4 tablespoons butter, softened
1 tablespoon chopped fresh parsley
1 tablespoon fresh lemon juice
1/4 teaspoon garlic powder
4 sirloin steaks
1/4 cup ground black pepper
1 1/2 teaspoons white pepper
1/2 teaspoon red pepper flakes
1 teaspoon ground coriander
1/4 cup sugar
1 tablespoon salt
1 teaspoon garlic powder

Steps:

  • Mix together butter, parsley, lemon juice and 1/4 teaspoon garlic powder.
  • Place butter mixture in plastic wrap and roll into a log shape.
  • Chill until firm.
  • Combine black pepper, white pepper, red pepper flakes, coriander, sugar, salt and garlic powder.
  • Rub spice mix into both sides of steaks.
  • Shake off excess.
  • Place steaks on a hot grill and cook for 2 minutes.
  • Turn and cook for 2 additional minutes.
  • Move steak to a cooler section of the grill and continue to cook until desired doneness.
  • Serve each steak with a slice of the lemon butter.

8 cloves garlic, minced
1 tablespoon olive oil
1 pinch salt and ground black pepper
2 (12 ounce) New York strip steaks
12 cloves garlic, peeled
1 cup olive oil for frying
1 pinch salt and ground black pepper to taste
1 ½ tablespoons balsamic vinegar

Steps:

  • Whisk minced garlic, olive oil, salt, and black pepper in a bowl, then pour into a resealable plastic bag. Add the steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours or overnight.
  • Combine 12 garlic cloves and 1 cup olive oil in a small saucepan over low heat. Cook, stirring occasionally, until garlic is golden and tender, about 30 minutes. Set aside.
  • Preheat an outdoor grill for high heat, and lightly oil the grate. Remove steaks from bag, wiping off excess marinade with paper towels. Generously season steaks with salt and black pepper.
  • Cook the steaks on the prepared grill until they start to firm and are reddish-pink and juicy in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Remove steaks to a plate and let rest for 5 minutes.
  • Drizzle balsamic vinegar over steaks, then spoon a few cloves of oil-roasted garlic on top.

4 basil leaves, rinsed and thinly sliced
2 New York Strip Steaks (appx. 24 ozs, about 1 1/4 inch thick)
1 1/2 tsp coarse salt

  • Preheat a grill to medium high. Put the butter into a bowl for about 10 minutes to soften.
  • Pat dry the steaks with a paper towel. Sprinkle half of the salt over one side of the first steak, and rub it into the meat a bit. Repeat to salt the other steak. Let the steak sit with the salt at room temperature for 10 to 15 minutes.
  • Add the basil and garlic powder to the butter. Use a fork to stir and mash together the ingredients. Set aside.
  • Coat the grill rack with oil spray. Add the steak to the grill, and grill covered for 7 minutes. Flip the steak over and grill for another 6 to 7 minutes. Check for doneness after 13 to 14 minutes total grilling time. That timing yielded nice medium rare steaks; adjust according to your taste and the thickness of the steak.
  • When the steak is cook to your liking, move the steak to a platter to rest. Top each steak immediately with a portion of the garlic butter. Gently move the butter across the steak to let the butter melt across the steak. Let the steak rest for a few minutes with the butter.
  • Slice the steak and serve. Enjoy with a glass of red wine, perhaps a Shiraz blend from Australia!

1/4 cup shallot, finely minced
1 garlic clove, smashed and minced
2 tablespoons flat leaf parsley, minced

8 ounces (250 g) shrimp (deveined, tails on or off)

Steps:

  • Mix together butter, garlic and fresh chopped parsley. Refrigerate until ready to use.
  • Heat a large grill over high heat. Lightly grease grill plates with oil. Pat steaks dry with paper towel. Brush lightly with oil and generously season with salt and pepper.

4 (1 lb) steaks (ribeye, t-bone, sirloin, each steak approx. 1 lb)
salt and pepper
3/4 cup salted butter
1 bunch cilantro
4 garlic cloves
1/2 teaspoon paprika
1 teaspoon lemon juice

Steps:

  • Select steaks approx 1 inch thick. Allow steaks to come to room temperature so they cook quickly and evenly.
  • Place slightly softened butter, garlic, cilantro, paprika and lemon juice in food processor, and pulse until well blended. Refrigerate resulting herb butter.
  • Salt and pepper steaks.
  • Grill steaks uncovered on hot bbq for 5 minutes on one side. Don't worry if it flames a bit.
  • After 5 minutes, turn steaks, place lid on BBQ, close top vent half-way and cook about 8 minutes more. During this period, be sure to turn steaks every two minutes for even cooking. This should give you medium-rare to medium doneness.
  • Remove steaks from grill.
  • Place large dollops of herb butter on steaks, and allow steaks to rest 5 minutes on plate, covered, so juices get re-absorbed. This 5 minutes is a great time to use the BBQ to grill some veggies. I make grilled zucchini, yellow squash and portabella mushrooms. After grilling veggies, add some of the herb butter to them.
  • For best flavor, use a charcoal grill with mesquite natural charcoal, but you can use a gas grill.

? cup Balsamic vinegar
1 tsp salt
1 tsp pepper
3/4 cup softened butter
10 anchovies (finely chopped )

1 tsp lemon zest
½ tsp salt
½ tsp pepper

Steps:

  • Combine the softened butter with the anchovies, garlic, herbs, lemon zest, salt and pepper. Mix well and set aside.
  • Combine the olive oil, Balsamic vinegar, salt and pepper and pour over the steaks. Make sure the steak is well-covered on both sides then cover and allow to marinade for at least 30 minutes or up to 24 hours in the fridge. Remove the steak from the fridge an hour before cooking.

2 New York strip loin steaks, with the excess fat, trimmed
6 oz mushrooms, (halved or quartered if large)
1 TBSP olive oil
¼ cup of butter softened
3 cloves of garlic, minced
1 tsp each of fresh thyme, rosemary, and oregano, finely chopped
Kosher salt & fresh ground pepper

Steps:

  • Start by taking your steaks out of the refrigerator and season them with salt and pepper. You can even season them the night before if you are organized. 30-40 minutes is the minimum time you should allow to season the steaks.
  • Preheat your grill to medium-high to high (450-500) degrees F
  • To make the garlic butter, mix the butter, garlic and fresh herbs in a bowl and set aside for the moment.
  • Place a large cast-iron skillet on the grill and allow to heat through.
  • To the hot skillet add the olive oil, a dollop (1-2 TBSP) of garlic butter into the pan along with the mushrooms. Shake the pan (or stir) to coat all the mushrooms. BE CAREFUL THE PAN WILL BE VERY HOT!! Use a good quality oven mitt if you are picking up the skillet!
  • If you need to, add a little more garlic butter to the skillet, just make sure you keep about 2 TBSP in reserve, one for each steak.
  • When the mushrooms are just about done put your steaks on the grill.
  • Only turn the steaks once, you can, however, move the steaks 45 degrees while cooking on each side to get that XX grill pattern on the steaks.
  • Once the steaks have reached the desired doneness and your mushrooms are done, remove everything from the grill.
  • Loosely foil your steaks and allow them to rest for 5 minutes.
  • Once you have the steaks plated plate place 1 TBSP of the garlic butter on each. Divide the mushrooms between the plates.
  • Sit down and enjoy a well-deserved feast!

8 flour tortillas (can substitute corn)
1 avocado (sliced)
1/2 cup green bell pepper (julienned)
1/2 cup yellow onion (julienned)
Optional toppings: shredded cheese, salsa, guacamole, sour cream, sliced jalapeños
lime wedges (to garnish)
1/2 tbsp garlic powder
1/2 tbsp cumin
1/2 tbsp oregano
1/2 tbsp paprika

1/2 tbsp kosher salt
4 tbsp butter
2 cloves garlic

Steps:

  • Mix rub ingredients together in a small bowl. Coat the skirt steak with the rub mixture evenly and thoroughly
  • (Optional) Let the seasoned beef rest at room temperature for about 30 minutes
  • Preheat your grill to 400ºF
  • Sear both sides of the beef on your grill, about 4 minutes per side
  • After searing, move your beef to an elevated rack to finish cooking to desired doneness. (I like medium doneness on steak fajitas so I finish on the rack only for about 2 minutes)
  • Remove beef from heat and allow to rest for 10 minutes before slicing
  • Add onions and bell pepper to sauté pan with a splash of olive oil. Sauté veggies over medium heat for about 8 minutes or until they begin to soften
  • In a small saucepan, melt butter and mince garlic into the butter after butter has liquified (you can also melt the butter in the microwave if you prefer)
  • Alive the beef into thin slices, cutting against the grain
  • Serve immediately on warm flour or corn tortillas. Add veggies and avocado slices
  • Squeeze lime wedges over the steak and add garlic butter. Serve alongside optional toppings. Enjoy!
