- Preheat oven to 400 degrees.
- In a medium-size mixing bowl add the ground beef, bread crumbs, milk, Worcestershire sauce, and salt and mix until combined.
- Shape into 20 meatballs and place on a baking sheet.
- Cut the cheddar cheese and cream cheese into 1/4 inch cubes.
- Working one at a time, take a meatball and flatten it in the palm of your hand. Place a piece of cream cheese and cheddar cheese along with a slice of jalapeno and wrap it back into a meatball shape.
- Place the meatball into you baking pan and cook for 22-25 minutes.

- Preheat oven to 400 degrees. Lightly spray a 9x13 pan or four sided baking sheet with nonstick cooking spray.
- In a medium-size mixing bowl, combine ground beef, onion, jalapenos, bread crumbs, cheddar cheese, milk, Worcestershire sauce, basil, and salt. Mix thoroughly until ingredients are evenly distributed.
- Shape into 20 roughly shaped meatballs. Divide the cream cheese into 20 tablespoon-sized pieces, one for each meatball. Working one at a time, take a meatball and flatten it in the palm of your hand. Place a piece of cream cheese in the center and wrap the meatball around the cheese, sealing it inside the middle.
- Place the fully shaped meatballs into the prepared baking pan.
- Cook in the preheated oven for 25-30 minutes. Serve hot.

- Make the dressing for dipping: Stir together all ingredients listed for the dressing. Refrigerate while making meatballs so that flavors have time to combine.
- Preheat oven to 425 degrees F. Make the meatballs: Add all the meatball ingredients to a large bowl and combine well.
- Take meat mixture and roll into balls. I scoop the meat mixture into a 1/4 cup measuring cup (use a smaller or larger one depending on the size you want for your meatballs), then I shake the meat mixture out of the measuring cup and shape into a ball. It usually shakes out of the cup pretty much in a ball shape so it doesn't take much to make it into a ball. Place 1- 2 inches apart in pan. Bake 14 - 15 minutes.

- Preheat the oven to 425 degrees F.
- Add the arrabbiata sauce to a 12-inch cast-iron skillet and top with the peppers. Add the meatballs, then bake until the meatballs are cooked through, 18 to 20 minutes. Remove the meatballs from the oven, then turn the oven to the broiler setting.
- Sprinkle the crushed red pepper flakes over the meatballs, then lay a slice of mozzarella over the top of each meatball. Place under the broiler for 3 to 4 minutes to melt the cheese, watching closely so that nothing burns. Scatter over the torn basil.
- Serve with crusty bread and a dressed salad.
CHEESE-STUFFED MEATBALLS
I am eating this as I write - it's a recipe I got from the Williams-Sonoma catalog. They came out just delicious and the extra meatballs will be my lunch and dinner this week. One caveat - seal the cheese in the meatballs securely, or it will melt out when simmering in the sauce. It was a bit tedious to make, but not difficult. There are quite a few steps. The sauce was a bit of a pain for me to make (didn't have a tomato press), so I used premade. But I think this is the way I'll make my meatballs from now on!

- In a large bowl, combine the milk and bread crumbs.
- Whip eggs in separate bowl. Then add to larger bowl along with the meats, parsley, garlic and pepper.
- Mix ingredients briefly with hands.
- Form into 2 inch balls.
- Seal cheese cube into center of each meatball.
- In a large skillet set on medium-high, heat oil to almost-smoking, browing meatballs for about a minute or so.
- Transfer meatballs to tray (lined with paper towels).
- Discard oil and place tomato sauce in skillet, heating to medium-high until it starts to simmer.
- Add meatballs, cover and reduce heat to medium-low.
- Cover, simmer for 30 minutes.
- Uncover and cook for 10 minutes more.
- Serve over pasta with grated cheese, or place in Italian bread buns to make grinders.

- Preheat oven to 400°. Cut jalapenos in half lengthwise; remove seeds and membranes. In a large saucepan, boil peppers in water for 5-10 minutes (the longer you boil the peppers, the milder they become). - Mix cream cheese spread, shredded cheese and peppers until blended. Roll cream cheese mixture into 12 balls, using about 1 Tbsp. cream cheese mixture for each ball. Place in parchment-lined pan. Freeze 2 to 3 hours or until firm.
- Heat oven to 350°F. Combine bread crumbs, taco seasoning mix and milk in medium bowl; let stand 5 min. or until bread crumbs are softened. Add egg and 1/4 cup cilantro; mix well. Add meat; mix just until blended.
- Roll meat mixture into 12 (1-3/4-inch) balls. Flatten slightly, then top each with 1 frozen cheese ball. Wrap meat mixture around cheese balls to completely enclose each cheese ball. Reroll into round balls, if necessary. Place on baking sheet sprayed with cooking spray.

- Wash and dry chicken cutlets, season with salt and pepper. Preheat oven to 450°F.
- Lightly spray a baking dish with non-stick spray.
- Combine cream cheese, cheddar, scallions, jalapeño and bacon crumbles in a medium bowl.
- Lay chicken cutlets on a working surface and spread 2 tbsp of cream cheese mixture on each cutlet.
- Loosely roll each one, secure the ends with toothpicks to prevent the cheese from oozing out.
