3 tablespoons lard or vegetable oil
1 1/2 pounds boneless pork for stewing, in 1/2-inch cubes
Salt and freshly ground black pepper
3 medium onions, halved and sliced thin
1 large clove garlic, minced
1 teaspoon ground cumin
2 teaspoons dried oregano
2 pounds ripe tomatoes, peeled and coarsely chopped
1 1/2 cups fresh corn kernels, from 3 to 4 ears
1 tablespoon minced flat-leaf parsley
2 tablespoons minced cilantro
1 Serrano or jalapeno chili, seeded and finely chopped, or to taste

Steps:

  • Heat lard or oil over high heat in large, heavy saucepan or Dutch oven. Add pork, and cook, stirring occasionally, until browned on all sides, about 10 minutes. Season with salt and pepper.
  • Reduce heat to low, add onions, and cook, stirring occasionally, until softened but not browned, for 8 minutes. Add garlic, cumin, oregano and tomatoes with their juice. Simmer partly covered until pork is tender, about 45 minutes.
  • Add corn, and simmer for 15 minutes. Taste for seasonings. Serve sprinkled with parsley, cilantro and chili.

Instead of rice, you can create a complete dinner plate with a side of roasted potatoes and a crisp, green salad. Add a piece of crusty bread, in either case, for a satisfying summer meal.

1 tablespoon extra-virgin olive oil
2 pounds boneless, skinless chicken thighs
2 teaspoons Cajun seasoning, or to taste
1 teaspoon ground black pepper, or to taste
1 cup chicken broth
½ cup chopped onion
2 cloves garlic, minced
2 cups sliced okra
1 ½ cups fresh corn kernels
1 cup diced fresh tomatoes
2 dashes hot sauce, or to taste
3 tablespoons water
2 tablespoons cornstarch

Steps:

  • Heat olive oil in a deep, 12-inch non-stick skillet over medium heat. Season each chicken thigh with Cajun seasoning and black pepper. Add chicken to shimmering oil and cook until browned, about 5 minutes per side.
  • Add chicken broth, chopped onion, and minced garlic. Bring to a boil, cover, reduce heat to low, and simmer until the chicken is almost done, about 20 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).
  • Increase heat to medium, add okra, corn, and tomatoes, and bring to a boil. Replace lid, reduce heat to low, and simmer until vegetables are soft and internal temperature of the chicken is 165 degrees F (74 degrees C), about 10 more minutes.
  • Mix water and cornstarch together in a small bowl and stir into the sauce rapidly until thickened, about 3 minutes.

1 bay leaf

2 (14 1/2 ounce) diced tomatoes, undrained (Hunts, you want the one with the green pepper, celery and onion)
1 1/2 cups fresh corn kernels or 1 1/2 cups frozen corn kernels
1 (14 ounce) can reduced-sodium chicken broth
1 (15 ounce) can small white beans, drained and rinsed
3/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
2 tablespoons fresh cilantro, finely minced (optional)
1 serrano peppers (optional) or 1 jalapeno, seeded and finely chopped (optional)

Steps:

  • Heat oil in 6 quart saucepan over medium-high heat until hot. Add pork; cook 10 to 12 minutes, stirring occasionally, or until browned. Remove from pan.
  • Add onion, bell pepper, carrot, celery and garlic to pan. Cook 5 minutes, stirring occasionally, or until onion softens. Add paprika, bay leaf and cumin; stir to combine.
  • Add undrained tomatoes, corn and broth to pan. Return pork to pan. Bring to a boil, then reduce heat to medium-low. Simmer uncovered 1 hour or until pork is tender.
  • Remove bay leaf; add beans, salt and pepper. Heat through and serve.

Steps:

1 boneless pork shoulder (3 to 4 lb)
1 carton (32 oz) Progresso™ chicken broth
1 can (28 oz) Muir Glen™ organic fire-roasted crushed tomatoes, undrained
1 can (15.25 oz) whole kernel corn, drained
Sliced radishes, shredded cabbage, diced avocado, crumbled queso fresco, chopped cilantro and lime wedges, as desired

Steps:

  • Spray 5-quart slow cooker with cooking spray. Mix enchilada sauce, taco seasoning mix, chili powder, oregano, cumin and salt in cooker. Add pork shoulder; turn to coat.
  • Cover; cook on Low heat setting 8 to 9 hours or until very tender. Remove pork from slow cooker; when cool enough to handle, shred pork with fork. Remove 1 cup cooking liquid; place in large bowl. Add shredded pork to bowl; toss to coat.
  • Meanwhile, discard remaining cooking liquid; wipe out slow cooker. Spray slow cooker with cooking spray. Add broth, tomatoes and corn; stir in pork. Cover; cook on High heat setting 1 hour 30 minutes to 2 hours 30 minutes or until hot. Serve with remaining ingredients.

2 lbs boneless pork loin, cut into 1 inch pieces
2 teaspoons kosher salt
1 teaspoon pepper, freshly ground
2 tablespoons olive oil
1 medium onion, chopped
2 large bell peppers, red and yellow if you can find them, cut into one half inch squares
4 garlic cloves, chopped
1 (28 ounce) can whole tomatoes, hand squeezed and juices retained
2 tablespoons fresh basil, chopped
2 tablespoons fresh parsley, chopped

Steps:

  • Trim fat from pork and season with salt and pepper.
  • Heat olive oil in a heavy bottomed pot over medium high heat.
  • Add the pork and cook for about 3 minutes, turning until browned on all sides.
  • Reduce the heat to medium, add the onion and peppers and cook for about 5 minutes, or until onions have softened.
  • Add the garlic after the onions and peppers have cooked for 2 minutes.
  • Stir in the tomatoes and bring to a boil.
  • Reduce heat to low, cover and simmer for 30 minutes.
  • Taste it once simmering and adjust the salt and pepper to suite you taste.
  • Add the chopped basil and parsley, stir once and serve.
  • Note: If using dried basil and parsley, add to the pot when you add the tomatoes.
  • Enjoy!

750g new potato
500g vine-ripened tomatoes
2 garlic cloves
3-4 sprigs rosemary
4 pork chops or steaks

Steps:

  • Preheat the oven to fan 180C/ conventional 200C/gas 6. Wash the potatoes, but don't bother to peel them. Cut into thickish slices then cook in boiling water for 6-8 minutes until almost tender; drain. Slice the tomatoes to the same thickness. Chop the garlic, then strip the rosemary from its stalks and chop the leaves fairly finely.
  • Drizzle a little olive oil in the base of a shallow ovenproof dish wide enough to take the chops in one layer. Arrange rows of potatoes and tomatoes across the dish, seasoning with salt and pepper as you go and sprinkling with half the rosemary and all the garlic.
  • Drizzle a couple more tablespoons of olive oil over the vegetables and bake for 15 minutes, then sit the pork on top, season and sprinkle with the remaining rosemary. Return to the oven for 35-45 minutes, until the pork and potatoes are tender.
