This sweet, rich, custardy pie has raisins, nuts, and coconut. A favorite in the Deep South! If you're a big fan of cinnamon, you can add a couple extra teaspoons to the recipe. Garnish each slice of pie with whipped cream and chopped nuts for a delicious and attractive presentation..

FANTASTIC RAISIN-COCONUT PIE
This is one of my favorite pie recipes, it's buttery fantastic, and the filling always bakes out perfectly, this recipe makes two pies, good thing cause you will be eating one yourself lol! You can use a frozen pie crust for this, but still prebake for 8 minutes. If you are a cinnamon-lover then use the 4 teaspoons. I promise, you will love this pie!!!! Prep time does not include making the pie crusts.

OATMEAL RAISIN COOKIE PIE
Crunchy and chewy at the same time, this hybrid pie is wonderful served slightly warm a la mode or with a dollop of unsweetened whipped cream. What better way to eat one of our favorite American classic cookies than nestled within a pie crust?

- In a large bowl, use an electric mixer to cream butter and sugars until light and fluffy. Beat in eggs and vanilla until fully incorporated. Add flour mixture to butter mixture, beating only until just combined. Add the oats, raisins, and coconuts; stir them in using a spatula or wooden spoon to avoid breaking the ingredients up too much.
- Using a regular sized ice cream scoop, scoop dough onto baking sheets lined with parchment paper. Put 7 cookies on each sheet, with 3 rows of 2 and 1 placed at the bottom of the sheet in the middle.
- Bake cookies until they have spread, are golden brown around the edges, and a still very soft to the touch, about 20 minutes, rotating halfway through if necessary. Do not panic if the cookies are still tall mounds at the halfway point, they will even out by the end of the baking process. Cool completely on pans.
