3 cups all-purpose flour, spooned into measuring cup and leveled-off with a knife
½ teaspoon baking soda
½ teaspoon salt
¼ cup poppy seeds
1 cup low-fat buttermilk (see note)
Finely grated zest of 3 lemons (about 3 gently packed tablespoons)
2 tablespoons fresh lemon juice
2 sticks (1 cup) unsalted butter, softened
2¼ cups granulated sugar, plus more for the pan
3 large eggs
¼ cup water
¼ cup granulated sugar
1½ tablespoons fresh lemon juice
About 1 cup confectioners' sugar
2 tablespoons fresh lemon juice

Steps:

  • Preheat the oven to 325°F and set an oven rack in the middle position. Spray a 10-inch Bundt pan with non-stick cooking spray and dust with sugar. Be sure the entire pan is coated (see note below).
  • In a medium bowl, whisk together the flour, baking soda, salt, and poppy seeds. Set aside.
  • In a small bowl, combine the buttermilk, lemon zest and lemon juice. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment (or beaters), cream the butter and sugar on medium speed until light and fluffy, 3-4 minutes. Scrape down the sides of the bowl, then beat in the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl again. With the mixer on low speed, beat in one-quarter of the flour mixture, then one-third of the buttermilk mixture. Beat in another quarter of the flour mixture, then another third of the milk mixture. Repeat with another quarter of the flour mixture and the remaining milk mixture. Finally, beat in the remaining flour mixture. Scrape down the sides and bottom of the bowl, and give a quick mix with a rubber spatula to make sure all of the ingredients are well incorporated.
  • Spoon the thick batter into the prepared pan and smooth the top with a rubber spatula. Bake for 65 to 75 minutes, or until the top of the cake is golden and a cake tester comes out clean. Cool the cake in the pan for ten minutes on a rack.
  • While the cake cools, make the syrup. Combine the water and granulated sugar in a saucepan and bring to a boil. Remove from the heat and stir in the lemon juice.
  • Invert the warm cake onto the rack. Slip a large piece of parchment paper or aluminum foil under the rack to catch all the drips from the syrup. Gradually brush the hot syrup over the cake, letting it soak in (a little syrup will drip off, but try not to rush so that most of it is absorbed). Allow the cake to cool completely, about one hour. When the cake is cool, carefully transfer it to a serving platter.
  • To make the glaze: stir the confectioners' sugar and lemon juice in a small bowl, mixing until completely smooth. Add more confectioners' sugar if necessary to make a thick, opaque glaze (it should be thicker than you'd think -- you want it the consistency of honey or molasses). Drizzle the glaze over the top of the cake, letting it drip down the sides. Let the glaze harden before slicing and serving the cake, about 15 minutes. The cake will keep nicely for 3 days if kept covered on the countertop.
  • Note: If you'd like to make your own buttermilk, check out the easy method here.
  • Note: You'll need 3 large lemons for this recipe
  • Note: As the recipe indicates, I grease the Bundt pan with nonstick cooking spray and then dust it with sugar. It has always worked beautifully for me, but a number of readers have mentioned problems with the cake sticking. If you'd prefer to use a different method, treat the pan by generously coating it with butter and then dusting it with flour, or use a nonstick baking spray with flour like Pam with Flour or Baker's Joy. (Also, it's best not to use a Bundt pan with an intricate design for this cake, as they are more prone to sticking.) Another option (that is foolproof) is to use two 8½ x 4½-inch loaf pans instead of a Bundt pan. Loaf pans are much less prone to sticking, and you can line them with parchment paper for extra insurance. To prepare the loaf pans, spray them with nonstick baking spray, line the bottoms with parchment, and then spray them again. The bake time will be 50 to 60 minutes, and you will only need half of the soaking syrup.
  • Freezer-Friendly Instructions: The cake can be frozen (without the glaze) for up to 3 months. After it is completely cooled, double-wrap it securely with aluminum foil or plastic freezer wrap, or place it in heavy-duty freezer bag. Thaw overnight on the countertop before serving. (Add the glaze after the cake is thawed.)

1 tablespoon baking powder
½ teaspoon salt
3 tablespoon poppy seeds
2 cups granulated sugar
½ cup lemon zest
1 cup butter (unsalted, room temperature)
1 cup buttermilk
4 large eggs
1 cup powdered sugar
1 teaspoon vanilla extract
3 tablespoon lemon juice (freshly squeezed)
1 to 2 tablespoon milk (or as much as needed)

Steps:

  • Prepare oven and bundt cake pan: Preheat oven to 350°F. Spray a bundt cake pan generously with cooking spray and set aside.
  • Combine dry ingredients: In a large bowl combine the flour, baking powder, salt and poppy seeds together. Set aside.
  • Mix wet ingredients: In the bowl of your mixer add the sugar and lemon zest. Using the whisk attachment whisk for a couple minutes until the lemon zest and sugar are well blended. Add the butter and beat until mixture is light and fluffy, about 4 minutes.
  • Add the buttermilk and eggs to the mixer and mix well for about 2 to 3 minutes until smooth.
  • Combine wet and dry: Add half the flour mixture to the mixer and mix until well incorporated. Add the remaining flour and continue mixing until well incorporated. Pour batter into the prepared baking pan.
  • Bake: Bake for 55 to 65 minutes or until an inserted toothpick in the center of the loaf comes out clean.
  • Make glaze: While the cake is baking, make the lemon glaze by whisking the powdered sugar, lemon juice and vanilla extract. This glaze needs to be quite runny, so add milk as needed, about a tbsp at a time until the desired consistency is achieved.
  • Wait before taking the cake out of the pan: Take the cake out of the oven and let it sit in the bundt pan for 10 minutes. Run a knife along the sides of the cake if necessary, then flip the cake over onto a cake tray. Let the cake cool for a bit for about 10 to 20 minutes.
  • Drizzle with lemon glaze and serve: Drizzle the cake with the lemon glaze, cut into slices and serve.

1/3 cup poppy seeds (1.75 ounces)
Nonstick baking spray with flour, such as Baker's Joy
1/2 pound (2 sticks) unsalted butter, at room temperature
2 1/2 cups granulated sugar, divided
4 extra-large eggs, at room temperature
1 teaspoon pure vanilla extract
1/3 cup grated lemon zest, loosely packed (4 to 5 large lemons)
2 3/4 cups all-purpose flour
1/4 cup cornstarch
1 teaspoon kosher salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup freshly squeezed lemon juice, divided
1 cup sifted confectioners' sugar
1 1/2 tablespoons freshly squeezed lemon juice

Steps:

  • Pour the buttermilk into a 2-cup liquid measuring cup, stir in the poppy seeds, and set aside at room temperature for at least 2 hours.
  • Preheat the oven to 350 degrees F. Thoroughly spray the inside of a Bundt pan with the baking spray and set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and 2 cups of the granulated sugar on medium speed for about 5 minutes, until light yellow and fluffy. With the mixer on low, add the eggs, one at a time, the vanilla, and lemon zest, scraping down the bowl with a rubber spatula.
  • Sift the flour, cornstarch, salt, baking powder, and baking soda into a medium bowl. Add 1/4 cup of the lemon juice to the buttermilk mixture. With the mixer on low speed, alternately add the flour mixture and buttermilk mixture in thirds, beginning and ending with the flour. Scrape the bowl with a rubber spatula to be sure the batter is well mixed. Spoon the batter into the prepared pan, smooth the top, and bake for 40 to 50 minutes, until a cake tester comes out clean.
  • Meanwhile, place the remaining 1/2 cup of granulated sugar and the remaining 1/2 cup of lemon juice in a small saucepan and cook over high heat until the sugar dissolves. Set aside. When the cake is done, allow it to cool in the pan for 10 minutes, then turn it out onto a baking rack set over a large plate. Spoon the warm lemon syrup slowly over the cake, allowing it to be absorbed into the cake. Set aside for at least 30 minutes to cool.
  • For the glaze, whisk the confectioners' sugar and lemon juice together in a small bowl, adding a little more sugar or lemon juice to make a smooth, thick, but pourable glaze. Drizzle over the cake, allowing it to drip down the sides. Transfer to a flat cake plate and serve at room temperature.

1/2 c milk

2 Tbsp milk

  • 1. In a large bowl, stir all ingredients, except pie filling, powdered sugar and 2 Tbsp. milk, until blended; beat vigorously with spoon for 30 seconds.
  • 2. Spread two-thirds of the batter (about 2-1/4 cups) in a greased 13x9-inch pan. Spread pie filling over batter. Drop remaining batter by tablespoonfuls onto pie filling; lightly spread (batter will not cover pie filling completely).

1 cup ground poppy seeds
1 1/4 cups sugar
2 cups milk
1 tbsp cornstarch
1 tbsp dry active yeast, (or 1 fresh yeast cake)
1/2 cup water, (heated to 110 degrees F)
1/3 cup sugar
3 cups all-purpose flour, (plus more for rolling dough)
1/4 cup milk, (scalded)
1/4 cup butter or shortening, (melted)
3 eggs, (divided)
1/2 tsp kosher salt
1 cup powdered sugar
1 tbsp milk
2 tsp fresh squeezed lemon juice
1 tbsp butter, melted
1/2 tsp vanilla
Pinch of kosher salt

Steps:

  • Begin by preparing the filling. In a medium saucepan over medium heat add the ground poppy seeds, sugar, and 1 ¾ cups of the milk. Allow the mixture to come to a boil, then reduce the heat to medium low and simmer, stirring often, for 5 minutes.
  • Combine the cornstarch with the remaining milk and stir into the poppy seed mixture. Cook until very thick, about 1 minute. Remove from the heat and cool completely to room temperature. Filling may be made a day in advance and kept in the refrigerator.
  • Next, prepare the dough. In a small bowl combine the yeast, water, and 1 tablespoon of the sugar. Mix until it is combined and allow the mixture to stand until the yeast is foamy, about 10 minutes.
  • In the work bowl of a stand mixer combine the yeast with the remaining sugar, flour, milk, butter, 2 eggs, and salt. Mix on low speed for 3 minutes, or until just combined, then increase the speed to medium and mix for 8 minutes, or until a smooth ball forms.
  • If mixing by hand, mix the ingredients with a wooden spoon until they form a shaggy ball, then turn out onto a well floured work surface and knead for 10 minutes or until the dough forms a smooth ball.
  • Place the dough into a lightly greased bowl, cover with plastic wrap or a damp tea towel, and allow the dough to rise until double in bulk, about 2 hours.
  • While the dough rises prepare glaze. In a medium bowl combine the powdered sugar, milk, lemon juice, butter, vanilla, and salt until smooth. The mixture should be roughly the consistency of honey. Transfer the mixture to a piping bag, or a heavy duty plastic bag, and set aside at room temperature.
  • Prepare a baking sheet with baking parchment that has been lightly sprayed with non-stick cooking spray.Once risen, turn the dough out onto a lightly floured work surface and divide the dough in half. Roll one half of the dough out to roughly 10x12-inches.
  • Spread half the prepared filling over the dough, leaving a 1 inch border along all of the edges. Fold the edges of the dough over the filling.
  • Then roll the dough tightly along the short edge as you would for cinnamon rolls.
  • Carefully transfer the dough to the prepared baking sheet. Repeat with the second piece of dough. Cover with plastic wrap or a damp tea towel and allow the bread to rise for 1 hour. Heat the oven to 350°F.
  • Beat the remaining egg and use it to brush each loaf. Bake the bread for 25-28 minutes, or until the bread is golden brown and firm. Let the bread cool for 20 minutes before glazing. Snip the tip of the pastry bag, or one corner of the plastic bag, and drizzle the glaze over the warm bread. Let the bread cool until it is just slightly warm before serving.

200g self-raising flour
4 lemons , zested and 2 juiced for icing

125g pot natural yoghurt

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line the base of a 20cm square deep cake tin (or if using a decorative tin like ours, grease well).

1/3 cup vegetable oil ((80 ml))

1 1/3 cups milk ((320 ml))
butter and sifted breadcrumbs (to grease and dust a sheet pan)
1 1/2 cup icing sugar ((180 g) sifted)
4 Tablespoons lemon juice ((60 ml) freshly pressed)

Steps:

  • Before you start baking, grease and flour a sheet pan. Pre-heat oven to 340 °F (170 °C).
  • In a large mixing bowl, crack an egg, add vegetable oil and granulated sugar. Mix with a hand-held kitchen mixer for 3 minutes.
  • In a separate bowl, whisk flour, poppy seeds, and baking powder. Add them to the beaten egg. Add milk and mix everything using a mixer on low speed until a semi-liquid batter is created.
  • Pour and spread the batter evenly into the prepared pan.
  • Bake for 30 minutes. To test for doneness, insert a toothpick into the cake center. The tooth stick needs to come out clean, or with a few crumbs stuck to the tooth stick, then the cake is finished.

2 teaspoons baking powder
1/3 cup poppy seeds
1 3/4 cups granulated sugar (, divided)
1/2 cup butter
1 cup milk (, divided)
1 teaspoon vanilla extract
4 large egg whites (*)
powdered sugar (for garnishing, if desired)

Steps:

  • Preheat oven to 350 degrees F. Grease and flour a bundt pan.
  • Cream together butter and 1 1/4 cups of the granulated sugar. Stir in 1/4 cup milk and vanilla.
  • Sift together flour, salt, and baking powder. Stir in poppy seeds. Set aside.
  • Alternately add the flour mixture and the 3/4 cup milk, a little bit at a time, stirring gently after each addition, starting and ending with flour.
  • Beat the egg whites in a large bowl until they stand in soft peaks and then beat in remaining 1/2 cup sugar. Fold egg whites into cake batter.
  • Pour batter into greased bundt pan. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for a few minutes in the bundt pan before inverting on a wire rack.
  • Sift powdered sugar over the top of the cake before serving.

This was a Slovak traditional cake that was passed down in my family which I make for special occasions and now its my birthday cake. Solo still prints the recipe on the back of its label of Poppy Seed filling. I did not find the recipe in here and wanted to share this truly delectable for all to enjoy since I hate seeing lemon with it-just ruins it. I hear complaints that people think poppy seed is dry and stay away from it. You haven't eaten it properly then! I love poppy seed! It is so addicting! Very moist and good right out of the oven. Even better next day when flavors have mellowed. Its really good cold too. Its so good, it doesn't need frosting!! I will post my lighter version that I use now just for me since I am dieting and for my hypoglycemia. Enjoy!

Steps:

  • Preheat oven to 350°F
  • Grease and flour 12 cup Bundt pan or 10 inch tube pan and set aside.
  • Beat butter and sugar in a large bowl with electric mixer until light and fluffy.
  • Add poppy seed filling and beat until blended.
  • Beat in egg yolks one at a time, beating well after each addition.
  • Add vanilla and sour cream and beat just until blended.
  • In a small bowl, blend flour, baking soda and salt.
  • Add flour mixture to poppy seed mixture gradually beating well after each addition.
  • In a separate bowl, beat whites with electric mixer untill stiff peaks form.
  • Fold whites into batter and spread in prepared pans.
  • Bake for 60 minutes to one hour 15 minutes or until cake tester inserted in center comes out clean.
  • Cool in pan on wire rack for 10 minutes.
  • Remove from pan and cool completely on rack. Dust with confectioners' sugar just before serving if desired.

  • Make the cake: Preheat the oven to 350˚ F. Lightly butter a 9-inch square baking dish; dust with flour and tap out the excess. Beat the butter, granulated sugar and lemon zest in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 4 minutes.
