HOLIDAY CHOCOLATE PEANUT BUTTER BALLS
This is my family's all-time favorite candy recipe. But watch it; these are absolutely addictive! In our household, it is not Thanksgiving or Christmas without these around. This recipe was handed down to me by my dear mother-in-law. Please note I have made these with and without the paraffin, and the paraffin does give a better texture to the chocolate and aids in the dipping process, keeping the chocolate from becoming too thick. I also prefer to use the cinnamon graham crackers, but you don't have to. These make great gifts, too!

Steps:
- Melt the butter; mix in the finely ground grahams, nuts, coconut, powdered sugar, vanilla, and crunchy peanut butter. It's best to use your hands as the mixture is thick.
- Roll about 80 walnut-sized balls and place on wax paper-lined tray.
- Melt the paraffin and chocolate in top of a double boiler, mixing well. Keep the mixture warm as you dip the balls. I use a toothpick to insert in the ball, swirl in the chocolate to cover, and place back on the wax paper lined tray, pulling the toothpick out to use on the next ball.
- When finished dipping, place the tray in the freezer for the chocolate to quickly harden. Then store in covered container room temp or in the refrigerator, if you prefer it cold.
- These balls can be made a week or two in advance, as they keep well.

This recipe is from an old recipe book I found. These are my grandsons's favorite recipe. I am required to bring these to holiday get togethers:) I have made these with chocolate and white chocolate. Time does not include refrigeration time. I am unsure of exact quantity as I always double or triple the recipe.

Steps:
- Mix peanut butter and soft butter until well mixed.
- Add Rice Krispies and mix well.
- Add powdered sugar; mix well. (I found it easier to mix with my hands).
- Mold into melon ball-sized balls.
- Put in refrigerator until cold.
- Melt chocolate as per instructions on package. I use coating chocolate bar squares that comes in the one pound or two pound packages and melt in microwave. I usually double the recipe. You can use a bag of chocloate chips and 1/2 bar paraffin, if desired, and cook in double boiler or microwave. I have fixed both ways and perfer the chocolate squares.
- Dip balls into chocolate and drain on waxed paper. I store my in the refrigerator.

- To a large bowl, add the melted butter, confectioners' sugar, graham cracker crumbs, peanut butter, vanilla, optional salt, and stir to combine. Depending on how dry your mixture is, you may not need to add the pecans, but play it by ear. If the mixture is on the wet side, definitely add them and/or add additional graham cracker crumbs.
- Using a 1-inch cookie scoop (highly recommended for ease and speed), scoop out approximately 48 equal-sized balls, and place them on a sheet of parchment paper on a baking sheet. Roll each between your palms to smooth them out and compact them.
- Set aside in the fridge while you chop and melt the chocolate. I place the chopped chocolate in a microwave-safe bowl and heat in 15 seconds bursts until it can be stirred smooth; use a double boiler if you prefer.
- Using two forks or a toothpick, dip each ball in chocolate, shaking off the excess, and place on the parchment. Repeat until all balls have been dipped.
- Evenly sprinkle the balls with sprinkles, to taste.
- Allow chocolate to set up at room temperature or place the baking sheet in the fridge to speed it up.

- In the bowl of an electric stand mixer fitted with a paddle attachment, combine peanut butter, butter, vanilla, salt, and half of the powdered sugar. You can also do this by hand with a wooden spoon and clean hands.
- Blend on low speed until the mixture begins to come together. Stop the mixer, scrape down the sides of the bowl, and add the remaining powdered sugar. Mix until thoroughly combined. The mixture will be very thick, but not dry. The powdered sugar should incorporate easily.
- Remove the bowl from the stand and use a small cookie scoop to scoop dough and roll peanut butter balls between your hands to make a tight, round ball. Place on a parchment lined baking sheet. Refrigerate for at least 1 hour, or overnight.
- In a heatproof bowl combine chocolate chunks and coconut oil. Place the bowl over a small pot of simmering water and let sit until chocolate begins to melt. Stir until the chocolate is completely melted and reduce heat so the water is just at a low simmer.
- Remove the balls from the refrigerator and using your fingers, dip half of each ball into the melted chocolate, and return to the parchment lined sheet. Repeat until all balls are dipped and place in the refrigerator to chill and harden the chocolate.
- Keep peanut butter balls covered and stored in the refrigerator, or pack them in holiday tins and stored in the refrigerator for gifting. Peanut butter balls last up to 2 weeks if not longer covered well and cool.

- Make the filling: Stir the peanut butter, maple syrup, salt, and vanilla together in a large bowl until it forms a thick dough. Finish by stirring in the Rice Krispies.
- Roll into balls: Use a small cookie scoop or spoon to scoop out some peanut butter mixture and use your hands to roll them into 1-inch balls. Place them on a baking sheet and freeze for 30 minutes.
- Melt the chocolate: Add the chocolate, coconut oil, and instant coffee to a bowl and place it over a saucepan with boiling water (double boiler). Stir until the chocolate melts and the coffee dissolves.
