Number Of Ingredients 10

3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/2 tablespoons ground cinnamon
1 1/4 cups milk
2 extra-large eggs, lightly beaten
1/2 pound (2 sticks) unsalted butter, melted
2 cups diced fresh strawberries
1 1/2 cups sugar

Steps:

  • Preheat the oven to 375 degrees. Line muffin tins with paper liners.
  • Sift the flour, baking powder, baking soda, salt, and cinnamon together in a large bowl. Stir with your hand to be sure the ingredients are combined. In a 2-cup glass measure, combine the milk, eggs, and melted butter. Make a well in the middle of the dry mixture, pour the wet mixture into the well, and stir until just combined. There will be some lumps but don't overmix the batter! Add the strawberries and sugar and stir gently to combine.
  • Using a 2 1/4-inch ice cream scoop, spoon the batter into the muffin cups to fill the liners. Bake for 20 to 25 minutes, until a cake tester comes out clean and the tops are nicely browned.

Eat n' Park is a popular local restaurant chain in my hometown of Pittsburgh, PA. They are rightfully famous for their salad bar and scrumptious baked goods. These strawberry creme muffins are (almost!) like the ones served at their breakfast buffet. This recipe originally appeared in the Kitchen Mailbox column of the Pittsburgh Post-Gazette, June 21, 2007.

Number Of Ingredients 10

1/4 lb unsalted butter
1 1/4 cups sugar, plus more
sugar, for sprinkling
2 eggs
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup heavy cream
1 teaspoon vanilla
18 -20 strawberries, chopped

Steps:

  • Preheat oven to 375 degrees.
  • Cream butter and 1 1/4 cup sugar until fluffy.
  • Add eggs one at a time. Do not overmix.
  • In a separate bowl, sift together flour, baking powder, and salt. Add the flour mixture and cream alternately to the butter mixture. End with the flour mixture.
  • Stir in vanilla and then fold in strawberries.
  • Fill greased muffin tins (2 3/4 inches wide by 1 1/8 inches deep) 3/4 full.
  • Sprinkle with granulated sugar.
  • Bake for 30 minutes, or until tester dipped in center comes out clean.
  • Cool and serve!

2 cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 1/2 teaspoons vanilla extract
2 large eggs
6 tablespoons butter (melted)
2/3 cup half-and-half (or light cream)
1 1/2 cups fresh strawberries (cleaned, hulled, chopped)
For the Topping:
1/3 cup all-purpose flour
3 tablespoons brown sugar (packed)
3 tablespoons butter (softened)
Pinch of salt
1/2 teaspoon ground cinnamon

Steps:

  • Gather the ingredients.
  • Spray muffin pan with baking spray or nonstick cooking spray. Preheat the oven to 375 F.
  • In a mixing bowl , combine the flour, 1 cup granulated sugar, baking powder, and salt; blend well.
  • In a small bowl, whisk together the vanilla, eggs, and cream or half-and-half.
  • Add to the dry ingredients along with the melted butter and stir just until combined.
  • Fold in the strawberries. Fill muffin cups about 2/3 full.
  • Combine the topping ingredients, using a fork, pastry blender, or fingers, working until the mixture is crumbly.
  • Sprinkle the top of each muffin with a generous amount of crumb topping.
  • Bake the muffins for about 20 to 25 minutes, until set and a toothpick inserted in the center of a muffin comes out clean.
  • Serve and enjoy!

2 lbs orange roughy
2 tablespoons butter
1 large onion, sliced
1/2 cup orange juice
1 tablespoon lemon juice
1 teaspoon garlic salt
1 1/2 teaspoons lemon pepper seasoning
1 tablespoon parsley flakes

Steps:

  • Preheat oven to 450 degrees.
  • Place fish in a 13 x 9 inch baking dish.
  • In a separate pan, cook onion in butter until tender.
  • Spread onion mixture on fish.
  • Pour orange and lemon juice over all.
  • Season with garlic salt, lemon pepper, and parsley.
  • Bake, uncovered, for 15 to 20 minutes or until fish flakes easily with a fork.
  • If the fish is crowded in the baking dish, you might want to cover it for a few minutes at the beginning of the baking.

This really good and easy cake recipe from Favorite Hometown Recipes from Temple Beth El Sisterhood, Bradford, PA 1983, I will post it as written by Betty Schecter, but I use vanilla pudding mix, not lemon.

18 1/2 ounces yellow cake mix, I usually use Duncan Hines
3 ounces instant lemon pudding mix
4 eggs
1/2 pint sour cream
1 tablespoon vegetable oil
1/2 cup chopped walnuts
1/2 cup raisins

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour either a 10 inch tube pan or bundt pan.
  • I use Bakers Joy spray,.
  • In a large bowl combine cake mix, pudding mix, eggs, sour cream and vegetable oil.
  • Blend well, then mix for 3 minutes at medium speed.
  • Stir in raisins and walnuts.
  • Pour into prepared pan.
  • Bake for 1 hour.
  • Cool in pan for 15 minutes.
  • Remove from pan and continue cooling on cake rack.
  • Sprinkle with powdered sugar.

1 lb kielbasa, cut up into bite-size pieces (pre-boil and cool if you find it too salty straight from the package)
4 cups potatoes, diced
1 -2 carrot, sliced (optional)
1 large onion, diced
1/2 head cabbage, coarsely shredded with a knife. Using a Kraut cutter is OK, but the regular grater cuts too finely

Steps:

  • Lightly grease big, iron skillet (I like to use my chicken fryer), with canola oil.
  • Brown the Kielbasa. Take it out and put it aside. Drain excess grease.
  • Fry potatoes and carrots, stirring often, until half-cooked.
  • Add onion and keep frying, stirring frequently.
  • When the onion is half-cooked, add the cabbage and continue until everything is completely cooked.
  • Return Kielbasa to the pan, mix well, and serve once it is reheated.
  • This dish travels well and reheats well.
