- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Combine turkey, bread crumbs, spinach, Greek dressing, feta cheese, onion, egg, salt, and black pepper together in a bowl; form into patties.
- Cook turkey burgers on preheated grill until no longer pink in the center and the juices run clear, 5 to 10 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- To make the Tzatziki:.
- In a medium bowl, stir to combine all ingredients. Add 1-2 tablespoons water to thin sauce if needed.
- For the burgers:.
- Equipment: Nonstick skillet and mixing bowls.
- In a large bowl, mix to combine ground turkey, olives, parsley, dried oregano, garlic, 1/2 cup crumbled feta cheese, salt and pepper. Divide into 4 portions and shape into burger patties.
- Warm olive oil in a large nonstick skillet over medium heat, then fry turkey patties until cooked through, about 4 minutes per side.
- To assemble turkey burgers, layer lettuce, tomato slices, onion slices onto open pita and top with burger. Garnish with remaining crumbled feta cheese and a dollop of tzatziki.

- Preheat the oven to 250 degrees F.
- Place the turkey, egg yolk, oregano, salt and pepper in a large bowl. Grate half the red onion and add it to the bowl. Mix with your hands, then form into four 1/2-inch-thick patties. Place on a sheet pan or plate lined with parchment paper.
- Put the pitas on a baking sheet and place in the oven to warm.
- Heat the olive oil in a large cast-iron or other nonstick skillet over medium-high heat. When the oil is hot, add the patties and cook until they are brown on the outside and no longer pink in the center, approximately 5 minutes on each side.
- Remove the pitas from the oven and cut the tops off. Slice the remaining 1/2 red onion. Spread some tzatziki inside each pita. Fill each with lettuce, a patty, some chopped cucumber, red onion and feta, then serve with chips on the side.

- Prepare charcoal grill for direct heat cooking.
- Remove cooking rack from grill and spray with non-stick cooking spray.
- In medium bowl combine turkey, olives, parsley, garlic, cinnamon, nutmeg, salt and pepper.
- Evenly distribute mixture into four burgers (approximately 4 1/2 inches in diameter). Grill burgers 2 to 3 minutes per side until meat thermometer registers 160 to 165 degrees F.

- Combine the mayonnaise and 2 tablespoons pepperoncini brine in a small bowl. Toss the tomatoes with the chopped pepperoncini, the remaining 1 tablespoon brine, 2 tablespoons olive oil, half of the scallions and half of the mint in a medium bowl. Season with 1/4 teaspoon salt and a few grinds of pepper. Refrigerate the mayonnaise and the tomato salad while you make the burgers.
- Combine the turkey, grated zucchini, feta, oregano, the remaining scallions and mint, 1/2 teaspoon salt and a few grinds of pepper in a large bowl and mix well with your hands. Form into 4 oblong patties, about 4 inches wide and 1/2 inch thick.
- Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add the patties and cook until browned and cooked through, 4 to 5 minutes per side. Cut off a piece of each pita to open. Serve the burgers and zucchini sticks in the pitas and drizzle with the mayonnaise sauce. Serve with the tomato salad.

- Heat 2 teaspoons of oil in a nonstick skillet over medium-high heat. Add the onion and cook until soft and translucent, about 3 minutes. Add the spinach and cook until wilted, about 1 minute. Remove the pan from the heat. Add the feta cheese, dill and 1/4 teaspoon black pepper and stir to combine.

- Divide meat into four portions and form into half-moon-shapedpatties to fit on half a pita bread.
- Use a fork to mash the garlic with butter in small bowl; set aside.
- Heat olive oil in skillet over medium-high heat.
- Add mushrooms, onion, salt and pepper; cook until tender, about 5 minutes.
- Keep warm.
- Prepare a charcoal or gas grill for cooking.
- Spray grill rack withnon-stick cooking spray.
- Cook patties to desired doneness.

- In a large mixing bowl, use your hands to combine well the turkey meat with the spinach, olives, lemon zest, onion, mint or parsley, garlic, oregano, salt, and pepper. But don't overmix or the meat with become tough. Divide the mixture into 6 equal portions and shape them into burgers.
- Warm about a tablespoon of olive oil or ghee in a large skillet set over medium-high heat. Working in batches, add the burger patties and fry them on one side for about 5 minutes, then flip them, frying on the second side for another 4 to 5 minutes, or until they're golden brown.
