CRUSTLESS FRESH STRAWBERRY PIE

Crustless Fresh Strawberry Pie image

FAST, super EASY, no-mixer dessert that's perfect for summer entertaining, picnics, or potlucks!! Somewhere in between pie, cake, and blondies is what you get with this FABULOUS recipe! Take advantage of those FRESH strawberries!!

Provided by Averie Sunshine

Categories     Pies & Cheesecake

Time 1h10m

Number Of Ingredients 8

1 cup plus 2 tablespoons granulated sugar, divided
1 cup all-purpose flour
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract, or to taste
1/2 to 1 teaspoon almond extract, or to taste
2 cups plus 1/4 cup fresh strawberries, divided, halved or quartered depending on size of the berry*

Steps:

  • Preheat oven to 350F. Spray a 9-inch round pie dish very well with cooking spray; set aside. I used a glass pie dish; baking times may vary if using metal.
  • To a large bowl, add 1 cup sugar, flour, salt, and whisk to combine; set aside.
  • To a medium microwave-safe bowl, add the butter and heat on high power to melt, about 45 seconds. Wait momentarily before adding the eggs so you don't scramble them.
  • Ad the eggs, extracts, and whisk to combine.
  • Pour the wet mixture over the dry and stir to combine; don't overmix.
  • Add 2 cups strawberries and stir to combine; batter is very thick.
  • Turn mixture out into prepared pie dish, smoothing the top lightly with a spatula.
  • Evenly sprinkle 1/4 cup strawberries over the top, pressing them lightly into the batter.
  • Evenly sprinkle 2 tablespoons sugar over the top and bake for about 34 to 39 minutes, or until edges are set and a toothpick inserted in the center comes out clean or with a few moist crumbs but no batter. I prefer to underbake slightly (35 minutes) for a more gooey center but it's personal preference and since all ovens, climates, and berries vary, watch your pie and not the clock.
  • Allow pie to cool in pie dish on a wire rack before slicing and serving. Optionally serve with whipped topping or ice cream. Pie will keep airtight at room temp for up to 5 days.

STRAWBERRY CAKE

Strawberry cake image

Make the most of strawberry season with our strawberry cake, with light sponge, jam and soft cheese icing. It makes a fabulous centrepiece dessert

Provided by Cassie Best

Categories     Dessert, Treat

Time 1h10m

Number Of Ingredients 11

400g softened butter , plus more for the tin
400g caster sugar
5 large eggs
400g self-raising flour
100ml natural yogurt
300g strawberries , hulled and halved
2 tsp vanilla extract
100g butter , softened
250g soft cheese
600g icing sugar
400g strawberry jam

Steps:

  • Butter and line the bases of three 18cm cake tins. Heat the oven to 180C/160C fan/gas 4. Blend the butter and sugar in a food processor until smooth and creamy. Add the eggs, flour and yogurt and blend again. Add 200g strawberries (save the best ones to decorate) and the vanilla. Blend once more, until the mixture is well combined.
  • Divide the cake batter evenly between the three cake tins. Spread and smooth the tops with a spatula, then bake for 25-30 mins, until the cakes have risen and a skewer inserted into the centre comes out clean. Return to the oven for another 5 mins if any wet mixture clings to the skewer. Leave in the tins for 5 mins, then turn onto a wire rack and leave to cool completely. The cakes can be made up to two days before icing, or frozen for two months.
  • For the icing, blend the butter and half the sugar until smooth and creamy, add the soft cheese and the remaining sugar and blend again. Be careful not to over mix as the icing will become runny. (If you do overmix, don't worry - keep mixing with an electric whisk and it'll thicken back up).
  • Layer the cakes with the jam and half the icing. Invert the final cake on top, so the base of the cake it now the top, giving you a flat surface. Pile the rest of the icing on top of the cake, using a palette knife to spread the icing over the top and down the sides. Save a little icing to pipe rosettes around the edge of the cake, if you like. Top with the remaining strawberries. Can be made up to a day ahead of serving, keep somewhere cool or in the fridge. Will keep for three days.

CLASSIC STRAWBERRY PIE

Classic Strawberry Pie image

This Classic Strawberry Pie is the perfect summer dessert recipe made with an all-butter crust and fresh strawberries. It's a simple pie recipe that's easy enough for anyone to make - even beginners!

Provided by Chrissie (thebusybaker.ca)

Categories     Dessert

Time 1h50m

Number Of Ingredients 14

3 cups all purpose flour
2 tablespoons granulated sugar
1 teaspoon salt
1 cup cold unsalted butter, cut into small chunks
1/2 teaspoon lemon juice
6-7 tablespoons ice cold water
5 cups sliced fresh strawberries
4 tablespoons cornstarch
3/4 cups granulated sugar
1 pinch salt
a splash of lemon juice
1 egg
1 tablespoon water
1-2 tablespoons coarse sugar

Steps:

  • Add the flour, sugar and salt to the bowl of your food processor (or a large bowl if your making the dough by hand).
  • Turn the food processor on low speed and add the chunks of cold butter one at a time while the food processor runs until all the butter is added and the mixture resembles coarse crumbs. If making by hand, use a pastry blender or your hands to work the butter into the dough until the mixture is crumbly. Try not to handle the butter too much (the heat from your hands will soften it) - use quick movements and don't worry if some larger chunks of butter still remain.
  • Add the lemon juice and the water slowly as the food processor runs on low, just until the dough comes together and pulls away from the sides of the bowl. Depending on the weather and even on the brand of flour, I use anywhere between 5 and 8 tablespoons of water. If making by hand, use your hands to form the dough gently and quickly using just enough water for the dough to come together.
  • Dump the rough dough onto the counter and divide the dough into two disc shapes and wrap each one separately in plastic wrap, placing it in the fridge to chill for 45 minutes or overnight.
  • Add the sliced strawberries to a bowl, along with the cornstarch, sugar, salt and lemon juice. Toss just until combined.
  • Set the filling aside while you prepare the crust for baking.
  • Preheat your oven to 400 degrees Fahrenheit. If your oven runs hot, set it to 375 degrees Fahrenheit. (Use an oven thermometer to ensure the correct temperature)
  • Remove the chilled pie dough from the fridge and let it sit for about 10 minutes before rolling. Roll out one of the balls of dough into a large circle using a rolling pin. Add a generous amount of flour to the rolling surface and to the rolling pin, to prevent sticking and cracking.
  • Peel the rolled out dough off the counter surface gently by rolling it backwards onto the rolling pin.
  • Transfer it to a 9-inch pie plate and gently press the dough into the bottom of the pie plate and over the edges (try for a 1-2 inch overhang if possible).
  • Add the strawberry filling to the pie crust and smooth out the top.
  • Repeat the rolling out process with the second ball of dough, this time slicing it into about 10 long, thin slices using a pizza cutter (or a pastry cutter, if you have one).
  • Create a lattice pattern using the strips of dough, overlapping every second vertical strip with every second horizontal strip.
  • Trim any dough that hangs over the edge of the pie to 1-2 inches past the edge (try to keep the overhang amount even all the way around). Tuck any overhanging dough under and into the pie plate to create a clean edge.
  • If your pie plate has a wide edge, seal the edge of the pie by creating a fluted pattern - press into the edge of the pie from the outside with your left thumb and index finger while pressing into the edge of the pie from the inside with your right index finger. Do this all the way around the edge of the pie to create a fluted pattern (and see my tutorial HERE for how to create a beautiful fluted edge to your pies!)
  • Beat the egg and 1 tablespoon of water and brush it lightly onto the unbaked crust. Use a light hand while brushing - too much egg wash creates an eggy texture after baking.
  • Dust the crust with the coarse sugar and bake at 400 degrees Fahrenheit for about 10 minutes, and then reduce the heat to 375 (350 if your oven runs hot) and bake for an additional 35-45 minutes or until the crust is evenly browned and the filling is bubbly.
  • Let cool to room temperature before slicing and serving with a scoop of vanilla ice cream.

STRAWBERRY PIE CAKE

Strawberry Pie Cake image

Provided by Food Network Kitchen

Time 1h

Yield 8 to 10 servings

Number Of Ingredients 9

Cooking spray, for the pan
1 18.25-ounce box vanilla cake mix, plus required ingredients
3 cups quartered fresh strawberries (about 1 pound)
1/4 cup granulated sugar
Pinch of salt
2 12-inch rolls refrigerated pie dough
All-purpose flour, for dusting
Coarse sugar, for sprinkling
Vanilla ice cream or whipped cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Spray a pie plate with cooking spray. Make the batter; pour into the pie plate until three-quarters full. Bake until set around the edges but slightly wobbly in the center, 20 to 25 minutes.
  • Meanwhile, make the strawberry filling: Toss the strawberries, granulated sugar and salt in a bowl. Let sit 20 minutes.
  • Unroll 1 piece of pie dough on a lightly floured cutting board. Cut into 1- to 1 1/4-inch-wide strips with a knife. Set aside.
  • Unroll the remaining piece of pie dough. Cut three 1-inch-wide strips from the middle of the round and press the strips together, end to end, to form one long strip. (This will be used for the piecrust rim.)
  • Transfer the partially baked cake to a rack; cool slightly. Drain the strawberry mixture and spoon it onto the cake, pressing the berries into the top to hold them in place. Increase the oven temperature to 450 degrees F.
  • Arrange half of the pie dough strips in parallel rows over the strawberries, about 1 inch apart, using the shorter strips on the ends.
  • Fold back every other strip halfway. Lay one of the remaining strips across the center of the pie, perpendicular to the others. Unfold the strips over the perpendicular one. Repeat, alternating the strips you fold back, to create a lattice top. Trim the overhang.
  • Drape the long pie dough strip around the edge of the plate, on top of the lattice ends. Trim as needed and press the ends together. Tuck the edge of the dough under itself, then crimp decoratively with your fingers.
  • Sprinkle the lattice crust with coarse sugar and return the cake to the oven. Bake until the crust is golden, 10 to 15 more minutes. (Cover the pie rim with aluminum foil if it browns too quickly.) Serve with vanilla ice cream or whipped cream.

  • In the bowl of a stand mixer fitted with the paddle, combine the flour, sugar and salt and mix at low speed. Add the butter and mix at medium speed until almost incorporated, with some pecan-size pieces remaining, about 1 minute. In a small bowl, whisk the egg yolks with the milk. With the machine on, drizzle the egg mixture into the flour mixture and mix until the pastry just starts to come together, about 30 seconds; it will be crumbly. Scrape the pastry onto a lightly floured work surface and gather it together. Using the heel of your hand, smear the pastry against the work surface to work in the butter. Form the pastry into a 1-inch-thick disk, cover in plastic wrap and refrigerate until firm, at least 1 hour.
  • In a medium bowl, toss the strawberries with the granulated sugar, cornstarch, orange zest and salt. Spread the filling in the pastry crust. Cover with the chilled piece of pastry crust, gently pressing it down around the edges. Brush the top with the beaten egg and sprinkle with the sanding sugar. Using a sharp paring knife, make six 2-inch-long slits in the top pastry. Bake for about 50 minutes, until the crust is deep golden. Transfer the pan to a rack to cool, at least 3 hours. Carefully lift the pie out of the pan and transfer to a platter before serving.
