SOBA NOODLE CHICKEN STIR FRY



Soba Noodle Chicken Stir Fry image

This Soba Noodle Chicken Stir Fry recipe is an easy, nourishing dish and it's oh so tasty. Its strong flavors make it a snap to get you through the chemo-taste blues. I love soba noodles in any form, in soup, cold with dipping sauce, or in stir-fry as here. In Japan, the water soba is cooked in is considered a tonic, so it makes sense here to reserve some of the liquid to use to moisten the veggies as you sauté them. It will add extra flavor too.

1 pound soda noodles (see Ann's Tips) 4 chicken thighs, skinless and boneless, diced ¼ cup vegetable oil 1 carrot (about ½ cup), peeled and thinly sliced 1 small onion (about ½ cup), thinly sliced 1 red pepper (about ½ cup), thinly sliced 1 tablespoon fresh ginger, minced 2 garlic cloves (about 2 teaspoons), minced 1 ½ cups red cabbage shredded ¾ cup low-sodium soy sauce 1 tablespoon honey 2 teaspoon Sriracha sauce or to taste ½ cup soba broth or water to taste ¼ cup sesame oil 1 cup Napa cabbage, shredded 2 eggs, whisked

Steps:

  • Fill a medium pot with water. Bring to a boil over a high flame. Once boiling add soba noodles. Cook for about 4 minutes or to packet instructions. Reserve 1 cup of the cooking water. Drain and rinse the soba in cold water to stop the cooking. Set to one side in a colander.
  • In a large sauté pan or wok, heat vegetable oil. Add chicken. Sear on both sides until brown and cooked through. Remove from pan and reserve.
  • Put the same pan back on the heat and add the carrots, onion, red pepper, ginger, garlic, and red cabbage. Stir and cook for about 5 minutes or until the vegetables are starting to soften. Add soy, sriracha, ½ cup soba water and honey to the pan. Stir to combine with the vegetables. Add chicken and heat through.
  • In a separate small nonstick pan, spray with cooking spray and heat on medium. Once hot add eggs. Scramble the eggs. You can do this ahead of time. Once cooked break up the eggs with wooden spoon and add to the pan with the vegetables.
  • Add soba noodles and sesame oil to the pan with the vegetables along with a little more soba water if it looks dry. Stir gently to combine with sauce until all ingredients are warmed.

1 1/2 lbs boneless skinless chicken breasts, cut crosswise into 1/2 in slices
4 scallions, whites and green parts thinly sliced, kept separate
3 garlic cloves, thinly sliced
1 teaspoon grated fresh ginger
1/2 teaspoon red pepper flakes
salt
1 tablespoon low sodium soy sauce
2 teaspoons sesame oil
1 tablespoon vegetable oil
1 lb napa cabbage, thinly sliced
6 ounces button mushrooms, trimmed and quarted
2 tablespoons water
2 teaspoons fresh lemon juice

Steps:

  • Bring a large saucepan of water to a boil. Cook noodles according to package directions.
  • While noodles are cooking, in a medium bowl, combine chicken with scallion whites, garlic, ginger, and pepper flakes; season lightly with salt.
  • Drain noodles and transfer to another medium bowl. Add scallion greens, soy sauce, and sesame oil.; toss to combine. Season lightly with salt.
  • In a large nonstick skillet or wok, heat vegetable oil over medium-high heat. Add chicken, and cook, stirring constantly, until just cooked through, 4-5 minutes. Transfer chicken to a plate.
  • Return the pan to the heat. Add cabbage, mushrooms, and water. Cook, stirring until vegetables are wilted, about 4 minutes. Return chicken and noodles to the pan, stir, and cook to heat through, about 1 minute. Toss with lemon juice and serve warm.

3 tablespoons fresh ginger, minced
1 small onion, thinly sliced
5 cups reduced-sodium chicken broth
1/4 teaspoon red pepper flakes
1 head napa cabbage, thinly sliced (about 3 cups)
1 1/2 lbs shrimp, peeled and deveined
2 tablespoons asian fish sauce
2 teaspoons lime zest
1/4 cup lime juice
1/2 cup fresh cilantro, chopped or 1/2 cup chopped scallion

Steps:

  • Heat oil in a large pot.
  • Add ginger and onion.
  • Cook, stirring frequently for about 3 minutes.
  • Add broth and red pepper flakes and bring to a low boil.
  • Add cabbage and cook for approximately 2 to 3 minutes.
  • Add shrimp, lime zest and lime juice.
  • Cook just until shrimp turns pink.
  • Serve hot sprinkled with cilantro or scallions.

2 lbs boneless skinless chicken breasts, halved
1/4 cup extra virgin olive oil
1 dash black pepper, ground
1/4 teaspoon thyme, dried
1 teaspoon salt
1 garlic clove, crushed and minced
2 tablespoons fresh parsley, chopped
1/4 cup almonds, finely chopped
1/4 cup parmesan cheese, freshly grated
2 slices whole wheat bread

Steps:

  • Whole wheat bread crumbs:.
  • Use 2 slices whole wheat bread, toast them until lightly brown, then pulse in a food processor. Set aside.
  • Preheat oven to 400 degrees F.
  • Pound the chicken breasts to a 1/2 inch thickness and cut them into 12 pieces.
  • In a medium bowl, stir bread crumbs, Parmesan cheese, almonds, parsley, garlic, salt, thyme and pepper until mixed.
  • Pour oil onto a plate.
  • Dip the chicken into the oil and then into the bread crumb mixture to coat.
  • Place chicken on a cookie sheet.
  • Bake for 20 minutes or until juices run clear when the thickest part of the chicken is pierced with the tip of a knife. (Do not turn chicken over).

2 teaspoons cornstarch
1/2 cup reduced-sodium chicken broth
2 tablespoons brown sugar
3 garlic cloves, minced
1 tablespoon butter, melted
1 tablespoon reduced-sodium soy sauce
1 tablespoon hoisin sauce
2 teaspoons minced fresh gingerroot
2 teaspoons rice vinegar
1/4 teaspoon pepper
6 ounces uncooked Japanese soba noodles
3/4 pound chicken tenderloins, cubed
4 teaspoons canola oil, divided
3 cups fresh broccoli stir-fry blend
1/4 cup chopped unsalted cashews

Steps:

  • In a small bowl, combine the first 10 ingredients until blended; set aside., Cook noodles according to package directions. Meanwhile, in a large skillet or wok, stir-fry chicken in 2 teaspoons oil until no longer pink. Remove and keep warm., Stir-fry broccoli blend in remaining oil for 4-6 minutes or until vegetables are crisp-tender., Stir cornstarch mixture and add to the pan. 1 garlic clove
1/8 teaspoon cayenne pepper
48 ounces whole trout, about 12 ounces each, cleaned and boned

1 large egg white, lightly beaten
2 tablespoons extra virgin olive oil

Steps:

  • Heat the oven to 400. Line a baking sheet with parchment.
  • In a food processor, pulse pecans, rosemary, garlic, and cayenne until finely chopped.
