Creamy but healthy green string bean soup recipe of Romanian origin that is also plant-based, vegan and insanely delicious with tons of flavor from garlic and dill.

1 lb green or yellow string beans ((fresh or frozen))
1 tbsp water (or a drizzle of olive oil)
13 cloves garlic
2.5 cups cashew milk ((plain, unsweetened))
3.5 cups vegetable stock ((low sodium))
1 carrot (- sliced into thin rounds)
4 tbsp whole wheat pastry flour ((or all purpose organic flour))
2 tsp onion powder
2 leaves bay
5 sprigs fresh dill
1 cup fresh tomatoes (- chopped)
1/3 cup fresh dill (- roughly chopped)
1 pinch red pepper flakes (+ more to taste)
sea salt to taste
2 tbsp nutritional yeast ((OPTIONAL))

Steps:

  • Rinse the beans, discard the ends and snap them in half or smaller pieces to your liking.
  • If desired you can steam the beans in advance. Prepare a double boiler with 2 inches of water in the bottom pot. Bring to a simmer and then place the green string beans in the top basket. Cover with a lid and steam for 10 to 15 minutes or until desired tenderness is achieved. Check after 10 minutes to make sure you don't overcook the beans. Remove from the steam and transfer to a bowl. Rinse with ice cold water to stop the cooking process at this point. Refrigerate until ready to use. (Alternatively you can use the 1- pot method below but take good care not to overcook them).

2 pounds fresh green beans
1 clove garlic, minced
1 sprig fresh parsley
1 pinch salt
2 slices bacon
3 tablespoons all-purpose flour
1 onion, chopped
1 cup sour cream
3 tablespoons vinegar

Steps:

  • In a large pot over medium heat, combine green beans, garlic, parsley, salt and water to cover and cook until beans are tender.
  • Fry bacon until crisp, set aside. Add onion and flour to bacon grease, stirring until smooth and brown. Add some water from the beans, stirring slowly and constantly to prevent lumps.
  • Cook to thicken a bit, then add it to the bean soup and bring to a boil. Stir crisp bacon, sour cream and vinegar.

2 cups fresh green beans, cut into 2-inch pieces
1-1/2 cups cubed peeled potatoes
1 cup cubed fully cooked ham
1/2 cup thinly sliced carrot
1 medium onion, diced
1 bay leaf
1 sprig fresh parsley
1 sprig fresh savory or 1/4 teaspoon dried savory
1 teaspoon beef bouillon granules
1/4 teaspoon pepper
1/2 teaspoon salt, optional

Steps:

  • In a large saucepan or soup kettle, combine all the ingredients. Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until vegetables are tender. Before serving, remove bay leaf and parsley and savory sprigs.

This is a fantastic way to use up the leftover holiday ham or the bountiful crop of string beans from the garden. It is easy to prepare and smells wonderful while it simmers away on the stove. The soup has a slightly thickened broth that is very silky and just makes it even more comforting. A loaf of crusty bread is all that is needed to fill this meal out.

1 lb ham, cubed
1 medium onion, diced
2 cups carrots, sliced
1/2 cup celery, diced
5 medium potatoes, peeled and cubed
1 1/2 lbs fresh string beans, cut into 2 inch pieces
water or chicken stock
salt
pepper
4 tablespoons butter, softened
5 tablespoons flour

Steps:

  • Place the ham in large pot and fill pot about half way with either water or chicken stock, add onion, and celery and cover. Bring to a boil and turn down to simmer for about 30 minutes to an hour. (If ham is on the bone let it simmer for about 90 minutes or until the ham starts to fall off the bone before proceeding.).
  • Add carrots, potatoes, and string beans to pot and continue simmering for about 30 minutes. Salt and pepper to taste.
  • If using a ham bone remove ham from bone while the veggies are cooking and discard the bone.
  • When potatoes are done mix butter and flour to form paste, slowly add to pot to slightly thicken broth. (You don't want it gravy thick but to have a little body so more or less of the mixture might be needed depending on how much broth there is.).

This is an old German recipe that can be enhanced by adding Mettwurst or your favorite cooked and diced German sausage to the soup just before serving, that way the soup won't get greasy tasting.

4 potatoes, diced
2 tablespoons distilled white vinegar
1 clove garlic
1 cup sour cream

Steps:

  • Cook potatoes in salted water. When half done, add beans, vinegar, pepper and garlic (spear on toothpick for easy finding). Add onion. Simmer until potatoes are done. Remove garlic glove.
  • Combine the flour and 1/4 cup water and make a smooth paste. Thicken soup with the flour paste.
  • Remove from heat. Slowly stir in sour cream. Do not cook any further. Stir in cooked and diced Mettwurst or other German sausage just before serving.

1 bone-in shank ham
2 1/2 cups all-purpose flour
1 teaspoon salt
5 eggs
2 ounces ham base
Two 15-ounce cans green beans
1 quart cubed russet potatoes
One 12-ounce can evaporated milk
1 cup sour cream
3 tablespoons heavy cream
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder, or to taste

Steps:

  • For the ham starter: Trim meat off the bone. Place meat and bone in a pressure cooker and cover with water. Pressure cook for 45 minutes. Release pressure, then clean and chop meat and strain broth. This can be divided into 4 portions of starter. Freeze 3 of the portions for future use and set the remaining portion aside.
  • For the glace: Put flour and salt in food processor. While it's running, stream in the eggs. Mix thoroughly. Put bench flour on a table, then dump dough out and knead to combine. Let rest 20 minutes. Flour table again and roll to about 1/4-inch thick, then cut into small squares with a pizza cutter. Make sure there's enough flour so the dumplings don't stick together. Rough them up in your hands to make them rustic looking. Put into a dry strainer and shake off excess flour.
  • For the soup: Combine the reserved ham starter, ham base, green beans and their juice and potatoes in a pot. Add water to fill about three-quarters of the way. Bring it all to a boil. Add the glace directly to the pot and cook until they float.
  • Combine the evaporated milk, sour cream and heavy cream in a separate bowl. Add some hot broth and whisk until completely smooth. Add the tempered cream mixture to the soup. Add salt, pepper and garlic powder to taste. Let simmer together for 45 minutes.

1 1/2 quarts water
2 teaspoons salt
1/2 teaspoon black pepper
3 potatoes, large, cut into chunks
2 onions, large, cut into chunks
1 tomatoes, large, cut into chunks
1 lb fresh string bean, cut diagonally into thin slices

Steps:

  • Bring the water to the boil then add the salt, pepper, potatoes, tomatoes and onions.
  • Simmer for 30 minutes.
  • Allow to cool and puree in a food processor then return to the pot add the string beans and simmer for 10 minutes, until the beans are tender. Season to taste and serve.

1 leftover ham bone, with lots meat should equal 4-5 cups of leftover ham
1 large onion, chopped
1 stalk celery, chopped
1 medium carrot
1 tablespoon oregano
1 tablespoon sweet basil
2 tablespoons parsley
pepper
3 -4 bay leaves (med sized)
2 lbs fresh string beans, cleaned
5 -6 potatoes, peeled and cut into bite sized chunks

Steps:

  • In a large pot place first six ingredients and add enough water to cover the ham bone. Bring to a boil. Reduce heat and simmer for 40-45 minutes. Remove the ham, & Bone and let cool. Place cooled ham in the refrigerator.Continue simmering the broth for approximately 3-4 hours. Add the string beans and continue cooking until almost tender, approximately one half hour. Add the potato chunks and cook until tender. De-bone the ham cutting meat into bite sized chunks. When potatoes are cooked & string beans are tender add the ham back to the pot. Add salt to taste.
  • Serve with hot biscuits & butter.

I was so surprised when I found this recipe. It's made with fresh green beans, and uses potatoes to thicken it instead of flour or cornstarch. I especially like the tarragon in this soup. If it gets too thick, use the larger amount of whipping cream. To save calories, I like to use fat-free half and half. This was in a box of my mother's clipped recipes. I don't know where she clipped it from....looked like magazine paper to me.

6 green onions, sliced
6 shallots, chopped
1 garlic clove, minced
3 tablespoons butter, melted
2 medium baking potatoes, peeled and diced
4 cups chicken broth
2 lbs fresh green beans, cut into 2 inch pieces
1/2-1 cup whipped cream or 1/2-1 cup half & half light cream
1 tablespoon lemon juice
1/2 teaspoon dried tarragon
1/4 teaspoon pepper

Steps:

  • Saute the green onions, shallot and garlic in the butter in a medium skillet over medium heat, stirring constantly, until tender. Set aside.
  • Cook the diced potatoes in boiling water to cover for 15 minutes, or until tender (depends on how small you diced them); drain well, and set aside.
  • Bring the chicken broth to a boil in a large saucepan; add green beans, and cook 30 to 35 minutes or until tender. Add the reserved green onions and potato; stir well.
  • Transfer half of the green bean mixture to the container of an electric blender; cover and process until smooth, stopping once to scrape down the sides. Repeat the procedure with the remaining green bean mixture. (Sometimes I like to use my immersion blender, leaving some of the pieces whole). Return the pureed mixture to the saucepan and bring to a boil. Reduce heat; stir in whipping cream or half and half, lemon juice, and tarragon. Cook until thoroughly heated. Serve, and sprinkle with black pepper.

TRADITIONAL MENNONITE GREEN BEAN SOUP



Traditional Mennonite Green Bean Soup image

This is, of course, best with fresh-from-the-garden green beans, but frozen beans work equally well. The original recipe calls for an additional dollop of sour cream before serving, but I've grown up on this stuff just served with milk or half-and-half cream at the table. When I make this now, instead of boiling a ham bone for the stock, I slice up a pound or two of farmer sausage to make the stock and then just leave the meat in the soup. It's a mild soup, so some people add salt or chicken bouillon to give it a little extra flavour. You can also add other fresh veggies as well, like peas and chopped carrots. This is usually served with fresh New Bothwell cheese (here in Manitoba, anyway) and homemade buns.

I usually use about 12 - 15 cloves. Like the title says, it's really quick, easy and awesome...I think it's also healthy!! Healthy is not one of my favorite cooking terms, so if it's healthy and I like it, you know it's good!!

6 cups chicken broth (use fresh, canned low-fat or low sodium, whatever you like)
1 teaspoon salt (to taste)

12 garlic cloves, pressed (I use up to 15 cloves)
1/2 lb fresh green beans, cut into 1 1/2 inch lengths (basically cut so they will fit on a soup spoon)
1 egg

Steps:

  • Combine first 5 ingredients in a pot and bring to a boil.
  • Reduce to a simmer.
  • Press in garlic.
  • Add beans.
  • Simmer uncovered 10 minutes.
  • Adjust seasonings.
  • Beat egg well in a small bowl.
  • Temper egg by ladling some hot broth into the bowl.
  • Stir the soup while adding the egg to the simmering broth.
  • Add pepper to taste.
  • Top with croutons crostini if you choose.
