STRING BEANS IN AZERI TOMATO SAUCE(AZERBAIJAN)

String Beans in Azeri Tomato Sauce(Azerbaijan) image

In this recipe, the sauce is the thing. It is a wonderful tomato sauce, sweetened with sweet basil but given a slight sour tang by the addition of yogurt, sour cream and vinegar. Azeri's use the sauce on vegetables - particularly green ones - and also on fowl and lamb. A great Azeri recipe from The Silk Road Gourmet Volume One. Azerbaijan is the largest country in the Caucasus region located at the crossroads of Western Asia and Eastern Europe. It is bounded by the Caspian Sea to the east, Russia to the north, Georgia to the northwest, Armenia to the west and Iran to the south.

STRING BEANS IN TOMATO SAUCE

string beans in tomato sauce image

This delicious string beans recipe is very suitable for lunch or dinner. The lovely soft string beans and sweet tomatoes combine very well with the spiciness of the garlic. Mouthwatering and simple!

Provided by The Green Creator

Categories     lunch

Time 25m

Yield 2

Number Of Ingredients 9

500 grams of string beans
100 grams of tomato puree (1 glass jar)
200 ml water
4 cloves garlic
1 teaspoon coconut oil
2 ripe tomatoes or a bowl of cherry tomatoes
pinch of Celtic sea salt
a dried bay leaf
Optional: a cup cooked red lentils per person

Steps:

  • Wash the string beans and cut the stalks off. Then cut them in about three or four pieces so you have smaller pieces of string beans. In a frying pan put all the ingredients (not the lentils), and allow this to simmer until the beans are soft. Add more water if everything is too dry. You will want to aim for a beautiful combination of tomato puree and soft string beans. After about 20 minutes on medium heat with a lid on the pan they should be ready. Serve with lentils, buckwheat or quinoa.

STRING/GREEN BEANS IN CHUNKY TOMATO SAUCE

String/Green Beans in Chunky Tomato Sauce image

This is a recipe from Lidia's Italian American Kithchen. The traditional beans used in this recipe are the Italian string beans - the flat wide ones. Due to the acidity of the tomato sauce they will turn olive green in the cooking process. This recipe is posted by request. I haven't tried it yet.

My husband and I used to visit a Lebanese restaurant in DC and loved their dish called 'Loubieh Bel Zeit.' When we moved away we craved this dish, so I tried to re-create it and came up with the following recipe. My husband LOVES it and wants me to make it all of the time now.

STRING BEANS IN CHUNKY TOMATO SAUCE

String Beans in Chunky Tomato Sauce image

I'm sure this dish will take you back, whether you make it with "Italian" string beans (those flat wide ones), regular string beans, or the more expensive, thinner haricots verts. It isn't necessary to start with a long-simmered tomato sauce for these beans; in fact, the flavor will be fresher with this quick-cooked marinara made right in the pan. The acidity of the tomatoes will turn the string beans a sort of olive green. That doesn't bother me at all-it reminds me of the way my grandmother cooked vegetables. Maybe they weren't the brightest-green vegetables I've ever seen, but they certainly were the most delicious.

Yield makes 6 servings

Number Of Ingredients 6

3 tablespoons extra-virgin olive oil, plus more for finishing the dish if you like
6 cloves garlic, peeled
1 pound flat "Italian" string beans, regular string beans, or haricots verts, ends trimmed
Salt
Crushed hot red pepper
One 28-ounce can Italian plum tomatoes (preferably San Marzano) with their liquid

Steps:

  • Heat the oil in a large, heavy skillet over medium heat. Whack the garlic cloves with the side of a knife and toss them into the pan. Cook, shaking the pan, until lightly browned, about 2 minutes. Scatter the string beans over the oil, season them lightly with salt and red pepper, and turn with tongs until they begin to wilt, about 3 minutes.
  • Meanwhile, crush the tomatoes coarsely with your hands. Add them to the string beans, cover the pan, and cook until the beans are tender, about 10 minutes. Taste the beans, and season with additional salt and red pepper if you like. Serve hot.

GREEN BEANS IN TOMATO SAUCE

Green Beans in Tomato Sauce image

I had these beans at a dinner party. I'm so glad the hostess was willing to share the recipe. A very unique and different way to serve fresh green beans.

Provided by Patti Terranova

Categories     Side Dish     Vegetables     Tomatoes

Time 55m

Yield 6

Number Of Ingredients 12

1 pound fresh green beans, trimmed
2 tablespoons olive oil
1 onion, chopped
1 clove garlic, chopped
1 tablespoon chopped fresh parsley
1 (14.5 ounce) can diced tomatoes including juice
1 tablespoon white wine vinegar
1 teaspoon ground cumin
1 pinch white sugar, or to taste
salt and ground black pepper to taste
1 tablespoon olive oil
1 clove garlic, chopped

Steps:

  • Bring a pot of lightly-salted water to a boil; stir in the green beans and return to a boil. Reduce the heat to medium, and cook the green beans until just tender, about 8 minutes. Drain.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat; cook and stir the onion, 1 clove of garlic, and parsley in the hot oil until the onion is translucent, about 5 minutes. Stir in the tomatoes, wine vinegar, and cumin; bring the mixture to a boil, reduce heat to medium-low, and simmer for 30 minutes to thicken the sauce. Transfer the sauce to a bowl.
  • In a clean skillet, heat 1 tablespoon of olive oil over medium-low heat; cook and stir 1 clove of chopped garlic in the hot oil until fragrant beginning to brown, 2 to 3 minutes. Return the cooked green beans to the skillet; cook and stir to reheat the beans and coat them with oil. Pour the sauce over the beans and stir to coat. Serve hot.
