STRAWBERRY FLAN
Learn how to make a fruity strawberry flan recipe. Best served with fresh strawberries, whipped cream or vanilla ice cream.

- Preheat the oven to 180°C / 350°F / gas mark 4.
- Grease a 30cm (12in) sponge flan baking pan with butter, then dust with flour & set aside.
- Place eggs, sugar and butter into a large bowl and mix together with a blender until fluffy, which should take about 3 minutes.
- Sieve the flour and baking powder into the egg mixture, then whisk.
- Pour the contents into the prepared baking pan and spread evenly.
- Place the pan in the preheated oven and bake for 12 - 15 minutes until golden brown. Remove the sponge flan from the oven, and carefully tip it out onto a cooling rack to allow it to cool completely.
- Place the milk and vanilla pod in a pan and heat through. Remove from the heat.
- In a separate bowl, beat the egg yolks and sugar.
- Add the flour and a bit of the warm milk and stir.
- Add this mixture to the rest of the warm vanilla milk which is still in the saucepan.
- Whisk over a medium heat until smooth and thickened, which should take about 4 minutes. Remove from the heat and cool completely.
- When the pastry case and custard have cooled down completely, fill the pastry case up to the brim with custard.
- Arrange the strawberries on top and drizzle with melted white chocolate and sprinkle with almonds.
- Serve immediately with whipped cream or ice cream, plus extra strawberries. Enjoy!

FRESH STRAWBERRY TART
This free-form strawberry tart in a buttercrust pastry is thickly glazed and beautiful. You can use a tart pan, but going free-form is kind of fun. Be sure to use perfectly ripe, sweet strawberries.

- Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
- Place pastry dough on a lightly floured work surface. Roll out dough to a round disk about 1/8-inch thick and 12 inches in diameter. Transfer to prepared baking sheet.
- Brush outside 2 inches around the edges of circle lightly with water. Tightly curl up a bit of the edge of the dough to give it a rounder shape with a slightly thickened edge. If some edges are thicker than others, pinch off excess and add to thinner edges forming a circle with even edges. Roll each edge again just once to make the edges thick enough to crimp. Crimp crust with your floured fingers.
- Use a fork to "dock" the bottom surface, covering it with tiny holes to prevent the dough from bubbling up as it bakes.
- Bake in preheated oven until golden brown, 20 to 25 minutes. Let cool about 10 minutes. Do not turn off the oven.
- Place cream cheese, creme fraiche, egg yolk, sugar, salt, vanilla, and lemon zest in mixing bowl. Mix together thoroughly. Carefully pour a thin layer of mixture evenly into pastry shell (you may not need all the cheese mixture).
- Transfer filled tart to oven. Bake until cheese layer is set and crust is browned, about 20 minutes. Let tart cool completely to room temperature before adding berries.
- Arrange berries cut side down, pointy end out starting with the larger berries around the edges. You can lean strawberries up a bit as your work your way toward the center. Cut some berry halves in half again to fit into any gaps on the cheese layer.
- Place apricot jam and 2 teaspoons water in saucepan. Heat over low heat until thin enough to brush. Let cool slightly before brushing generously over all berries and crust. Transfer tart to serving plate.

STRAWBERRY FRUIT FLAN
This is a typical German Strawberry Flan. When the strawberry season arrives these cakes can be found in every café and every home. You can use any combination of fruits on the cake. Peaches and kiwi; raspberries, apricots - etc. To glaze I use the packaged glaze which can usually be found in the produce (!) section of the supermarket.

- Cake:.
- Separate yolks from egg whites. Beat the yolks, water, sugar and vanilla sugar until foamy. Add the flour and baking powder to this mixture.
- Beat the egg whites until stiff and carefully fold them into the above mixture.
- Pour into greased flan form and bake at 350° for ca. 25 minutes. Remove from pan and let cool.
- Cake tends to stick to pan, if this happens do the following: turn cake onto cooling rake, if it does not come out easily, run a tea towel under cold water, wring and place over bottom of flan form. The cake should then drop out easily.
- Syrup:.
- Mix together all ingredients and stir until the sugar has dissolved. Pour over cool cake. Top with sliced fruit and glaze.
- You do not need to use the syrup, if you do, use it carefully as you do not want to drown the cake in it. It is only meant to give it a bit of a kick.
- Serve with whipped cream and enjoy!
STRAWBERRY TARTS
Steps:
- Combine the flour, sugar, and salt in a small bowl and place in the freezer for 30 minutes. Put the flour mixture in the bowl of a food processor fitted with a steel blade. Add the butter and shortening and pulse about 10 times, or until the butter is in the size of peas. Add the ice water and process until the dough comes together. Dump on a well-floured board and form into a disk. Wrap in plastic and chill for at least 30 minutes.
- Meanwhile, preheat the oven to 375 degrees F.
- Roll out the dough and fit into 4 (4 1/2-inch) tart pans with removable sides. Don't stretch the dough when placing it in the pans or it will shrink during baking. Cut off the excess by rolling the pin across the top of each pan. Line the tart shells with a piece of buttered aluminum foil, butter side down, and fill them with dried beans or rice. Bake for 10 minutes. Remove the beans and foil, prick the bottom of the shells all over with a fork, and bake for another 15 to 20 minutes until lightly browned. Set aside to cool.
- Before serving, fill the tart shells with the pastry cream. Arrange the berries decoratively on top of the cream. Melt the apricot jelly with 1 teaspoon of water and brush the top of the tarts. Sprinkle with pistachios, if using, and serve.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the egg yolks and sugar on medium-high speed for 4 minutes, or until very thick. Reduce to low speed, and add the cornstarch.
- With the mixer still on low, slowly pour the hot milk into the egg mixture. Pour the mixture into a medium saucepan and cook over low heat, stirring constantly with a wooden spoon, until the mixture thickens, 5 to 7 minutes. Don't be alarmed when the custard comes to a boil and appears to curdle; switch to a whisk and beat vigorously. Cook, whisking constantly, for another 2 minutes; the custard will come together and become very thick, like pudding. Stir in the vanilla, Cognac, butter, and heavy cream. Pour the custard through a sieve into a bowl. Place plastic wrap directly on the custard and refrigerate until cold.
STRAWBERRY FLAN - FLAN DE FRESAS
This rich dessert is a variation of the traditional Spanish dessert called "Flan." Instead of vanilla, this flan is flavored with fresh strawberries.

- Heat the oven to 350 degrees F.
- Put a heavy skillet or saucepan over medium heat for 30 seconds. Add 1/2 cup granulated sugar.
- With the back of a wooden spoon, keep sugar moving constantly in skillet until sugar is completely melted, and of a rich medium brown color (caramelized).
- Pour caramelized sugar into each of six ramekins. Set aside.
- Wash and hull the strawberries. Place the strawberries, sugar, eggs and condensed milk in to a food processor or blender and blend until strawberries are minced and all ingredients are mixed thoroughly. Ladle the strawberry mixture into each ramekin. Cover each ramekin with aluminum foil.
- Place each ramekin into a large open, oven-proof pan, such as a broiler pan. Add very hot water to the pan. The ramekins should be submerged approximately 3/4 in the water. In Spanish, a "water bath" is called a "bano Maria.".
- Carefully place the pan on to the middle shelf of the oven and bake for 30 minutes. After 30 minutes, carefully remove each ramekin from the water, uncover and to allow to cool.
- Once cool, place in refrigerator to chill. When you are ready to serve, run a paring knife around the outside of each ramekin to loosen the flan. Then, place the serving plate on top of each one and flip it over. It may be necessary to tap the ramekin to force the flan to fall out onto the plate. Garnish with fresh strawberries and mint and a few slices of strawberry.
STRAWBERRY FLAN
Off Womens' Weekly. Made this a few times and it never fails to impress! Feel free to try this with any other fruit eg. mango, raspberry etc. I usually replace the arrowroot with cornstarch and it still comes through perfectly. The idea is to use any powdery white starch to thicken puddings or sauce. If you are running out of time, use instant custard. Have fun!

- Grease a 4x10cm flan tin.Cut pastry sheets in half and line tins. Trim edges. Cover, and refrigerate for 30 minutes.
- Cover pastry with baking paper. Fill with rice. Cook in 190°C oven for 10 minutes Remove rice and paper. Cook for another 10 minute Cool.
- To make the filling, beat egg with 1/4 cup milk. Add yolks, plain flour, cornflour and sugar. Beat till thick. Boil remaining milk in pan. Slowly beat hot milk into egg mixture till smooth. Return mixture to pan. Whisk over fire until boiling and thick. Remove. Stir in vanilla essence. Leave to cool.
- Stir juice and arrowroot over fire until mixture boils and thickened.
- Pour filling into pastry cases. Add strawberries. Brush with orange glaze.

- Cream butter and 3/4-1 cups sugar together til light and fluffy.
- Beat in eggs.
- Combine flour and baking powder.

MOM'S FRUIT FLAN (GERMAN ERDBEER/OBST BODEN TORTE)
The dough is a little like a sugar cookie dough and doesn't get soggy with the fruit. Fill with fresh strawberries or your favorite fruit (my personal favorite is an assortment of sliced peaches, cherries, kiwis, and fresh strawberries arranged over a thin layer of custard topped with a clear jelly glaze, served with a dollop of whipped cream). Mom's favorite was simply fresh sliced strawberries with strawberry glaze, and whipped cream on the side. Delicious!! A great seasonal dessert. You will need a 10 or 11 inch boden torte pan for this recipe. The boden recipe is adapted from "Mennonite Girls Can Cook", the filling is all mine.

- To Make Base (Boden):.
- Thoroughly grease a 10 to 11 inch (25 to 28 cm) boden tin. Preheat oven to 350 degrees F.
- In a large bowl beat together butter and sugar til white and creamy; add egg and beat til mixed in thoroughly.
- Sift together flour and baking powder and fold into the butter mixture, adding milk til it holds together in a ball.
- Press dough into a well greased boden torte pan (wet your hands with a little water to keep the dough from sticking to your hands).
- Bake at 350 for 15-20 minutes or until lightly golden.
- Remove from oven. Cool in pan on a rack for 15 minutes, then invert on a cake plate or other large plate.
- Filling:.
- If desired, spread a thin layer of custard (or vanilla pudding or pastry cream) evenly over the cooled boden.
- Fill with a variety of fruit and whipped cream. Use any variety you like or simply canned peach slices or fresh strawberries.
- Glaze:.
- For a simple glaze, melt a little apple jelly or strawberry jam and pour over the fruit.
- -Or- take 1/2 cup of the fruit syrup. Cook it over high heat with 1 Tablespoon of cornstarch dissolved in a little cold water, cook it until it is clear, and the raw cornstarch flavor disappears (approximately 2 minutes). Drizzle evenly over the fruit.
- Chill until ready to serve. This cake is best served within 24 hours.
- Serve with a dollop of fresh whipped cream and you have a lovely little dessert. Quick and easy.
