2 tablespoons cornstarch
½ teaspoon lemon juice
¼ teaspoon vanilla extract
1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
4 tablespoons (½ stick) salted butter, diced and chilled
½ cup cold buttermilk
Optional, for serving: vanilla ice cream; whipped cream

  • Preheat the oven to 350 degrees F and grease a deep-dish (9-inch) pie plate.

1 stick of butter
1 cup of Bisquick
1/2 cup of water (the original recipe calls for a full cup. However, it tends to make the recipe runny which takes a lot longer to bake.)
1 cup of sugar
2 cups of blueberries

Steps:

  • preheat oven to 350
  • melt butter in an 8 x 8 baking dish
  • mix sugar, bisquick and water
  • pour mixture over butter
  • pour blueberries over mixture
  • bake for about 30 minutes or until the crust is golden brown and a toothpick comes out clean

1/2 stick unsalted butter, melted
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup sugar
3/4 cup milk
2 cups fresh blueberries
1/3 cup water
1/2 cup sugar

Steps:

  • Preheat oven to 350 degrees F.
  • Pour melted butter into a shallow 1 1/2 quart baking dish. In a mixing bowl combine flour, baking powder, salt, sugar and milk. Pour evenly over the butter. In a bowl combine berries, water and sugar. Spoon evenly over batter, but do not stir. Bake 40 to 45 minutes. Batter rises to become buttery top crust.

2/3 cup sugar
1 tablespoon lemon juice
1/4 cup all-purpose flour
2 tablespoons cold salted butter, cut into pieces
2 1/2 cups all-purpose flour
2 1/2 heaping tablespoons sugar, plus more for sprinkling
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 sticks cold salted butter, cut into pieces
3/4 cup milk
1 large egg
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • For the blueberries: Place the blueberries in a large bowl and sprinkle in the sugar and lemon juice. Add the flour and stir to combine.
  • For the dough: In a separate bowl, combine the flour, sugar, baking powder and salt. Stir it around, then add the cold butter and use a pastry blender to cut the butter into the dry ingredients.
  • Whisk together the milk and egg in a small bowl, then drizzle it into the flour-butter mixture and stir until the dough just comes together. It should be lumpy and clumpy!
  • Pour the blueberries into a 9-by-13-inch baking dish and dot them with the butter, then tear off pinches of the dough and dot them all over the top. Sprinkle the top with extra sugar.
  • Cover lightly with foil and bake for 20 minutes, then remove the foil and bake until lightly browned, about 25 more minutes. Serve warm or at room temperature with a big scoop of vanilla ice cream.

4 cups blueberries ((fresh or frozen))
1/2 cup granulated sugar
1 teaspoon lemon zest
6 Tablespoons butter
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
ground cinnamon

Steps:

  • Preheat oven to 350 degrees F.
  • Slice butter into pieces and add to a 9x13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.
  • Add blueberries, sugar and zest to a bowl and stir to combine.
  • In a separate bowl mix together the batter ingredients: flour, sugar, baking powder, and salt. Stir in the milk, just until combined.
  • Pour blueberries over melted butter in pan. Drizzle batter over the top. Sprinkle with a little bit of cinnamon.
  • Bake at 350 degrees for about 35-40 minutes, or until lightly golden on top.
  • Serve warm, with a scoop of ice cream, if desired!

2 cups all-purpose flour
1 teaspoon baking powder
Coarse salt
6 large eggs, room temperature
1 cup granulated sugar
2 tablespoons packed light-brown sugar
2 sticks unsalted butter, melted, plus more, softened, for pans
1 tablespoon plus 1 teaspoon honey
3/4 teaspoon pure vanilla extract
Confectioners' sugar, for dusting

Steps:

  • Whisk together flour, baking powder, and 3/4 teaspoon salt in a medium bowl.
  • Whisk together eggs and granulated and brown sugars with a mixer on high speed until pale and fluffy, about 10 minutes. Sift flour mixture over top in 2 additions, folding in after each addition. Fold in melted butter in 2 additions, then honey and vanilla. Refrigerate, covered, for at least 2 hours.
  • Preheat oven to 350 degrees. Let batter stand at room temperature for 10 minutes. Generously butter 2 standard-size or 2 mini nonstick or aluminum madeleine pans using a pastry brush.
  • Transfer batter to a pastry bag, and snip tip to create a 1/2-inch opening. Pipe some batter into molds, filling each about three-quarters full. Bake on middle rack until pale gold, 8 to 11 minutes (6 to 8 minutes for mini madeleines). Immediately shake madeleines out. Wash and rebutter molds. Repeat with remaining batter. Dust baked madeleines with confectioners' sugar.
