PAT IN PAN PIE CRUST

Everyone can make a pie crust with this recipe. I found this in an Amish cookbook. Try it, homemade is always better.

Yield 1 8-9 inch pie

Number Of Ingredients 6

1 1/2 cups flour
3 tablespoons flour
1 1/2 teaspoons sugar
1/2 teaspoon salt
1/2 cup vegetable oil
3 tablespoons cold milk

Steps:

  • Place the flour, sugar, and salt in the pie pan and mix with your fingers until blended.
  • In a measuring cup, combine the oil and milk and beat with a fork until creamy.
  • Pour all at once over flour mixture.
  • Mix with a fork until the flour mixture is completely moistened.
  • Pat the dough with your fingers, first up the sides of the plate, then across the bottom.
  • Flute the edges.
  • Shell is now ready to be filled.
  • If you are preparing a shell to fill later, or your recipe requires a prebaked crust, preheat the oven to 425.
  • Prick the pastry with a fork and bake 15 minute.

Number Of Ingredients 10

2 1/2-3 kg raw green pawpaw, cut in half length ways & de seeded
2 1/2 tablespoons cooking oil
2 ounces onions, finely chopped
1/2 teaspoon garlic, finely chopped
500 g lean ground beef
4 medium sized tomatoes, finely chopped
1/2 teaspoon pepper sauce
sweet chili sauce, to taste
salt & pepper
125 g grated parmesan cheese

Steps:

  • Pre heat oven to 180oC (350oF).
  • Heat oil in large frypan, and sauté onions and garlic.
  • Stir in beef; cook to well done.
  • Add tomatoes and other seasonings.
  • Cook briskly stirring occasionally until liquid has reduced.
  • Taste for seasoning--adjust if needed.
  • Spoon meat mixture into pawpaw shells.
  • Place shells side by side in shallow pan.
  • Place pan in centre of oven.
  • Pour in enough boiling water to come up to approx 1" of sides of pawpaw.
  • Sprinkle some grated cheese on top.
  • Bake for about 30 minutes until pawpaw shows no resistance when pierced with a skewer and top is delicately browned.
  • To serve, transfer the pawpaw shells to a large heated dish and top further with remaining cheese.

Pawpaw Bread is different and fun to make. Go pawpaw picking in the woods with your kids in the fall. You can show them how early American settlers gathered food and prepared it from scratch. Pawpaw Bread is good and not hard to make at all. Its a fun adventure that is almost free. And its great family fun.

1/3 c vegetable shortening
2/3 c sugar
2 large eggs
1 c pawpaw puree
1 3/4 c all purpose flour
2 tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
1/2 c raisins
1/2 c chopped macadamia or walnuts

Steps:

  • 1. Cream shortening, add sugar gradually, and beat until fluffy. Add eggs, one at a time, beating well after each addition. Beat in pawpaw puree. Sift together remaining dry ingredients and add in four portions, beating smooth each time. Stir in nuts and raisins.
  • 2. Pour batter into a greased, floured loaf pan (8x4x3-inches) and bake in a moderate oven (350 degrees) for about 50 minutes, or until a toothpick inserted into the loaf comes out clean. Cool on rack before slicing. Serve slices buttered or with cream cheese.
  • 3. NOTE: To make puree, peel ripe pawpaws and place chunks in blender or food processor and process until smooth.

2 tablespoons all-purpose flour or 2 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups pawpaw, peeled and seeded

Steps:

  • Place all ingredients into stew pan and stir together.
  • Cook over medium heat until thickened.
  • Pour into unbaked pie shell and bake until the crust is done.

A pawpaw is not a papaya, but a wild fruit that grows on trees in the mid-west. It is the Ohio State Native Fruit and sometimes called an Indiana banana. After finding pawpaws in our neighbors woods, I started the ultimate search for the perfect pawpaw recipe. We found pawpaw pie to be a bit bitter so we tried bread instead. This is an adaptation of a banana bread recipe. Enjoy.

1 cup sugar
2 eggs
1/2 cup butter (room temperature)
1 teaspoon vanilla
1/2 cup sour cream
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup pawpaw (ripe and mashed)
1/4 cup banana (ripe and mashed)
1/2 cup walnuts (chopped)

Steps:

  • Grease a large loaf pan and preheat oven to 350 degrees.
  • Cream butter,sugar,eggs and vanilla with electric mixer.
  • Add dry ingredients to creamed mixture.
  • Stir in pawpapw puree, mashed bananas and walnuts. Mix until just blended. Do not over mix.
  • Pour batter in greased loaf pan.
  • Bake at 350 degrees for 1 hour or until knife comes out clean.

3/4 cup pawpaw, pureed
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 cup butter
1/2 cup brown sugar
1 egg
1/2 cup black walnut

Steps:

  • Cream the shortening and sugar thoroughly. Add beaten egg and pawpaw.
  • Stir in the dry ingredients, which have been sifted together, and mix well.
  • Form into small balls and place on cookie sheet. Press into round flat shape with the bottom of a glass that has been lightly greased.
  • Bake at 350 degrees about 10-15 minutes.
