SMOKY CHEESE AND POTATO BAKE

Steps:
- Spray 3 1/2 to 4-quart slow cooker with nonstick cooking spray. In medium bowl, combine soup, sour cream and cheese; mix well. Gently stir in roasted pepper strips.
- Arrange half of potatoes in sprayed slow cooker. Top with half of sour cream mixture; spread evenly. Top with remaining potatoes and sour cream mixture, spreading evenly. Do not stir.
- Cover; cook on low setting for 5 to 6 hours.

- Remove red wax coating from cheese and cut cheese into 1/2-inch cubes.
- Spray crock pot with nonstick coating spray. In medium bowl, combine soup, sour cream and cheese.; mix well. Gently stir in roasted pepper strips.

- Pour over milk and stock.
- Bring to the boil, reduce heat, simmer 10 minutes.
- Do not allow to soften.

- Sprinkle with parmesan.
- Bake 180 degrees C for 40 minutes or till potatoes are tender.

A dear friend forwarded to me a copy of a popular home and garden magazines newsletter she received. This recipe was listed in the slow cooker section and sounded very good and easy to put together. Smoked or roasted chicken or turkey can be used in this recipe.

- Using at least a 3 1/2 or 4 quart slow cooker, lightly coat the inside of the crock with nonstick cooking spray. Add soup, sour cream, cheese, frozen potatoes, chicken and combine well.
- Cover with lid and cook on the low setting for 5 to 5 hours. If desired, before serving top each serving with crushed croutons. Serve immediately.
