- Preheat your waffle iron until it's scorching hot. Mix the dry ingredients in a large bowl. Then whisk in all the wet ingredients until smooth.
- Scoop the batter onto the waffle iron. Fill until close to the edges, but not all the way to the edges. Close and cook for 2-5 minutes, then repeat. *Try adding chopped almonds or pecans to the batter.

- In a large bowl, combine the flours, flax, baking powder and salt. Combine the egg yolks, milk, oil and applesauce; stir into dry ingredients until just moistened., In a small bowl, beat egg whites until stiff peaks form; fold into batter., Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with berries and confectioners' sugar if desired., To freeze, arrange waffles in a single layer on sheet pans. Freeze overnight or until frozen. Transfer to a resealable plastic freezer bag. Waffles may be frozen for up to 2 months., To use frozen waffles: Reheat waffles in a toaster. Serve with berries and confectioners' sugar if desired.

- Preheat waffle iron. Preheat oven to 225 degrees.
- In a microwave safe bowl, combine maple syrup and cream cheese. Microwave on high, in 20 second bursts, whisking at each interval, until cream cheese is melted and mixture is smooth. Set aside.
- In a medium bowl, mix to combine bisquick, granulated sugar, and cocoa powder.
- Add milk, egg, oil, and vanilla. Mix until a smooth batter forms.
- Add enough red food coloring, drop by drop, to yield a deep red color.
- Spray waffle iron with nonstick cooking spray. Pour ⅔ cup batter onto waffle iron and let cook until golden on the edges and cooked through.
- Remove to a cooling rack fit in a sheet pan and transfer to oven to keep warm, if desired. Repeat with remaining batter.
- Rewarm maple cream cheese syrup if necessary and drizzle atop red velvet waffles. Serve with whipped cream on the side.
GINGERBREAD SPELT WAFFLES
This is a recipe that was invented as a result of my husband making waffles out of a cookie mix and now it is our favorite waffle recipe! Whole Wheat Flour can be substituted for the spelt flour and brown sugar for the fructose if desired.
