2 large cucumbers
10 medium strawberries, washed, dried, sliced
1 teaspoon light soy sauce
2 tablespoons light brown sugar
2 tablespoons apple cider vinegar
1/2 teaspoon salt
1/2 teaspoon sesame seed oil

Steps:

  • Peel cukes. Slice in half lengthwise. If seeded, remove with teaspoon. Cut cukes across into 1/4 inch slices. Place in colander. Sprinkle with salt and toss. Allow to drain about 20 minutes. Rinse with cold water to remove salt. Spread out on paper towels and pat dry.
  • Place berries and cukes in bowl and chill.
  • Whisk brown sugar, soy, and vinegar together until smooth. Set aside.
  • When ready to serve salad, pour sesame oil and dressing over and toss.

Creamy, Lemony, Pepper-Parmesan Dressing on Romaine Lettuce Salad image

3 heaping tablespoons mayonnaise
1 lemon, zested and juiced
1 teaspoon coarse pepper, eyeball the amount in the palm of your hand: 1 teaspoon is equal to about 1/3 of a palm full
3 tablespoons extra-virgin olive oil
1/2 cup grated Parmigiano-Reggiano
Pinch salt
3 hearts romaine lettuce, chopped

Steps:

  • Combine the mayonnaise, lemon zest (grated yellow part of lemon) and lemon juice. To get the juice out of a lemon, heat it up in microwave for 10 seconds on high. Cut the lemon across in half. Squeeze the lemon halves while holding them upright over the dressing bowl so that the seeds stay with the lemon halves, not in the dressing! Add pepper to the dressing bowl, too. Whisk the dressing and pour in the extra-virgin olive oil while you whisk. If you pour in a slow, steady stream, 3 tablespoons of extra-virgin olive oil will pour out in a count to the number six. Once the oil is combined with the acid (the lemon juice) and the mayonnaise, you can switch utensils and stir in the cheese and a pinch of salt with a spoon or rubber spatula.
  • Chop up the lettuce into 2-inch pieces. Place the lettuce in a salad bowl and top with the dressing when you are ready to serve dinner.

This Strawberry Cucumber Salad is a sweet salad with a surprise! A pinch of cardamom heightens the natural sweetness of strawberries and raises it to gourmet status!

2 cups strawberries, (hulled and quartered)
1 long English cucumber, (sliced)
1 tsp maple syrup, (or sugar)
1/2 tsp ground cardamom
1/4 tsp sea salt
1/4 cup Greek yogurt
1 tsp maple syrup, (or sugar)
1/2 tsp lemon zest
1/4 cup flaked almonds, (toasted)
1/2 tsp olive oil (extra virgin)
1 pinch cayenne pepper
1 pinch sea salt
fresh basil (for garnish)

Steps:

  • Prepare all components of this salad in advance, and assemble just before serving or the cucumbers will become watery.Toss quartered strawberries with maple syrup, cardamom and salt. Slice cucumbers.Toast almonds in a skillet over medium heat with 1/2 tsp oil, just until they begin to brown. Remove from heat, toss with cayenne and salt. Cool.
  • Combine Greek yogurt, maple syrup and lemon zest. Thin with a little cream or milk if too thick.
  • Arrange sliced cucumbers on a serving platter. Sprinkle very lightly with salt. Top with strawberries and toasted almonds and drizzle with Creamy Lemon Dressing.

2 tablespoons lemon juice
1/4 teaspoon sugar (to taste)
6 tablespoons oil (sesame is great or other vegetable)
salt
fresh ground pepper
1 1/2 tablespoons minced fresh dill
2 cucumbers, peeled and thinly sliced
3 minced scallions

Steps:

  • In a bowl, whisk lemon juice, oil and sugar until thick.
  • Add dill, salt and pepper to taste. Mix inches.
  • Add cucumbers and scallions, and coat well with dressing.
  • Chill for 15 minutes and serve cool.
