SOBA NOODLE CHICKEN STIR FRY
This Soba Noodle Chicken Stir Fry recipe is an easy, nourishing dish and it's oh so tasty. Its strong flavors make it a snap to get you through the chemo-taste blues. I love soba noodles in any form, in soup, cold with dipping sauce, or in stir-fry as here. In Japan, the water soba is cooked in is considered a tonic, so it makes sense here to reserve some of the liquid to use to moisten the veggies as you sauté them. It will add extra flavor too.

- Fill a medium pot with water. Bring to a boil over a high flame. Once boiling add soba noodles. Cook for about 4 minutes or to packet instructions. Reserve 1 cup of the cooking water. Drain and rinse the soba in cold water to stop the cooking. Set to one side in a colander.
- In a large sauté pan or wok, heat vegetable oil. Add chicken. Sear on both sides until brown and cooked through. Remove from pan and reserve.
- Put the same pan back on the heat and add the carrots, onion, red pepper, ginger, garlic, and red cabbage. Stir and cook for about 5 minutes or until the vegetables are starting to soften. Add soy, sriracha, ½ cup soba water and honey to the pan. Stir to combine with the vegetables. Add chicken and heat through.
- In a separate small nonstick pan, spray with cooking spray and heat on medium. Once hot add eggs. Scramble the eggs. You can do this ahead of time. Once cooked break up the eggs with wooden spoon and add to the pan with the vegetables.
- Add soba noodles and sesame oil to the pan with the vegetables along with a little more soba water if it looks dry. Stir gently to combine with sauce until all ingredients are warmed.

SOBA NOODLES WITH CHICKEN AND SNAP PEAS
A simple sesame-soy dressing coats chewy soba noodles, tender chicken and crisp sugar snap peas in this dish that's good at room temperature or cold. It's a great way to use leftover or store-bought rotisserie chicken, but also works well without. You can double up on the snap peas instead or fold in other vegetables, like grated carrots, shredded cabbage or thinly sliced bok choy. The quick daikon pickles add a bright tangy crunch, but you can skip them and still enjoy this one-bowl meal.

- Bring a large saucepan of water to a boil. Meanwhile, mix the vinegar, 1 tablespoon honey and 1 teaspoon salt in a small bowl. Add the daikon and press into the mixture to submerge as much as possible. Let stand until ready to serve, mixing occasionally.
- Add 1/4 cup salt to the boiling water. Add the snap peas and cook just until bright green and tender, about 30 seconds to 1 minute. Using a spider or slotted spoon, transfer to a colander and immediately rinse under cold water until cool. Drain well.
- Add the noodles to the boiling water. Cook, stirring occasionally, until just tender, 4 to 8 minutes. Drain, rinse under cold water until cool and drain again.
- While the noodles cook, whisk the soy sauce, sesame oil, red-pepper flakes and remaining 2 tablespoons honey in a large bowl. Add the chicken, soba and snap peas and toss until evenly coated. Season to taste with salt.
- Divide among bowls. Drain the daikon pickles and arrange on top, then garnish with the scallions, sesame seeds and additional red-pepper flakes.

STIR-FRIED SOBA NOODLES WITH LONG BEANS, EGGS AND CHERRY TOMATOES

- First cook the soba noodles. Bring 3 or 4 quarts of water to a boil in a large pot. Add salt to taste. Add the noodles gradually, so that the water remains at a boil, and stir once with a long-handled spoon or pasta fork so that they don't stick together. Wait for the water to come back up to a rolling boil - it will bubble up, so don't fill the pot all the way - and add 1 cup of cold water. Allow the water to come back to a rolling boil, and add another cup of cold water. Allow the water to come to a boil one more time, and add a third cup of water. When the water comes to a boil again, the noodles should be cooked through. Drain and toss with the sesame oil in a bowl and set aside.
- Mix together the stock, soy sauce, rice vinegar, and sugar in a small bowl. Mix the minced chiles, garlic and ginger in another bowl. Place all of the ingredients within reach of your wok.
- Heat a 14-inch flat-bottomed wok over high heat until a drop of water evaporates within a second or two when added to the pan. Meanwhile beat 1 of the eggs in a bowl and add salt to taste. Swirl 1 teaspoon of the oil into the wok and add the egg, using a rubber spatula to scrape out every last bit. Tilt the wok to spread the egg into a pancake and cook until set, 30 seconds to a minute. Using a metal spatula, flip over and cook for about 5 seconds, then transfer to a cutting board. Cut into 2-inch long by 1/4-inch wide slices. Repeat with the other egg.
- Add the remaining oil to the wok, swirl the pan, then add the garlic, ginger and chile and stir-fry for no more than 10 seconds. Add the long beans and stir-fry for 1 minute. Add the tomatoes and stir-fry for 2 minutes, or until they collapse a little in the wok. Add the noodles, the stock mixture, and salt to taste, turn the heat down to medium and stir-fry for about a minute, until the liquid has evaporated. Sprinkle with pepper, add the eggs and cilantro, stir-fry to heat through, and serve.
