Green Bean Fries with Cucumber Wasabi Dip image

This recipe has been tweaked many times over the years and is a great hit. The cucumber wasabi dipping sauce is fantastic! Even the kids love them and good luck getting them to eat plain green beans!

½ cup ranch dressing
¼ cup peeled, seeded, and minced cucumber
1 tablespoon whole milk
1 ½ teaspoons prepared horseradish
1 teaspoon white vinegar
1 teaspoon Japanese wasabi powder
⅛ teaspoon salt
1 pinch cayenne pepper, or more to taste
2 cups water
2 cups chicken broth
8 ounces fresh green beans, trimmed
1 egg, beaten
1 tablespoon whole milk, or more as needed
½ cup plain bread crumbs
½ cup crushed French-fried onions
¾ teaspoon salt
½ teaspoon onion powder
¼ teaspoon ground black pepper
¼ teaspoon garlic powder
1 cup all-purpose flour
8 cups vegetable oil for frying

Steps:

  • Blend ranch dressing, cucumber, 1 tablespoon milk, horseradish, vinegar, wasabi powder, 1/8 teaspoon salt, and cayenne pepper together in a food processor until dip is smooth. Transfer dip to a bowl, cover, and refrigerate until chilled, at least 30 minutes.
  • Bring water and chicken broth to a boil; add green beans and cook until slightly tender, about 10 minutes. Drain.
  • Whisk egg and 1 tablespoon milk together in a bowl. Combine bread crumbs, French-fried onions, 3/4 teaspoon salt, onion powder, black pepper, and garlic powder together in a separate bowl. Place flour in a third bowl.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Press green beans in flour until evenly coated. Dip coated green beans in egg-milk mixture, allowing excess liquid to drip back into bowl. Transfer green beans to bread crumbs mixture and press to coat, shaking off excess. Arrange coated beans in 1 layer on a plate or in a colander.
  • Working in batches, fry coated green beans in the hot oil until crisp, about 1 minute 30 seconds. Transfer green bean fries to a paper towel-lined colander using a slotted spoon. Serve green bean fries with dip.

1 cup mayonnaise
4 teaspoons soy sauce
1 1/2 teaspoons sugar
2 teaspoons fresh lemon juice
2 teaspoons wasabi paste

Steps:

  • Blanch asparagus in 2 batches in a large saucepan of boiling salted water 1 minute. Transfer to a colander and rinse under cold running water to stop cooking. Drain well and pat dry.
  • Whisk together mayonnaise, soy sauce, sugar, lemon juice, and wasabi paste until sugar is dissolved.
  • Serve asparagus with dip.

½ cup buttermilk ranch dressing
¼ cup peeled, seeded, and finely chopped cucumber
1 tablespoon milk
1 ½ teaspoons prepared horseradish
1 teaspoon wasabi powder
⅛ teaspoon salt
1 pinch cayenne pepper
4 cups vegetable broth
½ pound fresh green beans, trimmed
1 egg, lightly beaten
1 cup milk
1 cup all-purpose flour
1 cup dry bread crumbs
¾ tablespoon salt
½ teaspoon ground black pepper
¼ teaspoon garlic powder
½ teaspoon onion powder
vegetable oil for frying

Steps:

  • Make the dip by combining the buttermilk ranch dressing, cucumber, milk, horseradish, wasabi, salt, and cayenne pepper into a blender. Blend on low until well mixed. Pour into a small bowl and refrigerate. The dip will thicken as it chills.
  • Place the broth in a saucepan over medium-high heat. Add the beans, cover, and bring to a boil; reduce heat to medium and simmer until beans are bright green and tender, about 8 minutes. Immediately drain beans into a colander and rinse under cold water. Set aside to cool.
  • Combine the beaten egg with milk in a shallow bowl. Place the flour in another shallow bowl. In a third shallow bowl, combine the bread crumbs, salt, black pepper, garlic powder, and onion powder. Working with a handful of beans at a time, dip each bean first into flour, then into the egg mixture, and then into the bread crumb mixture. Place beans on a plate until all are coated.
  • Heat 1 1/2 inches of oil in a deep skillet (or use a deep fat fryer) over medium-high heat to 350 degrees F (175 degrees C). Fry the beans several at a time, without crowding, until golden brown. Drain on paper towels and cool. Serve with horseradish-wasabi dip.

1 cup sour cream
1/2 cup buttermilk
1 to 2 teaspoons wasabi paste
2 to 3 tablespoons finely chopped fresh chives
Salt and pepper
1 1/4 to 1 1/2 pounds green beans
Frying oil
1 cup flour
1 1/2 teaspoons baking powder
1 tablespoon granulated onion
1 tablespoon granulated garlic
2 large eggs, beaten

Steps:

  • Combine the sour cream, buttermilk, wasabi, chives and season with salt and pepper. Reserve.
  • Bring a few inches of water to a boil, salt it and cook the green beans, 2 minutes. Remove, cold shock in an ice bath, drain and dry on a kitchen towel.
  • Meanwhile, heat a few inches of oil over medium to medium-high heat. Combine 1 cup water, the flour, baking powder, onion, garlic and eggs in a bowl to form a batter. Dip the beans in the batter, a dozen at a time, and fry them up in batches. Cool on a cooling rack. Sprinkle with salt while hot.
  • Serve the fried beans with the wasabi dipper.

1 teaspoon coarse salt, plus more for seasoning
1 pound string beans, stem ends trimmed
2 teaspoons vegetable oil
1 teaspoon brown mustard seeds
1 small yellow onion (about 4 ounces), peeled and thinly sliced into rounds
2 teaspoons minced ginger (1/2-inch piece)

Steps:

  • Fill a large bowl with ice and water. Bring a pot of water to a boil, and add 1 teaspoon salt and string beans. Cook until bright green, about 3 minutes, and drain into a colander. Transfer to ice bath to stop cooking, drain again, and set aside.
  • Place a large skillet over high heat, and add oil. When very hot, add mustard seeds, and cook until seeds begin to pop, about 30 seconds. Add onion, and cook, stirring until they begin to brown, 3 to 4 minutes. Add ginger, and cook 1 minute more. Add reserved string beans, and cook, stirring until hot. Season with salt to taste.

  • Heat oil in a wok over high heat. Reduce heat to medium, and place beans in the wok. Cover, and cook 10 minutes, stirring occasionally. Season with garlic salt, garlic powder, pepper, and minced onion. When beans are almost tender, mix in cocktail onions with liquid. Continue cooking 5 minutes, until heated through.
