Stir Fried Kale image

A great way to use up some of the extra kale you might have in your garden! You can use other similar greens in this recipe - spinach, mustard greens, and arugula will all work. A mixture of greens is also quite good. Serve as a salad, as a side dish, or as a main dish with rice.

3 tablespoons olive oil
1 onion, chopped
3 cloves garlic, minced
1 cup bread crumbs
3 bunches kale - washed, dried, and shredded

Steps:

  • Heat oil over medium-high heat in a large frying pan. Add onions and garlic; cook and stir until soft.
  • Mix in breadcrumbs, and cook and stir until brown.
  • Stir in kale, and cook until wilted. Serve hot or warm.

Ginger and soy sauce give this dish an Asian flair. You may substitute spinach or bok choy for the kale.

1 tablespoon minced fresh gingerroot
1/2 tablespoon safflower oil
1/4 lb kale, chopped coarsely
1 teaspoon soy sauce
1/4 cup water
1 teaspoon toasted sesame seeds (optional)

Steps:

  • In a medium skillet, cook the ginger root in oil, stirring, over medium heat for 1 minute.
  • Add the kale and raise the heat to medium high.
  • Add the soy sauce and water, and stir-fry until the kale is wilted but still slightly crunchy, about 3 minutes.
  • Sprinkle with sesame seeds.
  • Serve warm or cold.
  • You may substitute spinach or bok choy for the kale.
  • Enjoy!

How to cook kale image

Learn how to cook kale in three quick, easy ways. Try these delicious recipes for kale crisps, kale stir-fry and steamed kale.

100g/3½oz kale, torn or cut into small pieces, large stems removed
1½ tbsp olive oil
1 tsp smoked paprika
salt and freshly ground black pepper
2 tbsp olive oil
2 garlic cloves, very thinly sliced
1 tsp dried chilli flakes
salt and freshly ground black pepper
1 tsp lemon juice
2 tsp olive oil
crushed sea salt

Steps:

  • To make the kale crisps, preheat the oven to 140C/120C Fan/Gas 1 and line two baking trays with greaseproof paper.
  • Put the kale pieces in a large bowl and add the olive oil and smoked paprika. Mix with your hands, until both sides of the kale are coated in oil and paprika.
  • Spread the kale over the lined baking sheets, spaced apart so the leaves don't overlap. Season with salt and pepper and bake for 10 minutes. Keep an eye on them as they can burn easily. Remove from the oven and leave to cool before serving.
  • To make the kale stir-fry, heat the olive oil in a large frying pan or wok over a medium heat. Add the garlic and chilli and fry for 2 minutes.
  • Add the kale to the pan with 2 tablespoons of water and season with salt and pepper. Cook for 3-4 minutes, stirring occasionally, until the kale has wilted slightly, is bright green and has some bite to it.
  • To make the steamed kale, fill a large saucepan a quarter of the way up with water and bring to the boil. Put the kale in a steamer, colander or sieve and place over the boiling water. Cover and simmer for 4 minutes.
  • Mix the lemon juice and olive oil together. Transfer the steamed kale to a serving bowl. Add the lemon juice mixture and toss together. Season with crushed sea salt.

  • Veggie stroganoff. Cook sliced mushrooms and shredded kale with a little olive oil until tender. Add enough reduced-salt vegetable stock to moisten and simmer for 2 min.
  • Spicy stir-fry. Stir-fry a pack of shredded kale in a little sunflower oil with coarsely grated carrot, garlic, chopped red chilli, ground cumin and ground coriander for 2 min until just tender.
  • Curly crisps. These make a delicious side dish for grilled steak, chicken and fish: remove the thick stems from a bunch of kale and tear the leaves into bite-size pieces.
  • Garlicky mash. Cook peeled potato chunks with an unpeeled garlic clove in boiling water until really tender. Remove the potato and garlic with a slotted spoon, add shredded kale to the water and cook for 5 min.
  • Chicken and chestnut risotto. Cook 1 chopped onion and 2 chopped skinless chicken breasts in a little olive oil in an ovenproof pan. Add 300g risotto rice, 100g shredded kale and 75g cooked chopped chestnuts.
  • Exotic smoothie. Whiz ¼ prepared fresh pineapple, ½ cored and chopped eating apple, 50g kale, 1tsp grated fresh ginger and 200ml probiotic pouring yoghurt, then serve in a glass.
  • Winter bean soup. Cook chopped celery, carrot, garlic and onion in a little oil until just softened. Add a 400g tin of chopped tomatoes, 500ml reduced-salt vegetable stock and some finely chopped rosemary leaves.
  • Oriental fish. Arrange fish fillets on top of a bed of shredded kale in a baking dish. Scatter over the zest of ½ orange and a 2cm piece of fresh ginger cut into thin strips.
  • Hearty omelette. Make a two-egg omelette. Before you turn it out of the pan, top with a mixture of steamed shredded kale, tinned sweetcorn, a few halved cherry tomatoes and either a little soft goat’s cheese or a sprinkle of grated parmesan.
