1 ⅓ cups coconut cream
4 cups icing sugar
1 cup coconut oil, melted
1 cup maple syrup
⅔ cup almond milk
1 ⅓ cups flour
2 teaspoons baking powder
1 teaspoon salt
½ cup sugar
½ cup water
1 ½ cups strawberry
½ cup champagne, vegan-friendly, or sparkling wine

Steps:

  • Prepare the coconut cream by whipping the coconut cream and icing sugar together, until you form soft peaks.
  • Leave to chill in the fridge until set, for about 30 minutes.
  • Meanwhile, preheat the oven to 180°C (350˚F) and line a cupcake tray with 12 cases.
  • Make the cupcakes by mixing the coconut oil, maple syrup, and almond milk together.
  • Fold in the flour, baking powder, and salt.
  • Spoon into the cupcake cases.
  • Bake for 15 minutes, or until golden brown and springy to the touch.
  • While the cakes are baking, make the strawberry champagne syrup by bringing the sugar, water, strawberries, and champagne to the boil in a saucepan over a medium-high heat.
  • Simmer until the syrup is slightly thicker and has changed colour to a deep red. Set aside.
  • Take the cakes out of the oven and leave to cool slightly for a couple of minutes.
  • Poke several holes in each one and pour about 2 teaspoons of the strawberry champagne syrup on top, so that it seeps into the holes and is glistening on top.
  • Spoon the coconut cream on top and garnish with a strawberry.

4 cups all-purpose flour
3 cups white sugar
5 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 2/3 cup milk
1 cup shortening
1/2 cup Champagne
1 tablespoon vanilla extract
8 egg whites
2 cups sugar
8 large egg whites
4 cups (2 pounds) unsalted butter, cubed, at room temperature
1 tablespoon vanilla extract

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees F. Line a muffin pan with 24 cupcake liners.
  • In a very large bowl, stir together the flour, sugar, baking powder, baking soda and salt. Add the milk, shortening, Champagne and vanilla. Beat on low to medium speed for about 30 seconds, or until just combined. Scraping the bowl constantly, beat on medium speed for 2 minutes. Add the egg whites and beat for 2 minutes.
  • Fill the cupcake liners half full with batter and bake until the center springs back when touched, about 12 minutes. Cool before frosting.
  • For the buttercream: Put the egg whites in the large mixing bowl of a stand mixer fitted with the whisk attachment. Put 1 1/2 cups sugar and 1/2 cup water in a heavy saucepan and bring to a boil over medium to high heat. Bring to a soft ball stage (240 degrees F), 4 to 7 minutes.
  • Meanwhile, whip the egg whites at high speed until soft peaks form. With the motor running, gradually add the remaining 1/2 cup sugar, continuing to whip until medium peaks form.
  • When the sugar water reaches 240 degrees F, raise the speed to high and gradually add in the sugar water to the egg whites in a thin stream to avoid cooking the egg whites. Leave the mixer on high for 2 minutes, and then reduce the speed to medium until the mixture has cooled to room temperature, 5 to 8 minutes.
  • Once cooled, add the butter in increments, scraping the sides of the bowl with a rubber spatula. Add in the vanilla and whip.
  • Pipe the buttercream on top of the cooled cupcakes.

¼ cup instant vanilla pudding mix
1 teaspoon baking powder

A not so sweet chocolate cupcake with a sweet cream cheese filling. We have made this per the recipe and made numerous tweaks (lemon cupcake- adding a little strawberry preserves to the filling). We have also made this with Hershey's Dark cocoa which made the cupcakes a bit more rich. For those not wanting to cook with butter, margarine is fine. This was originally given as a 'child-friendly' recipe and has never failed to delight.

1 (3 ounce) package cream cheese, softened
1/4 cup sugar
2 tablespoons nuts, chopped (any are tasty)
1/2 teaspoon vanilla

1/4 cup butter, softened
1 egg
1/2 teaspoon vanilla
1/2 cup milk

Steps:

  • Preheat oven to 375.
  • Line muffin pan with 12 baking cups.
  • In a small bowl, mix cream cheese, 1/4 cup of sugar, nuts and 1/2 tsp vanilla until well blended (set aside).
  • In a small bowl, mix flour, cocoa and baking powder.
  • In a medium bowl, cream the butter and 1/2 cup sugar until fluffy.
  • Stir in egg and 1/2 tsp into the butter/sugar bowl.
  • Stir in about 1/2 of the flour mixture into the butter mixture.
  • Slowly stir in milk until smooth.
  • Stir in the remaining flour and mix until smooth.
  • Spoon about 1 Tbs of batter into each baking cup. Add about 1 tsp of the cream cheese/nut mixture. Finish filling with batter.
