STRAWBERRY PIE WITHOUT JELL-O®
This strawberry pie recipe was inspired by my grandpa's famous (at least famous among our family and friends) pie recipe. He made strawberry pies every summer and always put the filling in a graham cracker crust and topped it with Cool Whip®.

Steps:
- Slice 3/4 of the strawberries and place in a bowl.
- Puree remaining strawberries in a food processor until smooth and transfer to a saucepan over medium heat. Add sugar, water, cornstarch, and lemon juice and bring to a boil, stirring often, about 5 minutes. Stir continuously until as thick as jam, about 5 minutes more. Pour mixture over sliced strawberries in the bowl and stir to combine filling.
- Pour filling into pie shell and refrigerate until set, about 3 hours. Slice and serve with a dollop of whipped topping.

My husband's grandmother served us this pie many years ago and we loved it. It has become a family favorite. It can be made with sugar-free jello and pudding if you prefer. It's a nice, light summer treat.

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. , Mash 1 cup strawberries; set aside. In a saucepan, combine sugar and cornstarch; stir in water and mashed berries. Bring to a boil, stirring constantly. If desired, stir in food coloring. Cook and stir 3 minutes more. - Preheat oven to 350.
- Place the pie crust in pie pan, nestle in, crimp edge and prick bottom with fork a few times (as shown above).
- Bake pie crust for about 15 minutes or until edges are browned. Remove from oven and set aside to cool.
- Layer sliced berries into the cooled baked pie crust. Fill to top.
- Stir together water sugar and cornstarch in a sauce pan and bring to a boil. Simmer, stirring constantly, until thickened.
- Remove from heat, add Jell-O and stir until dissolved.

- Thaw the Marie Callender pie crust 10 minutes before baking and use a fork to poke holes on the crust.
- Preheat oven 400F and bake it for 12-15 minutes until is golden brown. Then, let it cool down.
- Wash and soak 2 pounds of fresh strawberries in a bowl for a few minutes.
- In the meanwhile, put a small pack (3 oz) strawberry jello powder, 1/2 cup of sugar (can use more or less depends on your sweetness), 2 tablespoons cornstarch and 1 cup of water into a pot mix them well. Then, turn on fire to small to medium. Keep stirring until it's bubbling.
