- Preheat oven to 375º Fahrenheit. Grease a pie pan using coconut oil spray.
- Place almond flour, sweetener, baking soda, and sea salt in a food processor. Pulse the processor once or twice to mix.
- Add the butter and vanilla extract to the food processor. Process until the mixture forms a dough.
- Press the dough into the prepared pan. Bake in the preheated oven for 8-10 minutes or until the crust starts to brown. Allow crust to cool completely before adding the filling. (After cooling on the counter for 5-10 minutes, I put it in the refridgerator, uncovered, while I make the pie filling.)
- Add 1/4 cup cold water to a small saucepan. Sprinkle the powdered gelatin over the water and allow to "bloom" for 5 minutes.
- While the gelatin is "blooming", place defrosted strawberries and lemon juice in a blender. Cover blender, then puree the berries. Leave berries in the blender and set aside.
- Once the gelatin has bloomed, add the sweetener to the saucepan. Heat the mixture gently while stirring frequently until gelatin and sweetener has dissolved. While blender is going at its slowest setting, stream the gelatin mixture into the strawberries through the small opening in the blender lid.
- Transfer strawberry mixture to a large mixing bowl. Refrigerate for a few minutes while whipping the cream.
- In a medium mixing bowl, whip the heavy whipping cream to form soft peaks.
- Spoon about 1/3rd of the whipped cream into the strawberry mixture and fold in to lighten.
- Fold in the remaining whipped cream.
- Transfer mixture to chilled pie crust. Cover the pie and refrigerate for at least 5 hours before enjoying.

- In a saucepan, mix dry pudding and gelatin water.
- Stir over medium heat until mixture comes to a boil.
- Remove from heat.
- Cool until slightly thickened.
- Arrange strawberries in pie shell (whole or sliced).
- Pour cooled mixture over berries.
- Refrigerate until set.
- Serve with whipped topping if desired.

The most lovely and fresh homemade strawberry pie for the summer! With a secretly no sugar added filling that's still super sweet and gooey, and a flaky "buttery" vegan pie crust, this healthier strawberry pie is the perfect summer treat!

- Add the flour, arrowroot powder, coconut sugar, baking soda, and sea salt to a food processor, and pulse the ingredients together. Then add in the cubed vegan butter to the food processor, and pulse the ingredients until the mixture resembles a sand texture. Place the lid back onto the food processor, and begin to blend again. Remove the top insert from the lid and carefully slowly pour in the water 1 tablespoon at a time until it forms a smooth dough ball. Allow the dough to blend until it forms a large dough ball.
- Stop the food processor and remove the dough. Divide the dough in half and place it onto two separate pieces of parchment paper. Form each dough ball into a flat disk. Wrap the dough in the and chill in the fridge for 30 minutes. While the dough is chilling, lightly grease a 9″ pie dish with olive oil and set aside.
- When the pie crust is ready to be rolled, remove one dough disk from the fridge and allow it to rest for 15 minutes. Sprinkle a piece of parchment paper with flour, as well as the dough disk and a rolling pin. Gently roll the dough to be about 1/4″ thick and 1″ wider than the pie dish edge. See this pie crust video help. Gently drape the pie dough over the pie dish and gently press the dough into the sides of the pie dish. Place the pie crust into the fridge to chill, and remove the second dough disk.
- while the second dough disk is resting on the counter and the pie dish is in the fridge chilling, make the strawberry pie filling. In a large bowl, combine the sliced strawberries, arrowroot starch, coconut oil or vegan butter, lemon juice, and zest together until completely mixed. Remove the pie dish from the fridge and gently pour the strawberry filling into the pie dish. Place the pie dish back into the fridge and prepare the second dough disk.
- Roll the second dough out like in step 3. Then use your favorite cookie cutter shapes to cut out designs in the pie crust. Remove the strawberry pie from the fridge, and then carefully flip the pie crust on top of the pie. Pinch and shape the edges of the crust as you'd like. You can also make a lattice crust if you'd prefer!
- Place the pie dish into fridge again and preheat the oven to 400F.
- Once the oven is preheated, make the vegan "egg" wash by mixing together the melted coconut oil and maple syrup. Use a pastry brush to brush the mixture over the top of the pie crust. Place the pie dish onto a baking sheet and gently cover with aluminum foil.
- Place the strawberry pie into the oven to bake for 25 minutes covered. Then remove the cover and reduce the heat to 350F. Bake the strawberry pie for an additional 25-30 minutes.
- The crust should look lightly golden, and the blueberries moist. Remove the strawberry pie from the oven and allow the strawberry pie to cool for 10 minutes at room temperature and then set completely in the fridge for 3 hours. Serve a la mode and enjoy!

- In a small saucepan mix water and cornstarch with a wire whisk.
- Bring to a boil, stirring constantly, for 1 minute.
- Remove from heat, cool slightly.
- Stir in gelatin and sweetener.
- Mix well, and gently stir in strawbrries.
- Pour into baked pie shell and refrigerate for about 2 hours.
- Top with Cool Whip OR Dream Whip right before serving.

- Mix the pudding and the jello with the cold water. Put into a small sauce pan.
- Stir and cook over medium-low heat until it thickens.
- Put into the freezer for a few minutes to cool.
- Arrange the strawberries in the pie crust and then pour the mixture over the berries. Refriderate at least one hour. Top each slice with whipped cream and enjoy!

- In medium size sauce pan add the following ingredients: Sugar replacement, water, both boxes of sugar free jello. Separately, in a measuring cup place the cornstarch and just enough cold water to dissolve. Add to saucepan. Whisk all ingredients frequently. Once boiling, allow to boil for three minutes. Remove from heat source. Place on top of ice bath (this facilitates the cooling process). When cool, add extracts (if you are using them), and whisk to combine. This mixture MUST be completely cooled prior to adding to the fresh cut strawberries. As pictured, I cut the strawberries in very large pieces. Feel free to slice, or cut up as you like. Add cooled mixture to strawberries. Gently toss to coat well. Pour mixture into pre-baked pie crust and place in fridge. Using the ice bath technique to chill the gel mixture expedites this recipe! It will set up in about an hour. Top with whipped topping if desired.
- Ice Bath- Use a bowl much larger than the saucepan containing the gel mixture. Fill half way with ice. When gel mixture is removed from the heat source, place hot pan on top of the ice and continue to whisk.
