1/3 cup reduced-sodium soy sauce
1/3 cup white wine or chicken broth
1 pound beef top sirloin steak, cut into 1/8-inch strips
1 teaspoon cornstarch
1/2 pound fresh mushrooms, sliced
2 cups fresh snow peas
4 teaspoons vegetable oil
4 cups shredded lettuce

Steps:

  • In a small bowl, combine soy sauce and wine or broth. Reserve 1/4 cup. Pour remaining soy sauce mixture into a large resealable plastic bag; add the beef; seal and turn to coat. Refrigerate for 15 minutes. In a small bowl, combine the cornstarch and reserved soy sauce mixture until smooth; set aside., In a nonstick skillet, stir-fry mushrooms and snow peas in 2 teaspoons oil for 3-4 minutes or until snow peas are crisp-tender. Remove and keep warm. , Drain and discard marinade from beef. In the same skillet, stir-fry beef in remaining oil for 2 minutes. Stir cornstarch mixture; add to skillet. Bring to a boil; cook and stir for 1-2 minutes or until slightly thickened. Place lettuce on four serving plates. Top with beef mixture and snow pea mixture.

I usually try to source Queensland saucer scallops for this dish, with their firm-medium, flavoursome flesh. Be sure to pat the scallop meat dry with a paper towel to remove any excess moisture before cooking and only cook this dish "a la minute" - the scallops should be rare and the snowpeas bright green and crunchy. You could of course substitute fresh green prawns for the scallops. If you are allergic to peanuts, use vegetable oil.

2 tbsp light soy sauce
1 tsp malt vinegar
1 tsp brown sugar
½ tsp sesame oil
1 tbsp peanut oil
24 scallops, removed from their shells (about 240g scallop meat)
120g snowpeas, topped and tailed
3 spring onions, cut into 7cm lengths
4 ginger slices
2 tbsp shao hsing wine or dry sherry

Steps:

  • 1. Combine soy sauce, vinegar, sugar and sesame oil in a small bowl and set aside. 2. Heat peanut oil in a hot wok until the surface seems to shimmer slightly. Add scallops to the wok, in two batches if necessary, and sear for 30 seconds on one side, then turn over and sear the other side for 10 seconds so they are nicely caramelised. Remove and rest on kitchen paper. 3. Add snowpeas, spring onions and ginger to wok and stir-fry for 30 seconds. Add wine or sherry and cook for 10 seconds. 4. This is great if you have a head of lettuce that you have to use right away. Even if you don't, its still a great side dish to any asian meal. Simple to make, with common ingredients, its a keeper for sure. Try different lettuce varieties, I used romane tonight since its what was on hand. I also didn't have sesamee oil tonight so I used walnut oil and it was still a winner. I like to toss in some toasted sesame seeds and if I have them on hand a green onion, chopped, is nice to add with the lettuce. As you can see, this recipe leaves a huge opening for your own additions and variations.

1 1/2 teaspoons soy sauce
1 1/2 teaspoons sesame oil

  • Stir in the soy sauce mixture and toss well. Season to taste with salt and pepper.
  • Serve at once.

1/4 cup rice vinegar
1/4 cup soy sauce

Steps:

  • In a medium saucepan, bring 1 1/2 cups salted water to a boil. Add rice, and return to a boil, stirring once. Reduce to a simmer; cover and cook until rice is tender, about 15 minutes. Remove from heat, and let steam for 5 minutes. Meanwhile, whisk together vinegar, soy sauce, sesame oil, and cornstarch in a small bowl. Set sauce aside.
  • In a large nonstick skillet, heat vegetable oil over medium-high. Add bell pepper, scallion whites, carrots, and ginger; cook, stirring occasionally, until carrots are crisp-tender, 4 to 5 minutes. Steps:

  • Heat a large nonstick skillet over medium-high heat and add the peanut oil.
  • In a bowl, mix together the soy sauce, vinegar, brown sugar, cornstarch, ginger and sriracha. Set aside.
  • Add the scallops to the skillet and sear until nice and browned, 2 minutes per side. Remove to a plate.
  • Crank up the heat to high. Add the baby corn, squash and broccoli and cook, stirring everything around, for 2 minutes. Then add the snow peas and chile pepper and continue to cook for about 1 minute.
  • Give the reserved sauce a quick stir and add it to the skillet along with 1/2 cup water. Continue to cook until the sauce thickens, about a minute or two. Add the scallops back to the skillet and gently stir to coat them in the sauce.
  • Serve immediately over rice and garnish with the scallions and cilantro.

1 head iceberg lettuce
2 teaspoons soy sauce
2 tablespoons oyster sauce
¼ teaspoon sesame oil
½ teaspoon salt
¼ teaspoon sugar
ground white pepper (to taste)
2 tablespoons vegetable oil
1 slice ginger ((⅛-inch thick, smashed with the side of a knife))
1 clove garlic ((chopped))

Steps:

  • Take the lettuce and firmly hit it on the counter to remove the core. (One of the first of many tricks I learned when working in the restaurant industry!)
  • Remove the first outer layer of the lettuce and any discolored leaves and discard. Tear the lettuce with your hands into large 4 to 5-inch pieces.
  • Place the lettuce in a large bowl of very cold water and give it a good stir. This washes your lettuce and rehydrates it. Next, drain the lettuce in a colander and give it a good shake to remove the excess water from the surface of the lettuce. Iceberg lettuce already contains a lot of water, so removing the excess water is important, or you'll end up with too much liquid. Feel free to use a salad spinner, which is a good idea if your stove and wok does not generate enough high heat.
  • Combine the soy sauce, oyster sauce, sesame oil, salt, sugar, white pepper into a small bowl and set aside.
  • Heat your wok over low heat, and add 2 tablespoons of oil and the fresh ginger slice. Make sure to smash the ginger with the side of a knife to release the juices and flavors before you add it. Infuse the oil for 15 seconds, being careful not to burn the ginger.
  • Turn the heat up to the highest setting, and stir in the chopped garlic. Then mmediately add the iceberg lettuce. Stir-fry everything together, using a scooping motion to coat the lettuce uniformly with the oil. After about 20 seconds, gather the lettuce in the middle of the wok in a pile, so you can see the liquid pooling around it in the wok.
  • Let cook uncovered for another 15 seconds, and while this is happening, pour the soy sauce mixture over the lettuce. At this point, the sides of the wok will start to super-heat. This may be tough to achieve on your average stove burner, but do your best!
  • Now in a single motion, stir the lettuce in a circular motion while spreading the lettuce out across the wok. The idea is to get the lettuce and the liquid searing along the sides of the wok to get that wok hei flavor. After the searing has stopped, repeat the process of gathering the lettuce in the middle of the wok again and letting the sides of the wok heat up again.
  • After this second round of searing, your iceberg lettuce should be tender, with the green parts wilted. Stir fried lettuce should be slightly crunchy, so be sure not to overcook it. This whole process from start to finish takes less than 2 minutes in the wok.

From Wei-Chuan's Cookbook, Chinese Cuisine. This is an authentic chinese recipe. The dried scallops or dried shrimp lends a complex aroma to the clean crisp lettuce. Dried scallops are expensive, but they lend a sweet seafood taste and is much preferred, the dried shrimp is tasty too, but the flavor is more robust. Although I made this as is with the dried scallops --it was excellent, and I loved the texture of the lettuce, I find iceberg void of the nutrients of true green leafy vegetables favored by the Chinese. Therefore, this dish can be made with romaine lettuce, baby bok choy or pea shoot leaves (which are abundant in late winter and early spring in chinatowns in major cities.) We actually ordered this dish with scallop/pea shoot leaves recently over Chinese New Year in a restaurant and it would've been tastier with this sauce!

3 dried scallops or 2 tablespoons dried shrimp
water, for soaking (soak in the fridge the morning of dinner)
3/4 teaspoon salt
1 pinch black pepper or 1 pinch white pepper, if you have it
1 cup strong chicken broth (if using canned, college inn is recommended, but cut back on salt)
1/2 teaspoon sugar (this is my adaptation or addition)
1 tablespoon cornstarch
1 1/2 tablespoons water
4 tablespoons oil (I reduced amount to 1 TB)
1 scallion, cut into 1-inch lengths
1 head iceberg lettuce

Steps:

  • Early morning PRE-PREP:.
  • Place the scallops in a bowl; add 1/2 cup water, soak for approximately 10 hours (or steam for 1 hour) til the scallops are softened.
  • Final Prep:.
  • Wash and tear lettuce into large sheets.
  • Remove scallops and drain, retaining soaking liquid. Tear the scallops into shreds. Place the shredded scallops, retained liquid, and the sauce ingredients into a pot; bring to boil, Add the cornstarch slurry/thickner into the pot and allow to thicken, then set aside.
  • Heat a wok (or saute pan) over med-high heat, add oil, and add the scallions, stir-fry until fragrant and then add lettuce. Continue stir-frying until it is limp. Remove from heat and using a slotted spoon (or drain the lettuce) and add to the scallop sauce. Reheat the lettuce and scallop sauce over medium heat and transfer to a serving platter and serve.
  • IF using dried shrimp, the shrimp must be rinsed and soaked for 20 minutes until soft before using.

  • Add the cut and dried romaine lettuce, salt and white pepper (I prefer the light flavours of just a light dusting of salt and white pepper but you can also use one tablespoon of soya sauce (tamari) or even 1/2 teaspoon of gluten free vegetable powder, if you wish), sugar (optional), shoaxing wine and toss quickly. Immediately Remove from heat: It is very important that you remove the roam in lettuce from heat while the romaine is just starting to wilt as the heat from the pan will continue to cook the romaine lettuce even after you remove it from the heat. Drizzle over sesame oil and dried chili flakes if desired and toss.
  • Enjoy as a delicious healthy vegetable side dish.

450 g iceberg lettuce
1 tbsp dried shrimp
1/2 tbsp tapioca flour
25 ml water
2 tbsp garlic oil
1/4 tsp sesame oil
1/4 tsp salt
1/2 tbsp light soy sauce
1 tbsp crispy fried garlic

Steps:

  • Separate and cut the lettuce leaves into 2-inches squares, or bite-sized. Wash and soak in water for 45 minutes to 1 hour.
  • Add water to the tapioca flour. Stir to mix well. Set aside.
  • Drain the water from the lettuce with a colander and set it aside to drip excess water off.
  • Soak the dried shrimps in hot water for 1 minute. Strain the dried shrimp and chop into smaller pieces. Set aside.
  • Heat the garlic oil in a non-stick pan over medium heat.
  • When the oil is hot, add in the chopped dried shrimps. Stir fry for 30 seconds, or until aromatic, and the shrimps have changed colour.
  • Switch off the heat and remove the dried shrimps from the pan. Set it aside.
  • Switch on the heat to medium again. Add the washed lettuce to the pan.
  • Rotate the lettuce with a pair of tongs for 3.5 minutes, or until the lettuce is soft and the volume has reduced by half.
  • Remove and discard the excess gravy accumulated at the bottom of the pan.
  • Add in the seasonings: sesame oil, salt, light soy sauce, and half of the crispy fried garlic. Stir until well-combined.
  • Push all the lettuce to one side of the pan. Pour the flour slurry to the gravy. Stir until thick and well-combined.
  • Switch off the heat. Dish onto the serving plate. Garnish with crispy fried garlic and cooked dried shimps. Serve.

3 tablespoons light soy sauce
1 teaspoon cornstarch
2 tablespoons oriental sesame oil
2 tablespoons peanut oil
6 asparagus spears, trimmed, cut into 1-inch pieces
6 mushrooms, sliced
3 green onions, sliced
1 carrot, peeled, sliced
1/2 red bell pepper, cut into matchstick-size strips
1 zucchini, sliced
3 large garlic cloves, finely chopped
2 teaspoons minced fresh ginger
1/2 pound bay scallops

Steps:

  • Mix soy sauce with cornstarch in small bowl. Heat sesame and peanut oils in wok or heavy skillet over high heat. Add vegetables, garlic and ginger and stir-fry until vegetables are crisp-tender, about 4 minutes. Add scallops and stir-fry until almost cooked through, about 1 minute. Stir soy sauce mixture and add to wok. Stir until liquid boils and thickens and scallops are opaque, about 2 minutes. Transfer to platter and serve immediately.
