FISHBOY'S BEER BELLY SHRIMP

This recipe combines some of my favorite ingredients; beer, hot sauce and shrimp. Cooking with beer is always cool. Just remember not to waste that 1/4 can of beer that is left over!

2 pounds large shrimp, peeled and deveined with tails attached
1 cup beer
2 tablespoons chopped fresh parsley
2 tablespoons vegetable oil
4 teaspoons Worcestershire sauce
1 clove garlic, minced
⅛ teaspoon salt
¼ teaspoon ground black pepper
⅛ teaspoon hot sauce

Steps:

  • Combine all ingredients in a large bowl. Stir well to coat the shrimp. Place in a large shallow dish and refrigerate. Let marinate for 2 to 3 hours, stirring occasionally.
  • Heat oven broiler. Drain shrimp. Thread shrimp through neck and tail onto six 14-inch skewers so that shrimp will lie flat. Place skewers on a lightly greased rack of a broiler pan.
  • Broil 5 inches from heat for 3 minutes. Turn skewers and broil for an additional 1 to 2 minutes, or until shrimp turn pink. Serve warm with cold beer.

1 cup all-purpose flour
1 1/2 teaspoons cayenne pepper
1 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon granulated sugar
8 ounces beer
Flour for dusting
3 to 4 cups peanut oil for frying
1 1/4 pounds rock shrimp or peeled white shrimp
Chipotle Honey Dipping Sauce, recipe follows
2 chipotle chiles, stemmed and seeded
1 tomato, cored and cut in quarters
1/2 small onion, peeled and sliced
1 clove garlic, peeled
1/2 cup water
l teaspoon salt
1/4 cup honey
2 tablespoons red wine vinegar

Steps:

  • Combine 1 cup of the flour with the cayenne, salt, sugar and baking powder in a medium bowl.
  • Add beer all at once and whisk until smooth. Set aside at least 1/2 hour.
  • Heat oil to deep-fry temperature (350/) in a large saucepan. Test oil by sprinkling a few drops of
  • batter and if they rise to the surface, the oil is ready. Toss the shrimps in the flour for dusting and toss to coat evenly, then pat off excess. Drop a few at a time first in the batter then into the hot oil and fry until lightly golden and crispy-- about 2 minutes. Remove with a slotted spoon and drain on paper towels. Serve immediately with Chipotle Honey Dipping Sauce.
  • In a small saucepan, bring chiles, tomato, water, onion, garlic and salt to a boil and reduce to a simmer. Cook, slowly, covered for 15 minutes, then puree in a blender until smooth transfer to a small bowl and add honey and vinegar. Serve at room temperature as a dipping sauce with shrimps.

3 (12-ounce) bottles lager beer
1 cup water
1 tablespoon shrimp boil seasoning or Creole seasoning mix
1 teaspoon kosher salt
1 teaspoon black peppercorns
1 lemon, juiced, halves reserved
1 stick unsalted butter
1 1/2 pounds large shrimp, head and shell left on, rinsed well

Steps:

  • In a large pot, bring the beer, water, shrimp boil seasoning, salt, peppercorns and the juiced lemon halves to a boil over medium heat. Allow mixture to boil covered for 10 minutes. In the meantime, melt butter in a small saucepan and add the lemon juice. Add the shrimp to the pot of boiling beer, cover, and turn off heat. Check shrimp after 3 minutes for a pink color throughout. Using a slotted spoon, remove the shrimp and transfer to serving bowls.
  • Add 1/2 cup of the beer boiling liquid to the butter and simmer for 2 minutes, then transfer to small serving bowls. Serve the warm shrimp with the butter dipping sauce on the side, and don't forget the empty bowls for the shrimp shells. Enjoy!
  • Serving Suggestion: I love a great loaf of French bread with this to sop up the yummy sauce!

2 lbs shrimp, shelled and deveined
4 tablespoons butter
2 teaspoons garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon cayenne pepper
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt, to taste
1/2 teaspoon black pepper, to taste
1/2 cup beer

Steps:

  • Saute garlic and herbs in butter until garlic is slightly browned.
  • Add shrimp, stirring constantly, until shrimp are pink and done.
  • Pour in beer, simmer 1 minute more, and serve!

1 (12 ounce) bottle beer
2 teaspoons kosher salt
2 lemons, halved
3 bay leaves
fresh thyme sprig
1 head garlic, split horizontally
1 tablespoon Old Bay Seasoning
2 lbs large shrimp, uncooked, with shells and tails
lemon wedge, for serving

Steps:

  • Fill a large pot with about 2 qts. water.
  • Crack open the beer and pour it in the pot.
  • Add salt and squeeze in lemon juice; toss the halves in, too.
  • Add herbs, garlic and Old Bay.
  • Bring to a boil over medium-high heat and simmer for 5 minutes to infuse the water with the aromatics.
  • Now reduce heat to medium-low and put shrimp in the mixture.
  • Simmer, uncovered, for 2 to 3 minutes or until shrimp are bright pink.
  • Drain and transfer to a bowl.
  • Chill thoroughly, then peel.
  • Serve with lemon wedges and coctail sauce.
  • NOTE: I used peeled, uncooked shrimp for this and it turned out just fine.
  • Cocktail Sauce:.
  • Mix 1/2 cup ketchup, 1/4 cup grated fresh or prepared horseradish, 1 teaspoon minced garlic and a few drops of hot pepper sauce.
