CITRUS SMASH COCKTAILS (OR MOCKTAILS!)
Steps:
- Place the mint leaves, fruit slices, simple syrup, and either lemon curd or orange marmalade (depending on which flavor you're making. SEE NOTE) in the bottom of a cocktail shaker.
- Use a cocktail muddler or the end of a wooden spoon to muddle the flavors together and smash the fruit/herbs.
- Pour in the vodka and add ice to the cocktail shaker. Shake well.
- Pour in a glass filled with ice, about half way up the glass. Top with club soda.
- Garnish with fruit slices and mint.
- Enjoy!

Steps:
- Pour the wine into a small pan. Bring to the boil, then keep simmering until reduced down to 85ml - this will take 5-10 mins. Leave to cool.
- Heat oven to 180C/fan 160C/gas 4. Brush a 23cm springform cake tin with olive oil, tip in 1 tbsp flour, then shake all over the pan until covered. Discard any excess. Beat together the sugar and butter until creamy and well combined. Add the eggs, one at a time, then stir through the zests. Stir together the cooled wine and olive oil, then pour a little into the cake mix. Stir, then fold in a third of the flour and the baking powder. Keep alternating between adding the liquid and flour until everything has been incorporated and the batter is smooth.
- Spoon the cake batter into the prepared tin, then smooth the surface with the back of the spoon. Scatter the halved grapes over the top, then sprinkle over the sugar. Bake for 35-40 mins until a skewer inserted into the middle of the cake comes out clean. Eat warm or cool. Will store in an airtight container for up to 3 days.

Steps:
- Slice all citrus in half.
- Dip the cut ends in sugar.
- Grill on high for 8 minutes or until sugar is caramelized.
- Squeeze the juice from all the citrus.
- Add honey and mix.
- Store in the refrigerator until ready to use.
- Mix 1.5 ounces vodka, 1.5 ounces juice, and 1 ounce of water or sparkling water.
- Serve over ice cube!
- PLEASE DRINK RESPONSIBLY!

CITRUS COCKTAIL
Steps:
- Wash and dry the lemon, lime, orange and grapefruit. Cut the fruit in half and cut each half into thin slices. Divide the fruit slices among 6 mason jars, then add 2 ounces of vodka and 1 teaspoon of sugar to each. Screw the lids of the jars on tightly, then shake each jar.
- When ready to serve, top each with 6 ounces of citrus soda.
CITRUS-GRAPE SMASH COCKTAIL
Steps:
- Add lemon juice, agave, grapes and mint springs to a cocktail shaker. Muddle everything together with a muddler or the base of a wooden spoon until the grapes have released their liquid and the mint is fragrant, about 10 seconds. Add in the vodka and fill the shaker with ice. Place the top on and shake vigorously for 10 to 15 seconds.
- Fill an 8- to 12-ounce glass with ice and strain the cocktail into the glass. Garnish with mint, if using, and serve.
