Steps:
- Cut avocados in half; remove pits and gently scoop out insides, leaving shell intact. Combine the avocados, scallions, cucumbers, radishes, tamari, oil, garlic, and add to shells. Top with yeast, sprouts and sesame meal.
- *Sesame Meal: Mix 1/2 cup of sesame seeds and 1/4 teaspoon salt, grind in nut or coffee grinder in 2 tablespoon increments.

- In a blender place peeled avocado, add a pinch of chile powder, juice of one lime, salt and pepper, and add some nonfat yogurt. Thin with ice water if necessary. Blend to a pouring consistency. Serve over mesclun, pink grapefruit segments and diced red pepper.

- Oxygen, or exposure to air is what causes your guacamole to turn brown. Making guacamole, or any avocado dish in advance make certain that you block out the air by making sure the surface of your dip is in contact with the plastic wrap.

- Heat grill to hot. Halve the avocados and discard the stones. Brush each half with ½ tsp of the olive oil and arrange on a baking sheet. Grill for 5 mins.
- In a small bowl, toss together all of the remaining ingredients. Season to taste, then divide between the hollows of each avocado. Serve immediately.

STUFFED AVOCADO - TEX-MEX STYLE
Guacamole is good stuff, but sometimes it gets a little over-used and boring. If that happens or if you just want a change of pace, try using this tasty and so-easy-to-fix version of a stuffed avocado w/your next Tex-Mex meal for an aesthetic presentation and crowd pleasing alternative to guacamole. The stuffing mixture can be made a day ahead, but the avocado prep and assembly should be done just prior to serving. I'll bet you and your friends will like this. :-)

Steps:
- Combine all stuffing mixture ingredients and gently mix for even distribution. If the mixture is too thick to suit you, add small amounts of the liquid drained from the picante sauce till the mixture is smooth (remember the cream cheese will thicken again when refrigerated). Cover and refrigerate at least 2 hours or till you're ready to assemble the stuffed avocados.
- Halve avocados, twist halves to separate and remove stone. To prevent discoloration, brush all exposed cut surfaces and the center w/lime juice using a pastry brush. Sprinkle lightly w/seasoning salt. Divide the stuffing mix evenly among the 4 halves and serve immediately.
- NOTES: 1) If you want to serve 8, double the stuffing mix & serve as a salad on a bed of lettuce by quartering 2 large avocados. Slice ea quarter into 3 wedges (or leave them intact) and arrange on lettuce leaves w/an evenly divided portion of the stuffing mix -- 2) You may also want to use just half of the cilantro in the stuffing mixture and reserve the other half for garnish. -- 3) If you think you'll miss the flavor and crunch of nacho chips that normally accompany guacamole, grab a handful, crumble them in a sandwich bag and sprinkle over the stuffed avocado halves or the salad version. Enjoy!

- Preheat oven to 400 degrees F (200 degrees C).
- Scoop out some of the flesh in the center of each avocado; place into mixing bowl. Add chicken, cream cheese, tomatoes, salt, pepper, and cayenne pepper; mix well to combine. Scoop spoonfuls of chicken mixture into the wells of each avocado; top each with generous amount of Parmesan cheese. Place avocado halves, face-up, in muffin cups to stabilize.
- Bake avocados in preheated oven until cheese is melted, 8 to 10 minutes.

- Preheat oven to 400F.
- Fry the onion in the butter for about 10 minutes.
- Meanwhile, scoop the flesh out of the avocado skins with a teaspoon, taking care not to damage the skins.
- Dice the avocado flesh.
- Add the fried onion to the avocado along with the nuts, cheeses, parsley and sherry.
- Season to taste with salt and pepper.
- Pile the mixture (overstuffed) into the avocado shells.
- Place them in a shallow ovenproof dish and bake for 10-15 minutes.
- Keep an eye on them!
- Serve immediately.

- scoop out all of the avocado with a spoon, and put it in a bowl
- DO NOT throw away the avocado skin.
- throw the seed away.
- mash it up (just like you would with guacamole).
- chop up the cilantro.
- add salsa, cilantro, lemon juice, and 1/2 of the bacon.
- add salt to taste.
- continue stiring and mashing until well combined.
- take the mixture and put it back into the avacodo skin.
- top with the remaining bacon and serve.

FRIED STUFFED AVOCADO
The fried stuffed avocado has become quite popular lately showing up in a few restaurants in South Texas. If you see it on the menu, make sure you order it. They are all different. Here is one of the versions I found from a restaurant in Austin. I'm sure that you could make your own version. Enjoy!

- Take the ½ avocado and remove the skin, leaving avocado ½ whole. Take a scoop and.
- remove some of the flesh around the seed whole to allow for more filling.
- Dust with flour and wrap in plastic and freeze.
- Dip the avocado in the relleno batter removing some batter from the hole and deep fry.
- Heat, sauté and cook the shrimp with garlic and pico. Deglaze with white wine and add cream to bring to a boil. Add manchego cheese and cook until thickened.
- Fill the hole with the shrimp mixture and pour sauce around rim and serve.
- Serve on a large round plate and garnish with fresh cilantro.

- To prepare, place flour in a mixing bowl and add egg yolks, salt, oil, and beer.
- Stir batter until thoroughly mixed.
- Cover bowl with plastic wrap and allow it to rest in the fridge for at least 2 hours or as long as 24 hours - the longer the better, to a point.
- Just before using batter, stir it well again.
- In a separate bowl, beat egg whites until stiff but not dry; gently fold egg whites into batter.
- Fry in oil at 360°F.
