5 Asian eggplants, about 2 pounds
3 tablespoons peanut oil
1 tablespoon dark sesame oil
Kosher salt and freshly ground black pepper
2 green onions, white and green parts, sliced on a diagonal
1-inch piece fresh ginger, peeled and minced
3 garlic cloves, minced
1 fresh red chile, sliced
1/2 cup chicken broth
3 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon light brown sugar
1 tablespoon cornstarch
1 tablespoon toasted sesame seeds, for garnish
Thai holy basil and fresh cilantro leaves, for garnish

Steps:

  • Cut the eggplants in 1/2 lengthwise and then slice crosswise into wedges, no more than 1-inch wide.
  • Heat a wok or large skillet over medium-high flame and add the oils; tilt the pan to coat all sides. When you see a slight smoke, add a layer of eggplant, stir-fry until seared and sticky, about 3 minutes. Season with salt and pepper. Remove the eggplant to a side platter and cook the remaining eggplant in same manner, adding more oil, if needed.
  • After all the eggplant is out of the pan, add the green onions, ginger, garlic, and chile; stir-fry for a minute until fragrant. Add the broth. In a small bowl, mix the soy sauce, vinegar, sugar, and cornstarch until the sugar and cornstarch are dissolved. Pour the soy sauce mixture into the wok and cook another minute, until the sauce has thickened. Put the eggplant back in the pan, tossing quickly, until the sauce is absorbed. Garnish with sesame seeds, Thai basil, and cilantro and serve.

1 cup long-grain white rice
0.5 cup hoisin sauce
3 tablespoons rice vinegar
1 teaspoon cornstarch
4 tablespoons canola oil
1 pound firm tofu-drained, patted dry, and cut into 1-inch cubes
1 small eggplant (about 1 3/4 pounds), cut into 1/2-inch pieces
4 scallions, sliced, white and green parts separated
2 cloves garlic, chopped
1 red serrano or jalapeño chili, sliced
kosher salt
0.25 cup fresh basil leaves, torn

Steps:

  • Cook the rice according to the package directions. In a small bowl, whisk together the hoisin, vinegar, and cornstarch.
  • Meanwhile, heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat. Add the tofu; cook, turning occasionally, until browned, 8 to 10 minutes. Transfer to a plate.
  • Add the remaining 3 tablespoons of oil to the skillet. Add the eggplant, scallion whites, garlic, chili, and ¼ teaspoon salt. Cook, tossing frequently, until the eggplant is tender, 8 to 10 minutes. Add the hoisin mixture, tofu, and scallion greens and cook, tossing gently, until the sauce is thickened, 1 to 2 minutes. Serve with the rice and sprinkle with the basil.

2 medium size Asian eggplants (about 6 ounces each) (slender and firm)
3 - 4 green chili peppers (or 1/2 green pepper)
2 tablespoons cooking oil for stir-frying
1/2 tablespoon gochujang (Korean red chili pepper paste) (See Note)
1 tablespoon soy sauce
1 tablespoon rice wine (or mirin)
1 teaspoon minced garlic
1 teaspoon sugar
1 tablespoon sesame oil
1/2 teaspoon sesame seeds
pinch pepper

Steps:

  • Cut the eggplants lengthwise in halves. Then cut crosswise into about 1/2-inch thick chunks. Cut the pepper into about 1-inch long pieces.
  • Heat a pan with the oil over medium high heat. Stir fry the eggplants quickly for a minute or two until the outside starts to soften.
  • Add the peppers and seasoning ingredients.
  • Continue to stir-fry until the eggplants are well coated with the seasonings and the peppers are slightly wilted. You can add a tablespoon or two water if the eggplants seem dry while stir-frying. Adjust the seasoning with salt if necessary.

2 tablespoons white vinegar
1 tablespoon packed brown sugar

Steps:

  • Heat a large skillet or wok over high heat. Add oil and pepper flakes and allow to sizzle for 15 to 20 seconds. Add eggplant and toss in the oil. Cook, stirring every minute, until it just begins to char, about 5 minutes. Add onion, bell pepper, and garlic; stir-fry for 3 minutes.
  • Drizzle with soy sauce and vinegar, sprinkle with brown sugar and cornstarch, then toss to coat all of the vegetables. Cook until sauce has thickened, about 1 minute.
  • Remove from the heat, add basil, and toss to combine.

A versatile, quick and easy meat-free, mid-week meal. I use 20ml tablespoons for this recipe. Measure out all ingredients before commencing to cook. Sometimes I saute (then remove) some sliced chicken thigh meat before stir-frying the eggplant, or I add some sliced portobello mushrooms. In this case, use your judgment to increase the amount of the sauce ingredients if necessary. If you don't like chillies, omit. From Delicious magazine.

200 -300 g dried flat egg noodles (I use Chang's)
3 -5 tablespoons vegetable oil (I use grapeseed)
1 red onion, peeled and finely chopped
2 garlic cloves, peeled and crushed
1 -2 red chile, finely sliced (seeded if wished for less heat) (optional)
8 unpeeled baby eggplants, sliced finely on the diagonal
2 tablespoons brown sugar (or substitute palm sugar or jaggery if desired)
3 tablespoons light soy sauce
3 tablespoons oyster sauce (I use Chang's)
1 teaspoon toasted sesame oil
1 teaspoon asian fish sauce
2 spring onions, sliced

Steps:

  • Cook noodles according to packet instructions, drain and set aside.
  • Heat a little vegetable oil over a medium flame in a wok, and saute the onion, garlic and chilli, stirring frequently for 2 to 3 minutes. When the onion is soft, remove from wok and set aside.
  • Increase heat and add 2 tablespoons oil. Stir fry eggplant in batches for 2 to 3 minutes, stirring constantly until golden brown. Remove from pan and set aside.
  • Add remaining vegetable oil to wok with the brown sugar and cook 3 minutes until caramelized - be careful not to burn.
  • Add soy sauce, oyster sauce, sesame oil and fish sauce and stir until heated through.
  • Add noodles to the wok with the onion mixture and eggplants, and toss to coat with the sauce. Taste and add a little extra brown sugar if desired.
  • Serve garnished with spring onions and seasoned with a little salt (optional) and freshly ground pepper, to taste.

450g Chinese eggplants
1 tsp salt
1 tsp white vinegar
60g potato starch
1 egg white
5 cloves garlic, coarsely chopped
1 stalk scallion, cut into 1-inch sections
15g (1/2 oz) ginger, coarsely chopped
1 tsp Szechuan peppercorns, ground
2 dry chilies, cut into 1/2 inch sections, remove the seeds
3 tbsp water
1 tbsp light soy sauce
1 tbsp mushroom sauce (a.k.a. vegetarian oyster sauce)
2 tsp sugar
1/4 tsp potato starch

Steps:

  • Cut the eggplants into 1.5 inches long pieces. Mix the salt and vinegar with the eggplant and let it sits for 15 minutes. Drain and dry thoroughly with a kitchen towel.
  • Coat the eggplants with eggwhite, followed by the potato starch.
  • Deep-fry the eggplants with oil in moderate heat until the flesh starts to turn color. Remove and drain on a kitchen towel.
  • Saute the ingredients in B with some oil over low to medium heat until aromatic.
  • Mix all the ingredients in C to constitute the sauce. Add the sauce to the wok.
  • Return the fried eggplants to the wok. Flash fry for 10 seconds over high heat.
  • Dish out and serve immediately.

2 tablespoons miso (or bean paste)
1 tablespoon soy sauce
2 tablespoons dry sherry
2 tablespoons apple cider vinegar
2 tablespoons brown sugar
1/2 teaspoon crushed pepper
1 1/2 lbs Japanese eggplants
1 teaspoon cornstarch
1 tablespoon water
1 teaspoon toasted sesame oil
4 tablespoons olive oil
1 tablespoon chili oil (or 1/4 tsp. red pepper flakes)
2 garlic cloves, coarsely minced
4 slices peeled gingerroot, coarsely minced (1/4-inch slice)
1 whole scallion, finely chopped

Steps:

  • Mix the seasonings in a bowl until the sugar is dissolved and set aside.
  • Rinse and dry the eggplant and cut off stems; don't peel. Quarter them lengthwise and cut each quarter into 2-inch wedges. Set aside.
  • In a small bowl, dissolve the cornstarch with the water and sesame oil. Set aside.
  • Heat a large, heavy skillet(or wok) over high heat for 30 seconds. Add the olive oil with the chili-pepper oil(or red pepper flakes), swirl, and heat for 30 seconds. Throw in the garlic, ginger, and scallions and stir rapidly for 15 seconds.
  • Add the eggplant wedges and stir with a spatula in flipping and gentle pressing motions for 2-5 minutes to expose them to the oil.
  • Turn heat down to medium high and continue to turn and press lightly for 4-7 more minutes, until the wedges are slightly browned and flattened. Don't press them hard, or they might break and become messy.
  • Turn the heat back up to high. Give the seasonings a stir and pour over the eggplant. Stir in scooping and lifting motions for about 30 seconds; give the cornstarch mixture a stir and add to the sauce. Cook to desired doneness.
  • Toss quickly, then place into a hot serving dish. Enjoy!
  • Makes 3 to 4 servings.

1 1/2 teaspoons corn starch

Steps:

  • Pre heat the oven to 430ºf / 220ºc
  • Cut the tops off of the eggplants to remove the stem and leaves. Cut the eggplants in half and place cut side up on a baking sheet.
  • Mix the olive oil and honey together in a small bowl and add a pinch of salt, pepper and chili powder and combine.
  • Brush the honey mixture over the cut side of the eggplants and place in the pre heated oven for 20 minutes until they are soft.
  • While the eggplants are roasting, mix all of the ingredients for the sauce together in a jug.
  • Heat a large skillet or wok on a high heat on the stove top, add the cooked eggplants and pour over the stir fry sauce.
  • Cook for 3 to 5 minutes, while stirring, until the sauce has thickened. Serve.
