STEAMED SHRIMP DUMPLINGS

Steamed Shrimp Dumplings image

Provided by Food Network Kitchen

Time 1h40m

Yield 36 servings

Number Of Ingredients 11

1 large egg white
3/4 pound large shrimp, peeled, deveined and finely chopped
1/3 cup finely chopped peeled jicama or water chestnuts
2 scallions, finely chopped
1 1/2 tablespoons cornstarch
1 1/2 teaspoons Chinese rice wine or dry sherry
3/4 teaspoon toasted sesame oil
Kosher salt
1/2 teaspoon sugar
Pinch of ground white pepper
36 round dumpling wrappers, thawed if frozen

Steps:

  • Lightly beat the egg white in a large bowl. Add the shrimp, jicama, scallions, cornstarch, rice wine, sesame oil, 3/4 teaspoon salt, the sugar and pepper. Stir well until the mixture starts to thicken, about 1 minute; cover and refrigerate until very cold, about 1 hour.
  • Set 1 dumpling wrapper on a clean surface (keep the rest covered with a damp paper towel so they don't dry out). Stir the shrimp mixture, then scoop 1 heaping teaspoonful onto the center of the wrapper. Dab a finger in a cup of cold water and moisten the edges of the wrapper. Fold in half and press the edges together to seal; transfer to a baking sheet. Cover with a damp paper towel while you form the remaining dumplings.
  • Fill a large nonstick skillet with 1/4 inch of water and bring to a boil. Working in batches, add the dumplings and arrange in a single layer, cover and let steam until cooked through, about 5 minutes. (If the water evaporates before the dumplings are fully cooked, add 2 more tablespoons to the skillet.) Carefully transfer the dumplings to a serving plate.
  • Ponzu Dipping Sauce
  • Combine 3 tablespoons ponzu sauce, 1 teaspoon soy sauce, 1/2 teaspoon sesame oil and 1 chopped scallion in a small bowl.

STEAMED SHRIMP OR SHRIMP COCKTAIL

Steamed Shrimp or Shrimp Cocktail image

A beginner's recipe! If you are just starting to cook and seafood befuddles you, here is a great place to start! You can eat these hot or, you can shock them in ice water and eat them with sauce (see my shrimp sauce recipe) as tasty shrimp cocktail. It is a very basic recipe.

Provided by Bone Man

Categories     Very Low Carbs

Time 20m

Yield 4 serving(s)

Number Of Ingredients 6

1 lb large raw shrimp, deveined
1/2 cup white vinegar
1/2 cup water
1 tablespoon Old Bay Seasoning
1 teaspoon salt
1 lemon, cut in half

Steps:

  • Pour all ingredients (except shrimp) into a large saucepan. Make sure to first squeeze the juice from the lemons into the mix and then throw the rinds right in there too.
  • Bring the liquid to a rolling boil over high heat. Dump in the shrimp and cover the pan with a tight lid.
  • After the shrimp have again begun to boil, allow them to go for two minutes, then, stir the shrimp briefly and replace the lid. Boil for three more minutes (shrimp should boil for five minutes, all total).
  • Drain and place the shrimp into a large bowl of ice water if you want shrimp cocktail (or just serve them hot).
  • If serving as shrimp cocktail, you can go ahead and peel the shrimp after they're cold, or, you can let your guests do it themselves at the table.
  • Note: If you overcook shrimp, you will make them rubbery.

MARYLAND STEAMED SHRIMP

Maryland Steamed Shrimp image

Steamed shrimp are just not the same in Tampa restaurants. The area has plenty of large golf shrimp to offer, only when you order them at a restaurant they're very lacking in flavor (I think their mostly boiled). I wanted to show my boyfriend the way they should be prepared, and by that I mean the "Maryland" way! I found this recipe online and used it as a guide. It makes the most delicious full flavored steamed shrimp. I wanted to post it for others to enjoy in it's exact copy, however, it is a huge amount. I've never made the full ten pounds but you can adjust it down. I usually buy about 2 lbs of large to jumbo shrimp, I never have kosher salt so I just use a dash of regular, 1 / 2 a lemon, one beer, a 1 / 8 cup of the vinegar and lots of old bay. Two tips I have are, you can never have enough old bay and slivers of onions tossed in with the shrimp will add extra flavor. Once I've really perfected my own recipe I'll post it using more reasonable portions.

Provided by Chef Tara Z

Categories     < 30 Mins

Time 20m

Yield 300 shrimp, 8-10 serving(s)

Number Of Ingredients 6

10 lbs fresh shrimp
1 lemon
1 cup Old Bay Seasoning
6 (12 ounce) cans beer (or bottled really doesn't matter)
1/2 cup white vinegar
1 tablespoon kosher salt

Steps:

  • In a large pot pour in the beer, vinegar, salt, and lemon (sliced in half) and bring to a rapid boil.
  • Place a steamer rack in the bottom of the pot and cover with a layer of shrimp.
  • Sprinkle the Old Bay Seasoning over the layer and repeat until all of the shrimp are in the pot.
  • Cover tightly and let steam for 10 minutes until all of the shrimp have turned a bright red.
  • Remove the shrimp and allow to cool slightly.
