small bowl. Cover and refrigerate for at least 30 minutes to allow the flavors to meld. The sauce will keep for 1 week in a tightly sealed container in the refrigerator.
CHEDDAR CHEESE-STUFFED BURGERS
From Bon Appetit, these burgers are always a hit. Instead of poking a hole in the burgers, I make 4 thin patties, put the cheese on one, and then seal the patties together.

- Prepare barbecue (medium-high heat).
- Combine meat, onion, parsley, Worcestershire sauce, salt and pepper in medium bowl; blend well.
- Divide meat mixture into 2 equal portions.
- Shape each into ball.
- Poke deep hole in each ball and fill each with half of cheese.
- Mold meat around cheese to enclose.
- Flatten each filled burger to 3/4-inch-thick patty.
- Grill burgers to desired doneness, about 5 minutes per side for medium.
- Grill muffin halves until beginning to color, about 1 minute per side.

CHEDDAR-STUFFED MUSHROOMS

- Preheat oven to 350° F.
- Remove stems from mushrooms and chop stems. Melt butter. With a pastry brush gently brush mushroom caps all over with some melted butter. Arrange caps, stemmed sides up, on a large baking sheet.
- Lightly toast walnuts and finely chop. Finely chop parsley. Finely chop onion and in a large heavy skillet sauté with chopped stems in remaining butter over moderately high heat until mixture is softened. Remove skillet from heat and stir in remaining ingredients. Divide mixture among mushroom caps, mounding it slightly. Mushrooms may be stuffed 4 hours ahead and chilled, covered.
- Bake mushrooms in middle of oven 20 minutes. Serve mushrooms warm.
BACON CHEDDAR STUFFED BURGERS
The original recipe is from the Wisconsin Milk Marketing Board but has been altered some. Other stuffing suggestions are salsa and pepper jack, blue cheese and sauteed red onion, mushroom and swiss (yum!), feta and olives, or smoked provolone and roasted red peppers.

- Fry bacon until crisp; crumble.
- Combine beef, salt, pepper, garlic powder and onion and shape into 12 large, thin patties.
- Top six patties with 1 tablespoon bacon and 1 tablespoon cheese (this is approximate-use what looks right).
- Place remaining 6 patties on top of cheese/bacon topped patties and press edges to seal.
- Grill or broil for 3-4 minutes per side until done. We like ours well done.
- The last 2 minutes of cooking top patties with remaining bacon and cheese.

- Wash and drain mushrooms. Remove stems. Reserve caps. Chop enough stems to make 1 cup.
- In a medium saucepan cook stems, onion, and garlic in margarine until tender; stir in bread crumbs and cheese.

- Heat butter in nonstick skillet over medium heat. Add mushrooms and onion; cook and stir 4 minutes or until mushrooms have softened. Cool completely.
- Mix ground beef and hamburger seasoning. Measure twelve (1/4 cup) portions of beef. Shape into thin 4-inch round patties. - Preheat a grill for high heat. When the grill is hot, lightly oil the grate.

STUFFED MUSHROOM CHEDDAR BURGERS
When I have time I love to do something a little more special than a plain old hamburger, and nothing is cooler than an inside-out burger where the toppings are on the inside. They're really so easy to make . I like these just as-is on a soft bun and I'll admit I sometimes even substitute Swiss cheese as this is also a great combo with mushrooms. Also check these fab custom toppings for burgers when catsup and mustard just don't cut it - CHEDDAR & CHILE SPREAD: Combine 1 cup of grated cheddar with a can of diced green chiles. Stir in enough hot beer to make a smooth, thick spread (start with 2 Tbs, adding more a tablespoon at a time.) EVEN HOTTER VARIATION: substitute chopped, diced jalapeno slices, or cayenne pepper JACK VARIATION: substitute Jack cheese and add diced onion. GORGONZOLA VARIATION: use crumbled Gorgonzola in place of the cheddar and add some minced garlic and freshly ground pepper. SPECIAL SAUCE: Start with about 1/2 cup mayonnaise. Add a tablespoon each of the following: mustard, relish, ketchup. Add Worcestershire sauce and Tabasco to taste. Season with salt and pepper to taste.
